Casual breakfast place offering many waffle based dishes. Sat outside at one of the 3 two-top tables. Pitcher of mimosa for $12 which supposedly serves 6, but really had 6 skinny glasses. Think it's more for 3 people. The waffles have a special recipe, and were really tough to cut into. Sadly I felt the waffle base is too much for the delicious subtle hollandaise sauce of the Benedict. The accompanying side of rosemary potatoes (my choice) was disappointing. They were chewy and rubbery. They had probably been sitting around for a while. Service was slow. Bring your ear plugs. The train runs right by the restaurant. Cant believe all the stars this place gets, it was a marginally better than an eggo waffle. I am an awful cook but could do much better on a bad day at home. When my friend called me in a state of embarrassed mortification that her car had broken down right by New Belgium Brewery and was blocking traffic (including the New Belgium delivery truck), I jumped in the car to the rescue. To our delight, the Waffle Lab food truck happened to be parked in the New Belgium parking lot. Fate? Serendipity? Yes, I'd like to think so. I've had the classic Belgian waffle in other venues (sadly, not when I was actually in Belgium because that would have been silly!) and had a pretty good idea of what I had in mind for a successful waffle experience. While there were lots of good options, I opted for the original. Just to taste the basics and it was awesome!! It was the right amount of chewy, doughy waffle with crispy bits of caramelized sugar on the outside and chunks of sugar crystals in the dough. Heaven. My friend ordered the chicken and waffles with sage gravy and gave me the appropriate hard time for, "not going all the way with my waffle." Her waffle was also pretty damn good! i would rate this place around a 4 or 4.5 for food - it was a very good waffle, very rich, and while it is just a single waffle, it constituted to be two meals for me just by how rich it was. There were also other food options which was nice. The decor of the location was very cool as well, with very modern and interesting art pieces, but the tables were hard to sit at. Finally, the reason why my review drops is because the bathrooms were disgusting. THey would not lock, and they just smelled off and were not clean. Hopefully Waffle Lab is a sign of greater food cart adventures to come in the Fort. Of course it's great if you come with other people who are up for sharing so you can try more of the great adventures. We went with one savory, the Big Capr-Easy. Who would think that basil, mozzarella, tomatoes, and balsamic would work on top of a liege waffle but it really does, especially with the very fresh ingredients they use. Then we had one sweet, the Ice Cream Sandwich. Of course we added chocolate chips. This is exactly what you think it would be, and it was AWESOME. My 100th review! Anyway, this place is boss! It was snowing, windy and cold and I just wanted a waffle. They offer both the sweet and savory varieties and who can pass up some chicken and waffles in the cold? Comfort food at its finest! The waffle was nice and fluffy while the gravy was nice and salty. I'm sure I had maybe a few too many calories but it was well worth it. So rich and flavorful with a side of maple syrup to balance it out on sweetness. Major props to a waffle stand for being ridiculously awesome. I went here on a weekend afternoon and we got the salmon waffle. I really really wanted to like this place, but I'll have to go back and try another waffle....the salmon was good and it had capers on it but then it also had syrup and an overdone waffle. The flavor combination just didn't mesh that well and I didn't think the waffle was too great either :( I plan to come back here and try the chicken one. I'm sure the sweet varieties are great! Reviews seemed to favor the chicken and waffle, so I decided to go with that, as it was lunch time and I was in the mood for a little sweet and savory. They made it super fast! So that was nice, not having to wait. After pouring the maple syrup over everything, I dug in. The gravy had a little spice to it, and the chicken wasn't bad, but I think the waffle was my favorite part. I will probably go for a fruit one next time, simply because I think it will allow me a better taste of the sweet, somewhat carmelized waffle. Mmmm. I am SO GLAD I finally tried this food truck! The waffles are incredible - they are basically works of art. Everything on the menu is elaborate, and I had a very difficult time picking just one. I ended up choosing The European, and WOW. It was amazing. Loaded with nutella, bananas, strawberries, whip cream and chocolate on top... It was not only beautiful, but it was delicious! I never thought I would be able to eat the entire thing, but it was so tasty I couldn't stop eating it. The service was incredibly fast, and the server was very kind. WOW! If you happen to be in Fort Collins, CO and are looking for a place to eat breakfast this is the place! We had to wait to be seated because it was packed ( & also it was Sunday) but it was very much worth the wait! I was pleasantly surprised as they have many delicious options to choose from! I was mostly interested in getting the waffles, but they came with a twist! Mine was a sweet & sour combination. It has been one of the best breakfasts I've had in a hot second. I was astonished because of all the great flavors that were present. Once it hits you're palette you're in for a ride. Kind of like that scene in the movie Ratatouille, that's how I felt! I also ordered a side of fries, which were freshly made and tasted great! They were accompanied by three different types of sauces that you can choose from. The ambiance was pretty neat and the server was great! Especially since