The salad is a warm bowl that's beautifully layered with warm cilantro rice, black beans, warm corn, juicy tomatoes, crunchy green bell peppers and pickled red onions, topped with light chunky tuna salad, crispy fried onions, and fresh crisp lettuce, served with a mild spicy and creamy chipotle dressing, YUM! Every ingredient in this salad bowl is so lovely! It has a perfect balance of protein, carbohydrates, veggies, and all of it is nutritious. They offer a nice selection of snacks, sweets, and beverages such as fountain drinks, canned, bottle, and lemonade. I chose unsweetened brewed tea and requested a cup for iced tea, very refreshing! I first discovered the spot thanks to the famous "Date Shake" billboards lining the route between Las Vegas and Los Angeles. While the shake itself is a bit too sweet for my taste, I really enjoy their dairy-free date smoothie (no ice cream or whipped cream). We've tried both, and we consistently prefer the lighter, fresher taste of the smoothie. On that same trip, we also managed to visit while they were open and grabbed a traditional chicken sandwich, a spicy chicken sandwich, and an order of chili cheese fries. If you miss their regular hours, they stock prepackaged versions of the sandwiches in the attached gas station until they sell out. In my experience, they're usually gone by 10 PM, so don't rely on them as a late-night backup if you're hungry. The prepackaged sandwiches are slightly soggier from sitting in the packaging, but they're still very good -- just a little wetter than when made fresh to order. I definitely prefer the spicy version. It delivers a nice, warm heat without being overwhelming. Each sandwich comes with two thick breaded chicken tenders and pickles, and they offer their own spicy mayo as an optional topping. The chili cheese fries are on the smaller side, but they're tasty and come with freshly graded cheddar on top. I always prefer catching them open when possible, but if you're craving a chicken sandwich, the prepackaged ones are a solid option too. They're made fresh and then held under a heater, so the quality holds up surprisingly well.

The carbonara on the other hand, was very under-seasoned, it just felt like I was eating plain pasta. But it may have been the saltiness of the salad that made the pasta feel the opposite. We looked around and saw some other dishes that we thought we should have tried instead, I'd like to come back and give it another try.
