    Nice little hotel bar. The bartender was a nice guy. Pretty straightforward, unfortunately no cocktail list but that was ok for me.

I ordered the bison meatloaf and wow... it practically melted in my mouth. The wine mushroom reduction brought everything together perfectly. The roasted cauliflower and Brussels sprouts had the best crunch, and the mashed potatoes were so creamy and delicate there were no leftovers. My dad ordered the roasted chicken and said it was incredibly moist and flavorful. My mom's bison burger was juicy, tender, and cooked perfectly. The double fried French fries absolutely stole the show though. Somehow they were extra crispy without being overdone. For dessert we shared the skillet cookie, and it was the perfect sweet, indulgent ending to the meal. After a full day of traveling, this was exactly what we needed. We finished the evening sitting outside by the fire with everyone relaxing around us, and it was the perfect way to kick off our trip. I'd happily come back for that meatloaf alone.

Like most hotel bars, the drinks and food can be expensive, but the bartenders are on point with the cocktails. Their smoked old-fashioned drinks were good, the Negronis were very crushable, as was its bourbon cousin, the Boulevardier. The shrimp appetizer that my wife ordered was also very good, and a nice starter before we had dinner at the English Pub. It's a good spot to experience sunsets as you knock back a drink or two, or watch the night sky, so long as it's not overcast or raining. If you look closely towards the ceiling-length windows, you can see the Denver skyline in the distance in front of the Rockies that dominate the landscape from afar.