we had such a big table! Once you check out, you stand up (if you can, after having so much great food!) and go to the cashier and tell her what you ordered. There is a setup where you can buy different sets of stickers, and there are little samples of teas of which you can also purchase. (Get ready to spend money!!! BUT totally worth every penny!) I'm giving it a 4 because I've only been there once. I really wanted GF waffles since I never get them or make them myself, but since it was their first day opening the store, they didn't have that available. I was understanding and ordered something else GF I could eat. I got the sweet potato hash, with a side of bacon. I was fully prepared to buy my meal, but they comped my meal for not having GF waffles- which I thought was very considerate! Plus the food was delicious. If I lived in FoCo I would go regularly. For people with food allergies, they do a spectacular job trying to make sure you're set (they don't use soy oil which can be an issue for some people). Ordered with Grubhub and the food was ice cold and way over priced for the product we received. The Fries are $6 each and tasted like they were cooked yesterday and refried today. Also the seasoned potatoes at $6 each for a very small portion, tasted like they cooked them last night and put in the microwave this morning. Waffles ... They aren't just for breakfast anymore. I've been an event professional for twenty years... My work is mostly based in planning, production and experience based environments but in my line of work, one cannot help developing a critical eye and pallet for food. While being an event planner and participating in literally hundreds of menu planning, food tastings and working with some of the most amazing catering companies and chefs in the continental US, I've become spoiled... I love good food. I'm not stating the above to puff my chest ( or belly for that matter) but I just have had the great job fortune to travel, meet and eat some amazing food. Consider it my "street credentials". I'm not trained - I'm not a food snob... I just know what's delish to me. I love five star dining (except for sill stuff like "foam" and penny sized entrées with silly over the top pricing) but most of all I like mom & pop, small entrepreneurs and chefs who dare to do. This brings me to The Waffle Lab (TWL) ... which is a cool story atop it being a great place to eat. I first experienced TWL fare at their food cart in Fort Collins, Colorado, where I live and work most of the year. It was one of those busy days when I needed to squeeze a lunch in amongst too many meeting. I saw the jet black and yellow ochre food trailer and thought I'd see what it had to offer. Now I'm a traditional breakfast guy- eggs, toast, bacon, waffles In my humble opinion are meant for the first meal of the day or late night after a solid pub crawl. Excepting for Chicken & Waffles which causes even this old fashioned fast breaker to bend the rules. I ordered it up and chatted with the nice folks preparing the dish. The amazing aroma coming out of the tiny kitchen on wheels was definitely raising my interest and I noticed some of what the other folks eating... Huh- maybe waffles could be a viable base for meals other than morning. The plate was great - the boneless chicken batter, breaded and fried perfectly - and the waffle... Ooooooh the waffle. It's important to note that TWL uses a particular type of waffle prep called Liege meaning - they are raised , like a bread, and grilled . Seriously, I had no idea and have never been to Belgium - so why had no one told me about these amazing things until now....????? The above process creates a fluffy AND crispy waffle product - the aforementioned chicken sits proudly atop what I'm guessing is buttery- REAL Vermont maple syrup - and there is a noticeable difference folks... And then an amazing white gravy with sausage is spooned over the entire dish. The sweet - salt- crunch is a hands down winner. I've had their street walking waffle which showcases the Liege waffle and celebrates its perfect simplicity, yet complex flavors. I could eat one of these a day and die happy. Winner! Wouldn't you know ... I'm not the only one who loves this place! TWL, following in the footsteps of several other food truck / carts made the leap and opened a bricks and mortar location smack dab in the old town section of Fort Collins. Bold, but brilliant move... In a town with many many breakfast choices - their twist was to open 7am until 8pm and serve breakfast, lunch and dinner... Because waffles aren't just for breakfast anymore. I have several more samplings to write about - but this review is almost as as broad as TWL menu... So I will just say : GO THERE and tell them Lil Joe sent you. read more

Learned about Waffle Lab from my daughter while we were in Fort Collins for a wedding. Seven of us visited for breakfast one morning and it was without a doubt one of the best waffle meals I have ever had. The menu is amazing in both range and contents. Several had the Classic liege waffle, one had sweet potato hash and another had the Blue Sky breakfast version. I chose the Grilled Cheese with an addition of avocado. Our various coffees were all great, as well as the two pitchers of mimosas but I must admit all who tasted my Grilled Cheese found it beyond amazing. I have not found a waffle lab here in Austin but I look forward to my next trip to Fort Collins just to enjoy a BLT Waffle with a side of fries and a very cold and tasty local draft for lunch. read more

