Volatus is hands down our favorite winery in Paso. From the moment you walk in, you're treated like family. Hal, the owner, is incredibly passionate, not just about his wine, but about the people who walk through the doors. As a retired military pilot himself, that connection hits especially close to home for us since my husband is a military pilot too. It makes supporting this place feel even more meaningful. The last winery of the day on a recent Paso trip was Volatus Wine, with former Navy fighter pilot/Topgun instructor Hal Schmidt as owner and winemaker. The intimate tasting room had lots of navy memorabilia and although we arrived close to closing time, Tina graciously served up stories and great wines, all with memorable names (Bloody Well, Boys are Back, Long Way Home). Am totally hooked on this intimate little tasting room, where we've been enjoying their delicious wines. Staff Gina and Jeff have always been very gracious hosts, with both their knowledge of the incredible wines, and also of the Paso Robles area. Hard to choose just one favorite, but the Cavu (Viognier/Roussanne blend), Rose of Primitivo, Top Gun Cuvee, Tempranillo, Chardonnay, and Syrah were all excellent. Also thanks Gina and Jeff for allowing us to taste some of the most recent medal winning selections. Always such a fun time . . . and we just had to join their wine club. We were in Paso Robles a couple of weeks ago. There are so many great wineries there. This was our first visit to Volatus. The gal taking care of us was wonderful! Very friendly and made sure we were well taken care of. The wine is great, especially for the price. I very much appreciated the ambiance and the fact that the owner served in the military and flew jets. The tasting room shares another spot with another tasting room. I haven't written a review in about a years, so that just goes to show you what a neat little spot this place is! I can't wait to go back! read more

With no intentions on stopping for wine tasting when we left on Sunday morning for the Morro Bay Dog Beach, Volatus was our third and final stop of the day. My significant other said, "go check out the airplane stuff inside." I did and was greeted by a tall, dark haired gal, asking if I wanted a tasting. We chatted for a moment and told her I was just checking out the "Top Gun" related aviation pieces that theme the Volatus. Little did I know, 30 minutes later, we walk in and stand at the count, looking over the wine list. The small establishment was mostly full, as it share a venue with Dark Star. Not sure if these folks had walked around the corner or not. About 2 minutes later we were greeted by Hal, asking us what we wanted to do. It was great he told us, "I could stand here all day and drink wine." Gave us a good laugh and he just started pouring wines for us to taste. We were impressed with the tasting and probably had more than we should have. We also started backwards, hitting the reds including the TOPGUN Cuvee (red blend) , The Boys Are Back (100% Syrah) and F-Pole (Cab Franc). Wouldn't be surprised if I missed one or two. We both enjoyed the flavor and quality of the wine. More importantly, we enjoyed sharing stories and a laugh with Hal. He didn't try to "bull" us into becoming wine club members, but after spending nearly an hour talking to him, I was sold on being a Platinum member (that's two shipments a year, 12 bottles each). The wine that sold us, not that Hal's stories weren't enough was the Volatus Grenache. This Grenache Blanc was about 12.9%, soft and fruity and wonderful, especially on a very warm Sunday. The other cool part of the tasting room, were gold/platinum record albums present from the band, Supertramp. I believe Hal said his wife's brother was the drummer, thus this rock & roll mementos. When it comes to small, boutique wineries, I look forward to spending more time in there, tasting wines and purchasing. Nothing wrong with the big guys, but so much more personal attention when it comes to wines. Thanks for a fantastic visit! You will see us again! read more

Got referred to Volatus by another winery who we had gone to several times for their Rose, but their recent batch wasn't as good. Glad that we did because Volatus' Rose was excellent along with almost everything else we tasted. The two staff members were extremely friendly and Hal stopped in and chatted for a bit as well. Because it is in the same building as Dark Star, we would have never seen or known about it. The atmosphere with all of the aviation and Top Gun stuff was pretty cool as well. Kind of feel that if you have the talent and drive to become a Top Gun pilot, you pretty much will succeed at whatever you do and this is a prime example. We left after joining the wine club and taking 6 bottles with us. Can't wait to come back. read more

I just ordered my second batch of Volatus Wine. The reds are amazing. Crisp and smooth!! What's even more impressive is their commitment to the customer. I had a time sensitive order that was held up because of high temperatures (they do this to maintain the integrity of the wine) but I needed the shipment to arrive on a certain day. Volatus (Tina specifically) was beyond accommodating and rushed an overnight delivery of the 6 bottles I ordered. They arrived safely and in time and I was able to present this fantastic wine at my event. What's more unbelievable is they not only waived the overnight delivery fee but they gave me a full refund for the wine purchased because of the slight shipping inconvenience. (which I didn't ask for) They just earned a customer FOR LIFE!!! I will be back to this winery for more amazing wine and encourage everyone to give this veteran owned winery a chance. THEY TRULY DESERVE YOUR PATRONAGE. Amazing wine, amazing staff and beyond amazing customer service!!! read more

A staff member at Eberle recommended we try out Volatus, and we are glad we did!! Great wines and friendly staff, the winery is owned by a former navy pilot! They share the space with 2 other wineries, which all use the same catering company for small bites We went home with the 2019 pinot noir, 2018 tannat "BWR," 2018 high hat, and 2019 CAVU (which is a big deal since we normally dont like white wine) NOTE: tasting fee was waived since we purchased a couple of bottles! read more

I was pleasantly surprised with Volatus Wine, located behind Dark Star Winery. Especially since Dark Star wasn't really my style. DEFINITELY make your way to this little pocket winery and try their solid list of wines. Volatus is themed after the owners love of flying and his career as a Navy Fighter pilot. So everything from the wine names to the decor is themed after flying. We came during the 2022 Wine Safari where we were treated to three tastings. First, was the Bolter Rose. A dry rose blend of Tannat and Pinot Noir. The color was so light, I hardly realized it was a rose. It was the perfect rose for a nice evening on the patio. Light and easy! The next wine I tried was the 2020 Pinot Noir with 100% Pinot Noir grapes from Adelaida and aged 12 months in New French Oak. This was another easy drinking Pinot that was good now and probably would age well another year or two. Third wine I tried was the 2019 TOPGUN Cuvee, a bold blend of Merlot, Cab Sauv, Cab Franc, and Malbec. Slightly chewy, bold and a great wine to pair with any meal. This was a nice find - definitely a hidden gem. I look forward to seeing what new wines they come up with in the future! read more

Great down to earth people that will spend time getting to know you and answering all your questions about wine making. Best of all, the wine is delicious. A hidden treasure off the beaten path. My girlfriend and I spent the memorial day weekend in Paso doing wine tasting. After hitting all of the wineries we had planned on visiting we decided to just pull into one random winery on the way back to our Air BnB. We saw a sign for Volatus up a side road and decided to go for it. And man are we glad we did. Hal, the winemaker, greeted us in the front yard with a glass of wine in hand and brought us inside to a small tasting room. He's also a winemaker at a larger winery, and sources grapes from other growers to make his own boutique wine, Volatus. It was amazing getting a 1 on 1 tasting with the winemaker, who also regaled us with stories of his time as an instructor at Top Gun (Volatus is latin for flight), his wife (who's father was the drummer in Supertramp. Two wines are names after Supertramp songs), and just the passion he has for winemaking. The Tannat was amazing and the Rose was "the best rose I've had all weekend" according to my girlfriend. This hidden treasure is a must visit if you enjoy speaking with someone who is passionate about what they do. I highly recommend a visit here and pick up a couple of bottles while you're at it.
