We put our name down and were told it would be a 30 minute wait. 50 minutes later we were finally seated, and placed our orders within 5 minutes. The coffee was burnt and the orange juice was warm, and our food took almost an hour despite other tables being seated after us and their food arriving sooner. My food was very good (get the chicken and waffles, but make sure they don't run out of gravy), however my friend's sides were cold and the eggs were not prepared as specified. I love Belgian waffles so a few years ago I decided to give this place a try. We went in and got take out during a brunch rush. The wait staff was overwhelmed by the crowd and I heard them complaining a lot about it in front of customers. AND THEN, one particularly disgruntled waiter picked up plates from a table who had finished eating, and the waiter literally started eating French fries off that person's plates that he just picked up!!! It was so disgusting I never ate there again.......until today when I GrubHub'd a waffle sandwich. It was just a soggy waffle with a layer of congealed cheddar cheese melted on top of it with shoe string fries on the side that they advertise as "frites" -- they obviously from a frozen bag. The Waffle Lab is a food vendor located right out of Pateros Creek Brewery. They serve their waffles similar to crepes. You can get savory ones or sweet ones. I ordered kind of a grilled cheese and ham waffle sandwich for my savory and for my sweet I got a waffle with Nutella on it along with whipped cream, bananas and strawberries. Both tasted wonderful and I look forward to making a return trip back. During my meal I talked and listened to some other customers and from what I gather Fort Collins municipal codes are not very friendly with allowing food vendors. Perhaps it is it's self destructive vanity complex that is the cause of this but I also gathered that the strictness of the codes are loosening and it is noticeable. There are slowly more food trucks and vendors popping up here and there. You ask me the town could use a little more street and metropolitan attitude and food vendors are a great way to introduce this to town. If more vendors come up that are as good as Waffle Lab then the town will be kicking itself for not loosening these codes earlier! read more

The classic waffles are amazing. These awesome waffles boast a crisp outside while hiding a soft doughy inside, perfectly sweetened with mouth popin' crystaled sugar pieces. Then lightly dusted with cinnamon, sugar and powdered sugar.. served alongside is a small cup of 100% pure warm amber maple syrup, and fresh raspberry for the perfect pop of color to the plate. They had open tables and we started by waiting to see if we would be seated but after standing around for about 10 min we tried seating ourselves. I have to say, I'm quite biased towards street food. The lack of a permanent facility (no monthly rent/leasing fee) and counter service (no wait staff to pay) means a more affordable bill for the customer (AKA me) and therefore a better value. As cozy as some restaurants' interior decor are or as nice as some waiters and waitresses are, such things are not a necessity. Street food embodies what I think all food establishments *should* be: focused on the food. As such, waffle lab is a great stop in Fort Collins for lunch or a large snack: the portions are generous and each menu item is a unique concoction dreamed up by the owners. (Trust me on the portions, the waffles are big as your face.) Everything they offer is fun and experimental, from the nutella and chocolate drizzled "European" waffle to heartier options like the iconic "Front Range Chicken & Waffle". While I haven't tried everything on the menu, I can say what I have had has been pretty good. My only complaint thus far is that the fried chicken for the "Front Range" is rather dry and the gravy makes it too soggy too easily, which saddens me as a huge fried chicken fan. Thus far, my personal favorite is the "Mild High" waffle. All in all, this is a food truck that has its priorities in order and delivers on a wide variety of out-of-the-box waffle combinations that's sure to satisfy just about every palette. We gave the lady our name and phone number and after 45 minutes inquired as to how much longer the wait was, only to be told that our place was given away and they'd tried to call ( no missed calls on phone), but would give next available. 