    Was really craving ramen and was super excited to try this place. We first arrived and there was an employee prepping eggs behind the counter and no other customers were at their booth. The employee looked at us and turned back around to continue what he was doing. I was confused. No greeting, no "I'll be with you in a sec", no smile...it was kind of awkward lol. We stood there wondering if he was ever going to help us and then another employee arrived at the booth and greeted us very kindly and asked if we had ordered yet. We said not yet. And he very nicely asked what can he get for us while he went to wash his hands. He had such a friendly and kind demeanour. I ordered the OG Tonkotsu. It took maybe 10-15 mins or so. Which made it seem promising. Unfortunately the ramen overall was disappointing for me personally. I've read others say that the noodles are handmade in house. I didn't see that information anywhere and it's very cool if it's true. Except these noodles were not my favorite due to their flavor. They tasted very much like the noodles you'd get in a wonton noodle soup. And they were also clumped together in some spots. The tonkotsu broth wasn't rich enough, it seemed more watered down. There were also too many green onions for me. I've read others saying their chasu was tender (as it should be) but mine was only soft at the fatty parts and the meat itself was verrrrrrrry over cooked and tough. Never have I ever had chasu in ramen that was like this. Some places were harder to take a bite because the meat was so dry and tough. I also got decent sized bits of burnt stuff in my bowl. I don't know where it came from. It was about the size of fried shallots - I chewed a piece and it was so burnt the flavor was totally indistinguishable so I spit it out. This ramen gave me very much food court quality. My review is not based on the price as others have commented on. I would pay this much or more for a perfect delicious ramen, but this wasn't it for me. I don't know if they just dropped the ball that one day or what because my broth definitely didn't look as opaque as other yelpers photos but I don't know if I'd come back.

    While bf was waiting in line for White Rice, I made a few circles around Liberty Station before deciding on Weapon Ramen. There was no line on the bustling Sunday we were there; unsure whether it was because it was tucked away in a corner or otherwise. There were appetizers and rice bowls, however, I was interested in ramen. There are only 3 different types; I decided on the OG tonkotsu and added spicy paste for $1.50-2.50 additional (Not sure specifically). The total came out to ~$20 after the spicy paste, tax, and tip. The girl behind the counter informed me it would be about 10-15 minutes. I cannot attest to whether this was accurate or not as bf picked it up after his long wait at White Rice. I snapped a quick pic before pouring the broth over the ramen. Although it seemed like a small portion bf and I had difficulty finishing it alongside our White Rice! It could have been that we were pretty hungry but all the components of the ramen were well balanced. The broth was rich and had a slight tack to it; the ramen seemed fresh; the pork belly was rich, fatty, and succulent; the wood ear mushrooms added a nice texture, and the soft boiled egg was cooked well. I added dollops of the spicy paste; nearly the entire tiny container, just to get a tickle (it was not spicy). While the bowl overall was tasty, my qualm, however, comes with the price- $20 for a bowl of ramen? In San Diego? I imagine there are similar quality/better quality ramen spots for less.

    Location: Inside Liberty Market Cuisine: Japanese Price: $7-14 I walked around in circles from being indecisive. Decided to follow the crowd to the ramen spot. Ordered the tori paitan ramen, which is chicken broth, confit chicken leg, and some other toppings. Not even sure how to describe it besides the word disappointing. The broth was bland. I didn't even finish it. Disappointing, it was disappointing.

    Weapon Ramen just opened at Liberty Public Market and I was really excited to give them a try. I went to the Market after work and was starving so I ordered the OG Tonkotsu. There are options to add butter bombs, but I just wanted to try it as is. Right now you can only eat outside which is fine because I really wanted to have my ramen in the comfort of my own home. The food travels really well, some places put the ramen and broth in the same container and that's a mess, Weapon Ramen really took care to keep the ramen and the toppings separate from the broth. Let me just say the broth is seriously so flavorful, perfectly salted and a little creamier, not watery at all! The pork belly has a really good char to it which also added a smokier taste to to all, the ramen noodles were really nice and thin and plenty of it! Then the eggs, perfectly cooked and marinated really well, I am salivating just thinking about it. The reason why I give it a 4 is that I feel with the price you would have more portion of pork belly, but overall the ramen and broth is really uber flavorful, I would definitely recommend that you give them a chance!

