Their Father and Mother started this Baylor/Waco tradition (which is when we first started eating here) and the family continues serving it up even stronger. I honesty worried the quality of Vitek's BBQ would get lost somewhere in the expansion of the building & renovations. The quality Vitek's serves is usually only found in Mom and Pop establishments. After the beautiful upgrades with construction complete, unlike chain bbq joints, who prepare everything in one city then distribute, here at Vitek's you can still smell the perfectly fresh smoked meats block's away. When you enter you are greeted with huge smiles from both employees and patrons. We ordered a two meat plate and a pulled pork sandwich. Shared it all between us and still took home some food. Best ever fall off the bone ribs and tender nicely flavored brisket. So enjoyed the best ever pulled pork on a fresh perfectly matched bun that I stopped by their Gut shack on Franklin street for another craving a week later. Not sure what to expect from this second little sister building but let me tell you something, this to go pulled pork sandwich practically outdid the one we ate in house with our two meat plate. (honestly do not understand why a burger joint even attempts to make quality flavored pulled pork! Leave the BBQ to Vitek's and other real BBQ establishments).. Thank you Julie! Passing through on our drive back to Fort Worth, we Yelped a BBQ place and Vitek's came up as close to the highway and with a strong rating. It didn't disappoint! They were hosting a strong lunch crowd for a Monday however the line moved quickly and our food was ready by the time we paid. I had the pulled pork sandie, and the Mrs tried their famous Gut Pack. I think I had the better meal but the novelty of the Gut Pack made up for some blandness of the meal. Lots of TV's, would be a great happy hour / game day place I imagine. Not sure when I'll be back, but would recommend a pop-in to anyone passing through Waco! read more

We are in town for just one night and wanted good BBQ. We settled on Vitek's and it DID NOT DISAPPOINT. Do yourself a favor and get some of Vitek's pulled pork nachos. Heck, get two. Very good barbecue. Had to meet ribs and brisket plate. Both were very tasty. Potato salad was very good. Chunky potatoes. Fresh. Beans were OK. The atmosphere is very nice. Easy on easy off the freeway access. Meat appears to be smoked out back fresh. Definitely worth the stop. Eh- my family and I were not very impressed by their BBQ. We visited Vitek's to see if it lived up to the hype, and we were let down. The food was decent, but not our choice of BBQ. Texans are especially picky about their choice of BBQ, and this is not the place if you are looking to satisfy those cravings. I didn't know how this was going to work out when we walked in the door. One side was a really cool dine in bar and grill type atmosphere and the other side you walk through a line to order and end up in a mini grocery store type area. Ok, when in Waco, right? I had to try the gut pack... It was as advertised, Fritos, cheese, brisket, beans, sausage, onions, jalapeños, and bread (I left off the pickles). Good brisket and good flavor, the large gut pack is plenty of food! I ate everything but about 1/4 of the Fritos, I can only handle so much. The place was packed at noon on a Thursday, it was hard to find parking and hard to find a seat but it all worked out. The other two in my group ordered more traditional bbq and they both enjoyed it. Solid 4 stars, but it wasn't quite 'yummy yummy I need to come back' good enough for 5. Btw after tax it's $15.43 for a large gut pack and a small soda. read more

After reading all these top rated Yelp reviews we had to eat here. Everyone mentions the gut pack so we ordered and split a full consisting of meat sasuage cheese beans on top of Fritos. It was ok but I guess I was expecting more. It needed quite a bit more BBQ sauce but there was none in sight. Really hate when a BBQ place hoards all their sauce and do not make it readily available. OH MY GOSH! There is nothing to say about this place, but can I move in???? My husband got the GUT PACK. (I wondered about the name, too...) This mountain of food was built to pack your gut with the most delicious bit of everything you could possibly be craving in the world. There are fritos, bbq beef, cheese, onions, jalopenos, bbq beans, house made sausage, pickles, nacho cheese (?) and slices of white bread (to soak up all the juices... (and I probably missed something...) It weighs about five pounds and when you open it up, you literally just stare at it in amazement. My thoughts were "how is he going to eat that?" Answer: I helped!!! :) :) :) *side note: I HATE Frito Pie. This was amazing! We also had pulled pork, Chicken, Turkey and multiple other dishes from Viteks (over different days!!) and they were all wonderful. The banana pudding is great-nothing fancy; Nilla wafers and banana pudding. I think that is the key. I didn't go in expecting to see bbq beef wrapped spring rolls or trying to detect which seasonings were being used in each side dish. This food was fantastic prepared exactly as it was-their way. Smokey, wonderful, and homemade consistently. Every time. I am going back in October and hope that they are open for Breakfast, lunch and dinner! read more

Loved this old-school BBQ joint near Baylor U! We went here based upon Yelp! reviews & after waiting in a long-ish line to order, got our food quickly due to the efficiency of the counter staff. We all enjoyed the food very much. Most liked was the brisket, and the pulled pork was everyone's least favorite. I got the brisket tacos & they were fabulous. Would have loved to try a "Gut Pak" - which is kind of like nachos, with bbq meats & fixins all piled up on a bed of Fritos, but my body won't let me eat like that anymore. If you can still eat like that, I recommend trying one...they looked very goooooood! The dining area is large & airy, clean and well air conditioned. There is a large patio too. The restrooms are well maintained. Although the place was packed with a long line, servers were very friendly; helpful & patient with questions from first-time guests. This is a solid choice, especially if you're like me & always seeking a "local institution" type place when traveling. We will definitely go here again if we're back in the area. read more

Our third visit. Sliced brisket sandwich good. Chopped brisket not good - it seems the chopped is made from "loose ends" of the brisket and therefore much more fat. Plus it is stirred with sauce. Things that keep me from coming back: 1. Very few posted prices - both on web and in store. How much is a side? ($2). How much is a drink? How much is a beer? (they have a half dozen bottle selections). 2. Rather rude/unfriendly service at counter. You line up to give one person your order then stand around until you pick it up at the other end of the counter. These employees seem very jaded with the public - almost hostile to questions. No one smiles. It makes for an uncomfortable way to begin your meal. Hey - this is Texas - we're supposed to be friendly here. 3. No BBQ sauce on tables. You get a small cup with your order. 4. Parking is tricky, but it's an awkward location anyway. 5. No fries available. 6. Tables not cleaned frequently enough. Had to move someone's left meal items to get a seat. 6. Very lean no visible fat ribs cooked perfectly, place was clean and located close to interstate. Only giving a 4 star rating because I just didn't feel any thing that I was appreciated there. No smiles or energy from employees. You stand in line place order wall to check out, checker swings computer screen and says " for you" I look and is a screen with my choice of tips 15% 20% 25% and in small letters no tip. This is before you found a dear, recurved and tasted you food or given my cup to fix my own drink. I choose none I have some cash if the service is good I figure I will leave on table. I go fix my drink seat down with my plastic plate eat never being checked on and clean my table and dispose of my plastic. I got the Spud Pak. It's similar to the gut pak but doesn't have Fritos and is served in a baked potato. It was delicious!!! The half size was a little smaller than I expected but was filling enough without over doing it. The line moved quickly and the prices were reasonable. My daughter really enjoyed the potato salad and mild sausage. We will definitely be back the next time we drive through Waco. read more

It is made of shredded beef and beans soaked in BBQ sauce and laid on a bed of Fritos and cheese and served with sausages, jalapeno peppers, pickles and bread. Sumptuous and delicious.