15 minutes later, the booth that sat empty for 20 minutes was given to us. The server asked for our beverage order, we all ordered coffee, just to be told they were out of ALL CAFFEINATED COFFEE!!! We were told they had been busy and weren't prepared for graduation weekend. Come on, they serve LOCAL coffee. I can walk over to The Cupboard and buy some... These folks are not able to handle big pressure, maybe the food truck was the tolerable size. Parked in the Pateros Creek Brewing Company parking lot, The Waffle Lab's liége waffles are, at this point, the best waffles in the entire city. They are absolutely amazing. They are made from yeast-leavened dough and imported Belgian pearl sugar. When baked at a specific temperature, the sugar pearls partially melt inside the waffle and caramelize on the outside for the perfect combination of gentle sweet flavor and firmer texture. When taking a bite, you feel the very slight crunch from the sugar that pairs so well with all of the savory options. We sat on the Pateros Creek Brewing patio to have a proper place to sit and enjoy our meal. While sitting there, a rough-edged and heavily tattooed guy sitting next to us kindly chatted with us about our respective lunches. He had ordered the Cache La Porter beer brat, but wasn't as much of a fan of his lunch as we were of ours. Bill came by to see how everyone was satisfied with their lunches. Our table neighbor politely spoke up about his disappointment. Within minutes, Bill came out with a complementary replacement waffle for him and apologized for not meeting the mans' expectations. He was thrilled with the level of service, and so was I as a witness. Many times during my vacations and visits to other cities, I leave wishing Fort Collins had a delicious equivalent. Flavor wise, Waffle Lab was a 5/5 stars. We ate 3 waffles: The European (pretty much a dessert-waffles with whipped creme, fruit, and chocolate hazelnut), the chicken and waffles, and the waffle with the brat. All selections were very tasty and I really enjoyed a few elements with each dish. The chicken and waffles were good- the chicken was well cooked and the sausage gravy was a nice touch. The bratwurst and waffle is an odd combo, especially with the sauerkraut and lighter hot sweet mustard (which was lighter in consistency and ate more like a thinner sauce/syrup instead of it being very thick, like the mustard you get from a bottle). Both of these dishes were excellent and, although I would not consider them the best I've had, they were very solid. The waffles in all of our dishes were buttery and thick, which was necessary given the amount of toppings on top. Texture wise, the waffles were a nice combination with the brat and chicken. The only downside to the Waffle Lab is the value/smaller portions. While I admit I'm a fatass and enjoy larger portion sizings, Waffle Lab still charged $9 for the chicken and waffles (which were two decently sized chicken strips and the waffle). I would say that Waffle Lab is a great spot for a snack or a lighter lunch, but don't eat there unless you're willing to pay more than average. read more

Shame on us. We should have waited at one of the first 4 restaurants that where on a wait. When we walked in and there was 2 tables we should have know better. First 2 waffles where ice cold and rock hard. Next 2 where so undercooked it was still waffle batter on the inside. Waitress could tell that we where not happy but choose not to ask. Guy that bussed table asked if there was anything wrong since 2 of our party didn't eat. We explained to him and he just said ohhh okay. Busses the table and walked away. So I was really excited to take my boyfriend here for lunch, considering he likes waffles, A LOT. I thought it would be right up his alley. No line no wait on a Sunday, which was nice, but the downside was that there isn't really any official seating, so we ended up sitting on the curb, not ideal for a messy sandwich. I do actually think it was a good idea to do it this way, because 2 waffles is a lot, BUT it was extremely messy. And with no table, it was cumbersome. Great, new breakfast and lunch place in FoCo. We stopped in for brunch and ordered the Blue Sky Breakfast, I Want S'more, and The European. Coffee served from Boulder's Box Car Coffee. The Blue Sky was tasty, piled with plenty of bacon, tomatoes, and avacados. My daughter had the S'mores and she loved it. I had to satisfy my sweet tooth and the European with Nutella, bananas and strawberries was incredible. Service was friendly and coffee refills frequent. This unique stop is off the beaten path on Olive but it is Soooo well worth the trip one block from College. I am so psyched to see the crew with their formal location. Since arriving in FoCo in 2014, I've been guilty of stalking their mobile trailer to enjoy their latest creations. You will not be disappointed when you venture off the normal restaurant path and make your way to the gloriousness of goodness found in the perfection of the Belgian Waffle. The Waffle Lab has perfected their waffle and the taste is wonderful. This is not your average soggy waffle that loses texture and flavor the longer it sits. For example, I recently had the Chicken and Waffle combo and the Foster the People at the same time. I ate the Chicken and Waffle first and then then when I made it to the second waffle it was still crunchy and chewy and not soggy. Writing this is making me hungry for more. After eating there recently my wife and I turned to each other and both said, "that was such a satisfying meal!" There are many sweet and savory options to choose from and they are all delicious and well crafted. My favorites are The Big Poppa, Foster the People, and the Chicken and Waffles. In fact I will say their take on Chicken and Waffles is the best I've had anywhere. They add a sage gravy to the dish that makes it even better than you can imagine.