    Weapon Ramen has taken over the stall at the Liberty Public Market that was recently occupied by a branch of Rakiraki Ramen. I was not aware that the latter had decided to leave LPM. The menu featured two types of ramen and three styles of chirashi. My original intent was to order some noodles, however the Albacore Bowl caught my attention. The contents were albacore, spicy tuna, and smoked trout roe over sushi rice with sunomono pickles, radish, shiso, and nori as toppings. While the item was neatly prepared and served in a container like you see at poke shops, the biggest issue was the amount of product. The price was much too high for a half-filled bowl. One usually gets five scoops of protein in a large poke bowl that costs $15. That was not the case here as the seafood needed to be doubled to justify the price tag. The quality and level of service were fine, but the value was lacking, hence a three star rating.

    Very meh. Especially for the price I was expecting more. Located in the liberty public market, it was extremely busy on a Sunday and I had about a 20 minute wait for my food. I ordered the plant based ramen ($12) which comes with soy and mushroom broth, tofu, corn, Menma, wood ear mushroom, and greens. The size was pretty small. It comes in a big bowl with all the ingredients and then a separate container for the broth that you pour in to the bigger bowl. The flavor of the broth was pretty decent for a vegetarian broth. My favorite ingredient was the menma which is fermented bamboo. A nice salt, contrast with some crisp bite to it. The wood ear mushrooms were barely there. The tofu was nothing to write home about either. Overall, just pretty underwhelming.

    Weapon Ramen is just getting underway at Liberty Station Public Market serving up Ramen Bowls and Chirashi Bowls. I am not to sure about the "Listening Bar" they advertise, but I am sure more information regarding that will be available soon. I had the OG Tonkotsu Ramen Bowl with no other Koji Butter Bombs added. I was going to go "Spicy Red Pepper Taste" but I figured a little Shichi-mi tōgarashi would take care of that and it did. Their pork broth simmers for over 10 hours and it shows with its delicious flavor. I liked the broth, it was savory, with a good saltiness, and a subtle level of fattiness. The thin noodles were good, but they were missing that nice chewiness their thicker cousins offer. These were the straighter thin noodles. I think those thick chewier would of worked nice here, especially since the amount of vegetables and chachu were in limited quantity in the bowl. At the set price of $14, I did expect more ingredients. I would call it "a light bowl of OG Tonkotsu Ramen." That being said, the Chachu was very tasty and tender. The wood ear mushrooms and bamboo shoots (menma) were nice. I liked it, but I guess I am used to having ramen served in a wider bowl. Perhaps the taller paper bowl with a smaller diameter gives the impression that it is a smaller bowl, as a result, a smaller amount. Service was up beat and the peeps here were really excited to get underway.

    Located inside Liberty public market. Closest parking lots would be near the slaters 50/50 area. Wanted to try their ramen but they were out of chashu...not sure how a ramen place runs out of pork. Tried their chicken katsu sando. Looked NOTHING like the menu picture. It doesn't have your regular burger bread, it looks like milk bread that's toasted. The sandwich was good, but they should really update their photo on the menu. It took about 20 minutes for the order, someone who ordered after us got their huge order at the same time which was really disappointing because my food was just sitting there. I'm not sure if I'll be back to try their ramen.

