We had alot of food trucks contact us. I choose Backwoods BBQ because they seemed very professional and didn't charge me for set up and things like that. I knew from years past there would be alot of people since the last food trucks before did not believe me and ran out of food. Anyways, we agreed for Jan 12, he said he would be set up and ready by 11:30am. Sunday morning I had text him that when he got here, just call me and I would open the gate and let him in. A few minutes later he text me and said that they had a flat and he was on his way to fix it. Hey, I get it. Stuff happens. Now what doesn't happen is he never contacts me back.....at all. He literally leaves me on read all.....day.....long. Today is Tuesday, he still hasn't contacted me to apologize for leaving 80+ of my guests hanging. Nothing. Unprofessional to say the least. My guests at my party asking when food was coming and I had no answers. Instead of having fun at my birthday party, I am scrambling to get food for 80+ people. Then, after talking to people that have used them before, this is a normal thing for them to "Just not show up". I get it, stuff happens. But let me know. If you can't make it, Fine! I really enjoyed the ribs and the sausage. Both were very smoky and fresh (despite coming in closer to closing time) and the ribs had a hint of sweetness. I think that's the Memphis style BBQ poking through. I thought the sides were just okay. The baked beans were a little too sweet for my taste, the mac and cheese wasn't cheesy enough, and the potato salad was fine. I'm giving this place four stars because what I came here, the meats, were really well seasoned and the staff was very friendly. They even gave my cousin an additional side for free. One final thing, it's a little unassuming as it lives right next to a gas station but the inside is still a decent size with seating.

I believe each of their entree items were priced at $9 and they offered some canned sodas and water bottles. My homie ordered the street tacos and I got the carne asada fries, yoooooo, they were some of the best I've had. Not only was the meat super flavorful and tender but the fries were perfectly crispy and tossed in some seasoning as well. I'm so used to at least one component being bland but these were poppin. For $9 it was a huge plate, too. I let a few people sample off my plate, wound up super full, and still had a good chunk for my homie to help polish off. My interactions with the staff were pretty short, just ordered then ran back for my pickup, but what was spoken was friendly. We finally went up to the window to ask about our food they told us that they lost our ticket and that they would remake it. Mind you the second half of the graduation was getting ready to start so we didn't have the time to wait and decided to just ask for a refund. The owner gave us her phone number and told us that if we provide her with the screenshot she would then refund the money ( side note : she didn't ). She told us to contact our bank and dispute the charges and that she would still make us food the next day May 22. Flash forward again - she didn't. Once we got to this place, there are around, 8 food truck, two Birria trucks, one Mexican food truck, a Brazilian food truck, hot chicken food truck. And a snow cone place. We got the Dino wrex plate, one beef Dino rib, a full rack of pork ribs, there was Mac and cheese inside the rolled up rack of ribs. The meat sat on a layer of French fries. This plate fed five of us, still had some left overs. The only thing I didn't enjoy was that we had to cut the string off the rack of ribs, and that we had to pull the ribs apart. Probably be nice if they cut the rack just a bit. We also got a plate from the Brazilian restaurant, but we just picked at it, cause we were full from the ribs. The bacon wrapped chicken was delicious, the sausage was good the steak, was ok, the could have used a better cut of meat. The place is really cool, kid friendly with a playscape. Enclosed area, so the kids stay in the area. Also a full bar, I had a couple of beers. And the best wasn't the Brazilian lemonade.

That bark is great and it's tossed in his sweet hot BBQ sauce. Not burn your momma hot, but just right. The chicken was smokey and tender. The brisket slices were tender and moist with a nice smoke ring. So good dipped in a little sauce. The macaroni is Texas-sized shells with a creamy cheese sauce. And the potato salad was made with cubed potatoes that had just the right firmness with a tasty mayo mustard dressing. The portion sizes on the $12 plate were better than any restaurant I have visited for more cost. Had a good time talking to the pitmaster about what he smokes, his smoker, and the wood he uses. This is subjective and varies from person to person. And you know what they say about opinions. "Bad to the Bone" a new bbq food truck in Southtown adds to that conversation with good flavors. It's basically a food truck that offers a simple menu of brisket, chicken, pork and sausage. From these you can choose a plate with one, two or three meats. With it comes your choice of two sides. For example they have a baked potato casserole and a macaroni filled with brisket. In addition they make bbq sandwiches but are in the process of fine tuning their menu. The prices are what you would expect from a food truck crafting bbq, well within range of what other places charge. I tried their three meats plate, a healthy portion I might add, which was really good. Some people prefer their brisket dry. However theirs was tender, smokey and juicy. Just the way I like mine. Not to be outdone the sausage and pulled pork choices were equally as good, rounding out the experience. I would remiss if I didn't include that they have outdoor seating, with accompanying bottles of bbq sauce on each table. While I really enjoyed all the items I felt the potato casserole could've benefited from a bit more seasoning. Either way "Bad to the Bone" delivered on all fronts. I like the (family)friendly vibe accentuated by country music. All the flavors are informed by people serious about barbecuing. There's so many people so head out there around 5. They have nice picnic tables and sometimes jams playing. I recommend taking a sharpie as they allow people to write on their picnic tables.
