Caught Uncle Tito at the pop-up with G Circle at The Lark and yeah...this spot is PIRE.
The pancit with the sisig add-on is probably my favorite. The coconut in it really balances everything out. It softens the salt, rounds out the flavor, and gives it a smooth finish while still letting the garlic and citrus come through.
The Uncle Tito Bowl was fire. The Java rice already has flavor, not just filler, and both proteins hit. Pork belly is rich and tender. But the Sawsawan was a perfect complement sauce for the dish.
What I appreciated most is that it doesn't feel like they're trying to water anything down. It leans a little fusion in presentation, but the flavors are clearly Filipino. Coconut and calamari all there and intentional.
And honestly, the team made it better. They were attentive without hovering, checking in, talking to people. It felt community driven, not transactional.