    4.5- Flavor was tremendous, noodles were perfect, and overall a definite recommend. The pork was insanely tasty and meaty, not too much fat, but still so tender and delicious. Just beware- one small bowl of ramen will run $22 before tip! The OG Bowl is $17 and if you choose one of the 3 toppings: black Garlic butter, Chile crisp, or truffle butter- that will be another $4-$4.50! Considering how they use a ton of butter in the broth, - I know because I took the extra broth home and when it cooled, there was almost a whole stick of butter/oils coagulated on top- do not order the extra butter. I went for the chili crisp and was really disappointed- it was tasty but $4 for such a tiny amount was really too much. I know I am paying for location rent in the expensive Liberty market, but I know I can get the equivalent crisp for $5/bottle at 99 Ranch. I would definitely come back with a bottle of my own chili crisp. Also if you are a big eater, be prepared to order 2 since the portion size is 'vintage 70's-size' lol! It was the same amount of noodles you find in a Sapporo Ichiban packet at Vons. But of course these noodles were much more chewy and delicious. I was a bit disappointed that they pre-pack them in the to-go carton a good bit of time before serving because when I pulled mine out just a minute after getting them, they were wedged as a mass in the shape of the container. For $17, I would expect them to be more freshly prepped? It took careful stirring to get them all coated in the gooey soft-boiled egg prior to dipping in the broth. Be careful if you have high cholesterol or heart disease because between the pork, butter, and soft-boiled egg- this dish is a sure-fire heart attack. My friend ordered a pork belly skewer which she said was meaty and good but not particularly impressive. I thought the pork in my ramen was absolutely perfect . I'm not sure service is a huge priority because there was only one guy hiding behind he shelves when we got to the counter and honestly we thought they were closed. We actually walked away and came back when their neighbor reassured us they were open. The guy only popped up the second time we returned. Overall, it's going to stay in my top choices at this market, but I won't be driving out of my way for it.

    Fresh made ramen noodles. Anime vibes. Dope branding. Fun bibs. This place is located inside the liberty public market food hall. Lots of different vendors but I had to try this one. It was an excellent bowl of chashu tonkotsu. The fresh noodles were the first thing I noticed. Had a great meal here. Can't wait to come back for more Recommendation: tonkotsu ramen

    If you have friends or family in town and deciding where to eat is always lengthy discussion where there are too many opinions the public liberty station is the place to be. With all the choices in the indoor market everyone can pick what they want as you all eat together outside. If your wanting more of a restaurant vibe then there are surrounding restaurants to choose from as well. On a overcast day I was craving Japanese food. With only 3 choices and the ramen we wanted was of course not available. So the cashier said he could make Tori paitan just with tonkotsu broth. Not sure what that meant we agreed assuming it would be great. Part of the issue is the music they were playing was extremely loud he couldn't hear us and you couldn't even hear your own thoughts. Finally, after repeating ourself multiple times he finally turned down the music. Also wanting to try chirashi we were again told they recently took that off the menu. Sooo again back to square one. We only ordered the ramen. I added the black truffle oil for an additional $3.50. While we waited we went to find a table outside once I came back to pick up the food the gentleman cooking in the back came up to let me know we were charged the wrong amount and he would be refunding us for the overcharge which was nice. Once the cashier handed me our ramen with the broth separate from the other ingredients so that if your taking it home it's not soggy once you indulge. After asking the cashier multiple times if it was truffle oil he kept saying yes and yet once we sat down it was not. It was the fermented black garlic which wasn't what we ordered. The broth was full of bold flavors and spice. The egg was cooked perfectly. The char on the chicken and mushrooms gave a ramen a wonderful uniqueness. Although it was the OG tonkotsu and not the tori paitan with the tonkotsu broth as we were told the overall experience was very disappointing. We aren't sure if the cashier was new and unaware of what was going on with all the mistakes. For the price we paid and overall experience this would not be a place I would typical return to, but the broth was great and if the egg wasn't cooked properly I wouldn't. I think in the future I will go to the actual restaurant. Especially since the reason the tori paitan ramen wasn't available because it is not made in this location, so the other location was low on inventory causing this location to also have very little on the menu.

