I didn't have high hopes for a pho restaurant off of 16th Street and unfortunately my worries were proven to be true. First off, the restaurant is located in an interesting place. Once you see the sign, walk south of it for a few steps, walk into the door on your left, and you'll see another door to go into the restaurant. The bathroom is located in the hallway prior to entering the restaurant and requires a gross key from the restaurant. The food itself is just ok. The pork egg rolls are tasty but a bit overpriced. The pho was very disappointing. I understand that due to the location and rent price that they have to charge more but the amount of meat was actually funny, the broth was not that tasty, and the noodles did not taste fresh. I am from Houston, Texas where we are known for the plethora of food. If the food isn't up to par, it will not survive. Let's just say that if this restaurant was in Houston, it wouldn't last very long. I am also Vietnamese, so I know what the flavors should taste like, and I was very disappointed in the dishes. Service: Quick and the waitresses were sweet. Price: It seems pricey compared to Houston, but when compared to other restaurants in the surrounding Denver area, it is very reasonable. I'm unfortunately Vietnamese (it's joke, don't worry), so I've had my fair share of pho in Orange County near Little Saigon and grew up with my mom's pho too, so my standards are much higher. First off, the sign says it's in the lobby, but it's next to the stairs down. It's actually around the corner to the right if you're looking into the pit. You enter a business lobby and then the restaurant is right in front of you. No straight up vegan options, so my coworker had to get a veggie banh mi. No milk substitute options aside from half and half for their drinks so RIP to those who are vegan or lactose intolerant. This is definitely catering to a more "western" clientele since I usually don't see fully English Viet restaurant menus unless it's run by non-Viets, Asian Americans, or what I mentioned before. I got their small brisket and rare steak pho. It comes with a decent amount of meat and noodles. Broth is standard, not too oily or too rich. Some slices of meat were a bit chewier than I would have preferred but not awful. I also got a Thai tea which was not bad. I think the qualms were the spring rolls that our table ordered. We got a beef and shrimp one which we thought was already mostly veggies and noodles, but the dipping sauce was way too sweet and not that peanutty than what's preferred and this was even with squirting a bunch of chili sauce in it. Then my other coworker ordered shrimp spring rolls thinking it was going to be similar to the first order, but the shrimp was the small kind soaked in a sweet chili sauce AND was even more lettuce and noodles than the first set. The service was good too. But I wouldn't go back if we are in Denver again. I ordered the vermicelli combo bowl. It was around $20 and a lot of food. But the meat was very thin and overcooked. I've walked past What the Pho for years. Now that I'm working in Downtown Denver, I splurge once a week and allow myself to have lunch at a local restaurant. Worst Pho restaurant I've ever been to. Everything was going fine from seating to ordering until the food came. The server didn't even know which bowl was which or seemed to know the menu. My combination bowl didn't even come with green onions when all the other bowls did. The meatballs also were hard Ans really tough to eat. We noticed that we were missing our bean sprouts, mint, and lime and the server gave us the most passive aggressive and rude "it's coming" when we asked for it. The table next to us was also experiencing the same thing. Finally, our combination vermicelli bowl also took a very long time to come out, and it wasn't until someone who seemed like the owner came to check on us that the order finally came. Initial service was good, we chose our own seats and server came by with menus right away. He appears knowledgeable of the items and we decided to order a Grilled pork vermicelli bowl, kid's shrimp soup noodle (pho) with side of fried eggs and a salted lemonade drink. The next few moments made me regretted staying. First, customization is criticized in Vietnamese (loudly); please just say it's not allowed or keep it to yourself. Second, each item that came out was very sweet, lots of sugar. Even the salted lemonade was mostly sugar and barely a scent of salted lemon. Side of fried eggs was oily. There is a generous portion of cream cheese, and the dough was good quality. I felt like the. Pho was a little bit, lacking in flavor and had almost no tofu. I still ate it, but I don't think I would order it again. I did get the medium size and I was surprised by how huge the portion was.
