From the moment we were greeted by our server, Jahir Corral, the evening was on course for the perfect dining event with dimly lit candles, the trickle of the pool water, and the pleasant sound of mellow music in the background. Selecting the: Gorgonzola & Pear Salad Pacific Blue Shrimp Prime Beef Tenderloin Bouchard Pinot Noir and Baja Series Corona del Valle Chardonnay. The meal was totally exquisite and flavorsome. This restaurant is the ultimate dinner experience. From the service, to the food, to the ambience, and live music. It's a very good Italian restaurant overall. All the servers here were very friendly and welcoming. They offer complementary bread of your choice along with some oils to dip it in. They brought out a pallet cleanser, which was a cucumber with some sauces and that was a nice touch. They have an extensive wine list and cocktails. We opted for some of their signature cocktails which we enjoyed. I had a lemon butter and shrimp pasta and it was a 10 out of 10. We ordered the tiramisu and that was perfect. We also received complementary chocolate truffles and it was amazing again. Throughout our dinner, we had a pianist playing beautiful piano renditions of popular songs. Abraham and Eduardo were amazing. It was our anniversary trip and our first night at the Hilton resort. We went to Vela, a fine dining restaurant on the resort. I cannot tell you how much we enjoyed the service they provided. From making the best recommendations on the menu, to sheltering us with table umbrellas before it started to rain, to making us feel special with a delicious little dessert and limoncello to celebrate our anniversary, they were amazing. The food was great at the start of my meal but progressed down from there! First the good, I started with a non-alcoholic berry drink for Dry January. It was good but a bit too sweet for me! I ordered the pear salad and it was wonderful and very unique it had some frozen cream in the middle, not ice cream I don't think but something frozen, it was very different! I then ordered the burrata tortellini that's where they failed, it was hard, not al dente hard but truly undercooked in my opinion! They had a three bread choice, I selected the sourdough and the ciabatta, by far the ciabatta was the best, it was fresh and soft! The pasta is supposed to be made fresh in house daily but I feel like mine was not. Just my opinion! They did give a complimentary chocolate truffle at the end of the meal! I have been to Vela many many times and I usually love it. There has been a lot of turnover in the staff which is unusual at the Hilton. I took 10 friends there and it took so long to get the bread service my friends were complaining. They've stopped the covered plates which was very special and the food was fine but not great. It's a no. While the service was incredibly wonderful (truly joyful servers!), the food was terrible. Scallops dry, flavorless, and like rubber- the foot left on. Actually worried I'm going to get sick from them. The lamb ragu was fine. Ragu was good, pasta nice, but the lamb was tough and very raw. The minestrone soup had uncooked hard beans and pork (which was not mentioned in the ingredients) Octopus was just gross. No flavor and again, rubber. Bread service was fun. Drinks decent (though not much spirits in them). Would not go again. Extremely expensive and extremely disappointing. We returned 2 items. No refund. Got a nice seat right by the pool and infront of the live band. The arugula salad was so beautiful and fresh and loved it was not drenched in sauce. Beautiful like art as well. They have a nice sommelier who helped me pick out a pinor noir from new zealand. It was so refreshing and good!! Ordered the totoaba fish bc i saw another reviewer rave about it. It was veryyy good. It is a local fish, light, soft with good flavor. Buttery and citrusy. The shrimp ravioli was bomb as well. Ordered with "less cheese" and there was like no cheese and it was so flavorful and good. One word...delicioso!!! Located poolside at the Hilton Los Cabo's hotel, this is a "must try" restaurant. The service was impeccable! Our server Gregorio was nothing short of amazing. He was attentive to our needs and made our night a touch more special. The food is probably the best at the resort. The shrimp ravioli was actually stuffed with chunks of shrimp. I didn't have to guess what I was eating. It was also flavorful. I would not suggest it for a large eater. The short rib rigatoni was very savory dish and a better option for someone who has a larger appetite. The oysters were good but not $30US good. It was our 18th year anniversary. We got married here and have spent 7 of our anniversaries here. This was the worst anniversary dining experience we've had. We were sat inside with zero views. There were tables available outside and on the patio and you would think for such a special occasion (which I notified them about) you would get a special table, like we have in the past. We felt rushed out and the staff didn't even acknowledge that it was a special occasion. In years past, we have always been acknowledged. I feel as if the management no longer cares about the special occasions or experiences, just turning over tables. read more

Disappointed, to say the least. Arrived on time for a birthday celebration at this beautiful property. Had a nice table with a view, and the hostess and staff greeted us kindly as we entered. From there it was downhill. Waiter was slow - took 40 minutes to take our orders. Drinks arrived late. Other tables seated after us were served their food before us. Finally got our meals 2 hours and 15 minutes after being seated, and the food was not what you'd expect at a Michelin starred restaurant. Undercooked pasta, rubbery scallops, overly salted caccio y pepe. The waiter and manager had no explanation for the delay, and offered us free dessert and 20% off our $400 bill. Happy birthday to me. Solid Italian food, excellent service, lovely outdoor setting next to the main Hilton pool/ocean (although in the dark the ocean is not evident, obviously). We tried the scallop and tartare appetizers, and the totoaba entree. The child in our group really enjoyed the penne with red sauce (although it came to the table festooned in edible flowers, which aren't the most kid-friendly garnish!). The bread service was truly impressive - multiple, freshly-baked varieties to choose from (the focaccia was the table favorite). We skipped dessert - too full! - but were still treated to some truffles and sorbet for the little guy. A very nice experience all around. One star deducted for the appetizers (the scallops were well-cooked, but they/the tartare were underseasoned and rather bland). read more

We looked forward to our reservation here when we stayed at the Hilton. They do not disappoint. We had pool side dining at the infinity pool. Service is always ready to offer what is needed without hovering. We started with the Capreses salad. The also offer a variety of house made bread with balsamic and two different olive oils. We opted to split the carbonara main dish, because we saw how generous the potions are. House-made pasta is such a treat for us and this was exceptional. Just the Percy dinner for us to split, and enough we skipped dessert. An after dinner coffee with liquor finished our meal. Or so we thought, as an aperitif of lemon cello and truffle chocolate came after the coffee. Such a beautiful setting and a fantastic meal! The ambiance is gorgeous right next to the pool at the hotel. My biggest advise is to look at the menu before you go, and read it again when you get there! We ordered their charcuterie board thinking it would be multiple meats but it was literally only prosciutto and a small amount of cheese. Ended up not eating the plate because it wasn't even food and staff didn't recognize the dislike in the food to offer an option. Whole menu is basically only pasta - not many gluten free friendly options! Ended up having some cocktails and going to a different restaurant for dinner. If you're staying at the Hilton you should have dinner here at least once! It's a very peaceful, romantic dinner, pool side, with classical music playing in the background. It's a little more than the other restaurants but very worth it. Every food item that was ordered for the table was excellent. Alcoholic beverages are made table side and they actually have alcohol in it. They have about four different kinds of complimentary bread that comes with rosemary oil and balsamic oils. It was soooo delicious. The Bruschetta appetizer was also a favorite (see pic). The combo of unique flavors were perfect. For the main dish, I ordered the oven roasted chicken. The mushroom sauce it was in complimented it perfectly. The chicken was cooked perfect as well. This is a great place overall if you want something a little nicer to eat for the night. read more

The service was amazing like they go above & beyond for you. They start you off with bread & 2 different types of olive oil. We ordered the grilled octopus & burrata for appetizers. Our server recommended it and he couldn't have been more right. They brought out dinner rolls and olive oil to start and really took time to make sure we had everything we needed.