    Fun atmosphere and tasty ramen. I love trying new places and this place was defiantly worth it! I recommend the sparkling white peach drink if you want something light and refreshing with your ramen! I got the OG tonkotsu ramen. The underbelly was amazing, probably the best underbelly in a while that I've had. The ingredients consisted of pork bone broth, chashu, ajitama, menma, wood ear mushroom, scallion. The only thing is the noodles were ok but besides that I enjoyed all the fresh ingredients. Definitely will order it again. Luckily I ordered before a mini rush of people so I didn't have to wait that long. But it came out fairly quick. While you wait they give you a buzzer so you know when your food is ready. You can enjoy your ramen on a cold day outside on the patio. Or in the public market inside.

    I have been wanting to try this place since the Union Tribune did a great article on Chef Philip Esteban on July '18, 21, describing him as "part of a new generation of Filipino chefs who are unapologetically putting Filipino food where they feel it belongs: on mainstream menus." He has some impressive experience - at Michelin-starred Momofuku Ssäm Bar in New York, Nine-Ten in La Jolla, and launching Cork and Craft in 2014. He was named Research and Development Chef at CH Projects in 2019 (the group behind Ironside, Morning Glory, Born and Raised, Polite Provisions and others) and named Chef of the Year in 2020. He got Weapon Ramen up and running in just 10 days after Raki Raki closed, which is also pretty impressive. I really wanted to try the miso-marinate black cod (we've been making that at home lately), but it's a popular dish, and they were out for the day. But I tried the OG Tonkotsu Ramen, with pork bone broth, pork, scallion and nori, and it was very good. Would like to try one of their other fish & rice bowls, too. Next year, he's planning to open Well Fed, a fine dining Filipino restaurant in National City; can't wait to check that out. It will be the anchor of a public market there, Market on 8th, where he plans to open a second Weapon Ramen and Wordsmith, a cooking shop/bookstore. Welcome to Liberty Station and good luck with all your new endeavors!

    Super mediocre. Ramen is ok....Bao is NOT good and left a horrible taste. Menu offerings are not always available. Will not be back.

A normal meal. A casual San Diego ramen situation. Incorrect. What actually happened was that my child experienced a culinary event so powerful it rearranged her internal belief system. She took one bite and immediately declared it her "favorite meal ever" and "the best sushi on earth," which is impressive because those are two separate categories of food, but honestly I respect the conviction. At that moment, she became a tiny ramen prophet. A noodle evangelist. A sushi sommelier of chaos. I was no longer her father. I was merely the adult with a wallet and transportation. The ramen was fantastic. The sushi was fresh. The whole place had that magical "we actually care about what we are doing" energy, which is increasingly rare in a world held together by parking apps and spiritual fatigue. Then, as if the first visit had not already altered the timeline, my daughter made me go back the next day. Not requested. Not suggested. Made. There was no negotiation. She had tasted the mountain and demanded we return to the temple. So we did. And it was still excellent. BESHOCK is now officially part of our family lore. Somewhere between "remember that time we saw the ocean" and "remember when your daughter discovered ramen and briefly became a food critic possessed by a joyful sea dragon." Highly recommend. Bring your children only if you are emotionally prepared for them to ask to come back immediately.

We are typically sat and served right away, and inside is very cute and clean. A bowl of their ramen will never do you wrong and we are a sucker for their appetizers as well. The spicy garlic edamame is a must, as well as the spicy tuna crispy rice. They also have an array of delicious and special sakes, great for a night of sampling and enjoying.

However, after we were seated, it took another 15 minutes just to get water and place our order. After ordering, we waited an entire hour for our first food items, which were just fries and chicken. Then we waited another 10 minutes for the gyozas, followed by another 10 minute wait between each of the next two dishes. The table next to us was seated before us but didn't even get to order until about 45 minutes after they sat down. Meanwhile, we could see staff talking and laughing by the bar while customers were waiting. Not once did our server acknowledge the wait time, apologize, or even check in with us about it. By the time our main entrée finally came out, we had already been there for about an hour and a half and it was 12:30 AM, with the restaurant about to close. We were so tired and hungry that we just asked for a to go box, threw the entrée in, and left. The food may have been good, but unfortunately, the service completely ruined the experience. The lack of communication and acknowledgment of the incredibly long wait was especially disappointing.

