    The service was great, and the food was delicious! Any table with 2 or more rolls gets served on a boat. Worth the experience!

    It was a long day of travel, we were both tired and hoping to find a good place to eat in Brush or Fort Morgan. Both towns better known for their Mexican cuisine. But surprise, there's a Sushi restaurant in Brush! Not just any, but Guatemalans who trained in Japan to be sushi chiefs with experience if far -flung US locations. Their skill and mastery of the sushi art was amazing. We started with the grilled calamari, the flavor of the grill with a subtle sauce it would make a great light meal by itself. We move on to the Red Dragon, the Fort Morgan and the Volcano sushi rolls. All three, over-the-top flavorful with the Volcano making the top hit of the night. The size of the sushi rolls were generous, the rice a nice subtle flavor, the fish always the star of the show. The fish, fresh, good texture and flavor for the species. The chiefs took food safety serious and kept the sushi construction counter very clean. The seating area, kitchen and bathrooms were very clean and no fishy smell anywhere even at the sushi bar. The restaurant, cozy and comfortable with simple decorations, the wait staff spot on. Everyone who comes in is made to feel welcome even the repeat customers, like a big family. We are trying to find another reason to drive back to Brush, just to have a meal at Victor's. Not a day trip for us, but the food keeps calling us. Worth the drive and worth skipping the fast food restaurants along the interstate.

    10 oz plastic cups with vertical lines. Square ice. Wood sticks instead of silverware, unknown origin in a cloth napkin. Made me think I was at a Holiday Inn express...fancy. . No clock....I think we ate breakfast? Artistically inspired spelling on the online menu. Again how do you not have a clock. Let's get it together people. How don't you have a clock. As a breakfast burrito aficionado, I can tell you this was great Sushi. We will be back. P.s. Why are flamingos pink? You may have heard that it's because they eat shrimp, but the real answer is a little more complex. Flamingos and shrimp are actually both pink from eating algae that contains carotenoid pigments. Flamingos eat both algae and shrimp-like critters, and both contribute to their fabulous pinkness. P.p.s. Get the flamingo roll.

    Instead of traveling to Denver for decent sushi, we figured we would stay local & try out this new joint we've been hearing about. The restaurant was very clean, with few decorations. I bet if some decor was placed, it would brighten up the room- Lots of potential! Our food was delicious, fresh, and in front of us in a reasonable amount of time. I kept stealing bites of my daughters food because I couldn't resist. The waitress was very friendly and attentive. The only downside for me was the price of some items- but hey, it's okay if you're paying for fresh food and supporting a local business!

    Very accommodating to our gluten allergy and even made our little one chicken tempura! One of the nicest, freshest, and most satisfying places not only to your tummy but also your eyes! Victor is top notch and his art translates wonderfully in his dishes! Must sit at the bar next time!!

    Best sushi I have tried. Ever! I live about an hour away but would not hesitate to make the drive again just to eat there again. 10/10

The gyoza came out perfectly pan-seared -- crispy on the bottom, tender on top, and packed with flavor. That dipping sauce had just the right balance of salty, tangy, and savory. You could easily crush two orders without trying. The pork belly steamed buns were next-level. Soft, pillowy buns wrapped around rich, melt-in-your-mouth pork belly. The balance of fat, sweetness, and sauce was perfect. Messy in the best possible way. And then the star -- the Tonkotsu Ramen. The broth was deep, creamy, and packed with flavor -- that slow-simmered richness that tells you it was done right. The noodles had the perfect bite, and the pork was tender and seasoned beautifully. Every spoonful made you slow down just to appreciate it. Hands down one of the best meals I've had in a long time. The Gyoza was also a fan favorite with a light crispy bottom and a good filling. We tried two different ramens with two different proteins. The beef was a bit, tough and dry, but the chashu was nice and soft like melting in your mouth. The broth was also good and the noodles were nice and thin. Overall, I felt like this was a nice bite to eat and definitely filling. The only thing I felt that was lacking was the service on refilling water. I would definitely come back if I was around the area. They definitely got busy pretty quick.

Overall, this was an excellent bowl of ramen comparable to any of the top spots in Denver. The only slight downside is that the broth was just a tough too salty for my liking, and I would've preferred a soy marinated egg over a soft boiled egg. They have other ramen here was well, such as a chicken-based shio ramen, a regular tonkotsu, and a Thai curry ramen. I definitely would return to try the other ramen. If the other items on this menu is as tasty, I wouldn't hesitate to give them 5 stars.
