I've had my Global knives for about 20 years and sharpened them myself using a whetstone. This, however, will only work whilst there is an edge left on the knife itself so I needed some professional help to get my knives back to their awesome original state! Phil is a absolute professional and a very nice guy! His main business appears to be around sharpening hair dressers' scissors, which is of course a delicate and important job, but I can tell you his ability to sharpen knives is second to none. I took my knives home, which were presented back to me on a piece of card with care instructions, a Band-aid(much needed in my case) and a warning that the knives were very sharp indeed! I sliced some tomatoes, my best test of sharpness, and it was like cutting through butter. No more squashed produce, only neatly sliced food! One of my knives looked a lot like a shark's mouth, teeth everywhere :), having many nicks taken out of it from continued usage. Phil took the blade back a few millimeters and created a new edge. I have a very nice pair of Henckel scissors I have used for many years and over time it has become dull. Silly as I was, I tried to sharpen them using an electric knife sharpener, thinking they were same as knives... soon did I find out I messed them up really bad. Phil was very easy to get in touch with and I told him the story with the scissors. He assured me not to worry and that he would work on them instantly while I wait, and that it would take him around 20 minutes. Phil restored the scissors to its original sharpness, and it could cut a wet paper towel, as he said it.