After finishing the entertaining and riveting apocalyptic movie, we weren't sure where we were going to eat for dinner because our first restaurant choice Ramen Nagi closed at 9pm. My son's pahtner mentioned that the Ramen Nagi in San Jose had a last seating of 9pm, so we walked briskly to the restaurant and I learned that as long as you're in line before the closing time of 9pm, you'll get served. Three of the four members in our party talked glowingly about Ramen Nagi, so I was excited to grub here for the first time. After eating their Original King ramen, the chicken karaage, the gyoza, and receiving quality customer service, I wholeheartedly concur with my family's positive reviews and understand now why the restaurant was packed at closing time and why Ramen Nagi is highly rated with 4.4 stars and 738 reviews. Ramen Nagi is located within the shops of the University Towne Center (UTC) La Jolla mall. The restaurant is located towards the west end of the mall where you'll find Raised by Wolves, new spot Chef Fei, it's across from Katsuya Ko and Alo, and it's next door to Van Leeuwen Ice Cream. Parking is paid parking at the mall, but the first hour is free. There's bright indoor seating and minimally lit umbrella covered outdoor seating. Being the foodie that I am, I prefer indoor seating, so that the lighting would be conducive to seeing the food and taking pics. Look for the banners with Japanese verbiage and a large red lantern in front of Ramen Nagi. Adjacent to the outdoor seating, there's a water feature that gives off relaxing vibes. The customer service from all of the staff we interacted with was outstanding and is probably why it's such a popular eatery. To be completely transparent, I'm not a fan of having to make my food selections on the provided sheet of paper while waiting in line. I don't know if that's normal SOP and maybe it was because we were one of the last diners and they just wanted to speed along the process. I'd rather take my time, peruse their menu, and order what I desire. Luckily for me, my Pahtner had eaten at Ramen Nagi, so I just trusted her choices with a personalized deviation. What I ordered, through my wife's recommendations, was the following: Original King ramen flavor, normal strength of salt, normal richness in oil, normal garlic, chashu pork, green onions for vegetable, #4 for my spiciness, normal thin noodles, tamago (egg), and for appetizers, chicken karaage and gyoza. I felt rushed to pick my selections. For my spice level, #4 made me sweat, so be cautious when choosing spiciness unless you can handle a lot of spice. I really enjoyed the taste of the broth and the components I chose, but the chashu was not as tender as I would have liked. The ramen was a satisfying bowl that I consumed delightfully. Make sure to order both the chicken karaage and gyoza. The karaage was succulent, tasty, and would have eaten well with white rice. The gyoza was unique as it came out not looking like the dumplings I'm accustomed to. It came out flat and covered in a crunchy texture. That too was memorable and yummy. My family and I had quality time enjoying The Dog Stars and dining at Ramen Nagi. I understand now why my family recommended eating here and now I recommend everyone try out this delish ramen restaurant.

We went with the black garlic ramen (that…read moretonkotsu mayu broth is no joke with that deep, rich, and almost squid ink from the burnt garlic oil) topped with a perfectly jammy soft-boiled egg, tender chashu, wood ear mushroom, scallions, and crispy garlic bits. The broth had that long-simmered pork bone depth without being overly heavy, and the garlic oil gave it a smoky, almost umami-bomb finish plus a touch of seafood with that 燻 and 鮮. We also grabbed an extra chashu plate on the side which melts in our mouth, lightly charred at the edges. The space has a fun, energetic izakaya vibe exposed brick, big fabric noren banners hanging from the ceiling (the "Universal Noodle Creator" branding is a nice touch), and an open kitchen where you can watch the cooks in action. It gets loud and communal, which made for a lively date night rather than a quiet one good to know going in. Service was quick, water and shichimi/pepper grinders were on the table, and the seating (bench-style, close quarters) has the casual ramen-shop energy. It's just missing Naruto walking into this shop. If you like bold, funky, garlicky tonkotsu broths, this is a must-try. Will be back for the other flavors on the wall menu.