When I dined here (or attempted to dine here) last Saturday, I had the absolute worst customer service experience of my entire life due to the attitude of one of the servers. I am, however, giving 3 stars because the manager did her best to make the situation right after we were treated so poorly. I want to preface this with the fact that I have worked service jobs most of my life, so I am a very kind, compassionate, and patient customer. I am kind to my servers and understand that places get busy and sometimes things are out of your control. That wasn't the case here-- it was just pure rudeness. We got seated after a moderate wait and soon after, our server (Kaitlyn, I believe) took our drink and food order. I ordered coffee and, before she left, I asked for some white sugar for my coffee (there was none on the table). She stared at me like I was an idiot, mumbled something, then walked away. That was odd, I thought, but figured she must just be busy and needed to go do something else. Our coffee came out with no sugar and, after 10 minutes of it sitting there and starting to get cold and no sign of our server, I asked a different server who was at the front area if there was any sugar over there he could hand me. He said he would have a different server get it to me. That never happened. Finally, my coffee is getting very cold and my mom is annoyed so she gets up and goes to the register area and asks our server (who was standing around while the place was packed busy) for sugar. The server, once again, looks at my mom like she's an idiot, says "okaaaay" very slowly and lets us know "someone will bring some out to you," then resumes leaning on the counter. At this point, my mom is very frustrated and says something like "we would really appreciate that because we have now asked for it 3 times." I am so confused at this point why asking for sugar is such a major request at a place that serves coffee! Our server finally comes to our table with some sugar and this is the part that left my mom, sister, and myself shocked. She literally throws the container of sugar down on the table so that it slides across and rolls her eyes at us before quickly leaving without saying a word. My mom, sister, and I's jaws all dropped as we stared at each other like "wtf just happened?" NEVER IN MY LIFE has someone thrown a food item my way and rolled their eyes without saying a word. I said, "should we leave?" and we got up and started to leave. I just wanted to be away from this incredibly rude person. My mom, however, went back inside to talk to the manager since we had spent so long waiting and were about to walk away without any food. Like I said, the manager did a great job at making things right-- she packaged up our food to go and covered our tab. I appreciated her actions and left feeling much less angry. But I am still absolutely APPALLED at how this Kaitlyn (Caitlyn? Katelyn?) person treated us. So rude and disrespectful for no reason other than my mom slightly complained about having to ask for sugar several times. This person should not work in food service (or any service job for that matter) and that level of disrespect will stick with me for a long time. read more

But I never opted to brave it, even though your word-of-mouth reviews were optimal. Wow! I had the Sammie, made with an amazing waffle, egg, and somehow covered in crispy melted cheddar ... I added grilled jalepeño and maple surple. Well, you know what I mean. I've never combined jalepeño and maple syrup before, and idk why I thought it would be a good idea, but it was simply out of this world. So many other things on the menu I want to try - including more drinks. I selected "The Dude." It reminds me of a White Russian, but with espresso. Wow. Can't wait to come back. Unfortunately, I wouldn't recommend this restaurant for a few reasons. We placed an order over the phone and when we got home with it, we had the wrong order. Apparently, there were 2 Josh orders and we got the wrong one. I worked as a server for 10 years, so I know these things happen. No biggie deal. I called to let them know and the response was "ok... what do you want ME to do about it.." I asked if we could get our actual order or a refund or something and the response was "Um.. I don't know. I mean I said Josh *** and you picked up the order, so.." I asked her if she wanted to talk to her manager to come up with a solution and she replied "no, you picked up the order when I called Josh *** so.." for reference, my husband grabbed the bag because she said "Josh". So I said okay, can I talk to the manager then? "She's not here." I asked what the girl I was speaking to's name was and she mumbled "Kayla (something), BYE" and hung up on me. So, I got in the car and drove to go get our correct order, which took 25 minutes to be ready. She was just as rude in person. After finally getting our food and digging in, the waffles were super crunchy and the chicken was burnt. My grandpa and husband said they wouldn't go back just based off of the food. I'm bummed because the place is cute and the idea is awesome. Great location. It should be a clue though, when I was in there at 9/9:30am on a Sunday there were only 3 tables of people. read more

Meh. I was excited to try this place since it had good reviews, but it definitely wasn't for me. It took about 30-40 minutes for us to get our breakfast, the orange juice cup is smaller than a kids drink, and the waffle wasn't that great. There's sugar or something inside of them, which was an unpleasant crunch. We had sweet and savory dishes at your table so the reviews were mixed. I had a sweet dish, waffle with strawberries, whip cream, and chocolate. If you would have given me a bowl of strawberries, chocolate, and whip cream I would have been happier. I also found a tomato slice in my dish. My significant other had chicken and waffles without the gravy and really enjoyed it. My brother had a savory dish, and stated the sugar cube filled waffle doesn't go good with a savory dish. He did really enjoy the dish otherwise.
