I am from Houston, Texas where we are known for the plethora of food. If the food isn't up to par, it will not survive. Let's just say that if this restaurant was in Houston, it wouldn't last very long. I am also Vietnamese, so I know what the flavors should taste like, and I was very disappointed in the dishes. Service: Quick and the waitresses were sweet. Price: It seems pricey compared to Houston, but when compared to other restaurants in the surrounding Denver area, it is very reasonable. Also, the portions are huge with a lot of meat. Thus, the price point is justified. Grilled chicken salad: I was pleased to know that they offered this because I've never seen this offered. I'm unfortunately Vietnamese (it's joke, don't worry), so I've had my fair share of pho in Orange County near Little Saigon and grew up with my mom's pho too, so my standards are much higher. First off, the sign says it's in the lobby, but it's next to the stairs down. It's actually around the corner to the right if you're looking into the pit. You enter a business lobby and then the restaurant is right in front of you. No straight up vegan options, so my coworker had to get a veggie banh mi. No milk substitute options aside from half and half for their drinks so RIP to those who are vegan or lactose intolerant. This is definitely catering to a more "western" clientele since I usually don't see fully English Viet restaurant menus unless it's run by non-Viets, Asian Americans, or what I mentioned before. I got their small brisket and rare steak pho. It comes with a decent amount of meat and noodles. Broth is standard, not too oily or too rich. Some slices of meat were a bit chewier than I would have preferred but not awful. I also got a Thai tea which was not bad. I think the qualms were the spring rolls that our table ordered. We got a beef and shrimp one which we thought was already mostly veggies and noodles, but the dipping sauce was way too sweet and not that peanutty than what's preferred and this was even with squirting a bunch of chili sauce in it. Then my other coworker ordered shrimp spring rolls thinking it was going to be similar to the first order, but the shrimp was the small kind soaked in a sweet chili sauce AND was even more lettuce and noodles than the first set. Couldn't finish our order for that. Altogether, my small pho and Thai tea was around $25. Located in an awesome place downtown, right off 16th and Champa, this place is down the street from my workplace. The inner decor is cute and I'd definitely enjoy a drink here. I came in on a Wednesday at lunch and it was pretty empty. The food came out pretty quickly, but the broth was a little on the saltier side, IMO. By the end of the bowl, I felt really bloated. We are from out of town, and I usually don't review places until I've given them a second chance, unless I'm traveling. So the good: the location was easy to access, and the interior was nice. The service was good too. But I wouldn't go back if we are in Denver again. I ordered the vermicelli combo bowl. It was around $20 and a lot of food. But the meat was very thin and overcooked. The beef was like beef jerky. Chewy and tough. My husband ordered the bahn MI and didn't have any complaints. I did really like the egg roll, but that's about it. I've walked past What the Pho for years. Now that I'm working in Downtown Denver, I splurge once a week and allow myself to have lunch at a local restaurant. My "regular", since I've been there a few times now, is a medium P4, which is rare steak and flank pho. The broth is flavorful and of course the portion is generous. The atmosphere during the week is not too loud, since it's mostly business people. But during the holidays, I did see families, tourists, and office parties. My combination bowl didn't even come with green onions when all the other bowls did. The meatballs also were hard Ans really tough to eat. We noticed that we were missing our bean sprouts, mint, and lime and the server gave us the most passive aggressive and rude "it's coming" when we asked for it. The table next to us was also experiencing the same thing. Ordered the medium combination beef pho with rare steak brisket, flank, meatball and tripe and the grilled beef spring rolls. The soup for the pho was not salty, but flavorful and umami, The noodles were bouncy and chewy. The portion was large, so glad I ordered the medium instead of large. The meat in the grilled beef spring rolls were tender and smoky, particularly tasty with the dipping peanut sauce. Despite having the indistinct entrance on the Champa side, the restaurant was busy during lunch hours. Initial service was good, we chose our own seats and server came by with menus right away. He appears knowledgeable of the items and we decided to order a Grilled pork vermicelli bowl, kid's shrimp soup noodle (pho) with side of fried eggs and a salted lemonade drink. The next few moments made me regretted staying. First, customization is criticized in Vietnamese (loudly); please just say it's not allowed or keep it to yourself. Second, each item that came out was very sweet, lots of sugar. Even the salted lemonade was mostly sugar and barely a scent of salted lemon. Side of fried eggs was oily. I ordered the crab cheese, wonton, and vegetarian tofu pho. Had the fried rice. I would give the wontons 10 out of 10, I really enjoyed everything about them. There is a generous portion of cream cheese, and the dough was good quality. I felt like the. Pho was a little bit, lacking in flavor and had almost no tofu. I still ate it, but I don't think I would order it again. I did get the medium size and I was surprised by how huge the portion was. Let me just start off by saying there are constantly dirty tables with a long line outside and no one seems to care for cleaning the tables to make room for people. When we were finally sat down, no plates or utensils were given. Someone came to take our order and we waited 20 minutes for the wrong food to come out with no drinks. I understand they were short staffed but our table was missing water and add-ons for our pho. The Vietnamese coffee was a powder mixture which is a no no.
