I've had one of those 'life-changing purchase' moments, and it involves a knife. Yes, a knife. Who would've thought? For years, I was content with my trusty HomeGoods knife set. They were cheap, got the job done, but let's just say they weren't exactly inspiring and that's okay since I don't cook much anyways. However, I am starting to do more meal prepping. My knives were becoming really dull and I looked into getting them sharpened. Will worked his magic on them, and suddenly, chopping vegetables felt like a breeze. It was a game-changer. But then came the real game-changer: Will's custom knife. It's like holding a piece of art in your hand. The moment I touched it, I knew things were about to get serious in the kitchen. As I mentioned, I don't cook, but I've suddenly spent more time practicing with a bag of onions (yes, I'm that dedicated), and the results are incredible. I watch a lot of cooking shows (please watch The Bear if you haven't already) and I feel like I am as capable as those chefs :). This knife has ignited a passion for cooking within me. I'm experimenting with new recipes, eating healthier, and actually enjoying the process. Who knew a sharp piece of steel could be so transformative? I'm officially obsessed.

    2 knives for $20

I don't trust a lot of people with my knives. My knives are expensive and mean a lot to me. I use them at home and also in a professional kitchen. I chose William to sharpen my knives because I saw he had a whetstone and hand sharpens them. I messaged him and he responded right away. I was able to drop off my knives and get them back within the same day! After seeing handiwork, he is a person I definitely trust with my knives and would recommend him to my friends.

Sharp! Sebenza stonewashed finish CPM S35VN steel blade

I was looking for someone locally to sharpen a Zwilling (German) chef knives and my everyday carry Chris Reeves Sebenza (USA). I reached out to William and asked a few questions about his method of sharpening. William told me he uses whetstone for sharpening. He only uses belt sanders for very neglected knives. Through our emails, I can tell he has experience with different types of blade steel and various sharpening techniques. I dropped off my knives on a Saturday and it was ready later that day. Due to my busy schedule, I scheduled pick up in a week. I was very impressed with the results. William did an awesome job. Both the Zwilling and Sebenza were super sharp. I will be back for my other knives to get sharpened. His rates are attractive and turnaround time is excellent. Thanks, Willliam!

Like many of you, I don't want to sharpen my knives. So that's why I went to William Tan. The process was simple - I dropped off my knives and I picked them up once I got a message that they're done. I paid and I was off to go cook again. Wow! My knives can chop through scallions like butter. For $12 a knife, you too can afford getting out the whetstone

Thinning shears with tip ground away. When closed there is no overlap of the blades.

I trusted him with my dog grooming shears. Two of them were ground down beyond repair. My thinning shears no longer overlap at the tip. When I originally picked them up I payed because I needed to go yo my car to cry and collect myself before going back and asking for a refund (which I did get) but now I have $300+ worth of shears I need to replace and the rest I need to find someone who can hopefully fix them. If you look at the pictures you can see the excessive amount of metal removed by his "sharpening" they are all meant to be straight from inner edge to tip and you can see where he got grinder happy with the tips of each pair. The blue handled pair is meant to have a blunt tip for safely grooming dogs faces but you can see that he ground them to a point while also removing enough metal to actually grind away part of the original engraving. Please don't take anything you value here.

Do you do tailor sharpening scissors? Thank you Center Tailor Alterations

Unfortunately, I no longer work on scissors.

Hi William, I have a Ken Onion Eros (VIA CRKT) that won't close all the way. I think maybe some paper may be lodged between the blade and grip. This is my EDC, espcially in a suit. Can you help?

I don't provide services on folding mechanisms, but you can usually clean stuff like that with tweezers or a small pick.

I have 2 knifes that I'd like to have new handles place on them. They are black handles (Wusthoff) and old. Blades are still good but handles are starting to fail. Can you…

Usually $125-$150 depending on materials. You have a choice of epoxy-stabilized wood hybrid or full stabilized wood.

    Do u sharpen scissors?

No, I no longer offer scissor sharpening as a service.

Do they have any experience sharpening Japanese chisel-edge (single bevel) knives?

Yes, I sharpen Japanese single-bevel knives. I also make custom Japanese single-bevel knives.

I had a specialty vegetable cleaver that I needed repaired and sharpened. It had been used by someone to cut something they shouldn't have and there was a nice chunk missing. Today Bixia assisted me and I think she deserves more than the 5 star rating Yelp is providing. Thank you for your friendliness and efficiency Bixia! I went close to noon today and the store had a few couples walking around. The minute I walked inside the store, Bixia greeted me and asked if she could assist. She saw I had a list in my hand and automatically commented me for doing my homework. Took less than 2 minutes plus her expertise on this 2 quart pot I was looking for and she sold me a product! Sad the store didn't carry my item, but it was ordered online and the whole process took a couple minutes. I was overall impressed with Bixia's efficiency. Her colleague at the register was equally friendly even though he just greeted me on my way out. I was just at the Hillsdale location last night and that store is half the size of this Valley Fair location. The shelves were not as organized and poorly lit. No one greeted me at the door. There were only two associates and one manager I later spotted, but the customer service threw me off--you had to walk up to ask for help and later on give you the feeling they are readily available at the door when they act like they are monitoring you...watching you like you'll walk away with something. Ratings were on point about what this location lacked and wished I read the reviews prior to coming in. Take notes Hillsdale, there's a reason Valley Fair has more stars and foot traffic.

Since I was focused only on purchasing a vanity, I tried my best not to look at all the other products they carry, such as floor tiles, wood floors, bathroom tiles, shower fixtures, toilets, mirrors, shower doors, etc. So much to look at!! Richard helped me with my questions. He was knowledgeable and patient. He showed me comparable products around the floor then put my order together. Most items are in stock! That's great!! No need to wait for delivery. What I like about PHD is that I can purchase my products and my contractor can pick them up. I don't have to haul a vanity in my tiny car. Returns have a restocking fee. In fact, she encouraged us to go with what we really wanted, which we truly appreciated. Curt and Lizl both came to our house to take measurements, and Lizl came by multiple times while the cabinets were being installed. She even spoke with our contractor directly to make sure everything was going as planned. That level of involvement and personal attention is hard to find these days. I honestly cannot say enough good things about Lizl, Curt, and the Signature Kitchen team. If we ever do another kitchen, I would definitely go with them again. She took my aesthetics and ideas and skillfully incorporated them into a design that felt deeply "us," while elevating everything in ways I couldn't have achieved on my own. We now have more space, a peninsula where our whole family can eat, all without knocking down walls. This wasn't just a kitchen remodel for us; it was a kitchen that evolved with our family, and one we will enjoy for years to come as we move into the late elementary and junior high seasons of raising our kids. Patty and Kurt put their heart in the heart of the home! Patty said that "it takes a village," and that is exactly what this process felt like: a true village effort, thoughtfully coordinated to bring everything together beautifully. Their attention to detail was outstanding from precise measurements to careful planning, thoughtful execution, and consistent, attentive follow-up with us throughout the project. We always felt cared for, never rushed, and deeply supported in our decisions. Patty and Kurt treated us like partners in the process, not just clients, and their communication was clear, warm, and reassuring from start to finish. Our finished kitchen has exceeded our expectations in both beauty and function, and it brings us joy every single day. We recommend Patty and Kurt without hesitation to anyone looking for experts in cabinet and kitchen design, genuinely care about their clients, and bring caliber and reliability to a renovation.
