My partner got chicken pho this time around and it was incredibly underwhelming. The chicken was dry and the broth tasted like water. The salad rolls were fresh and the rice paper was incredibly soft and ste cut but the peanut sauce was off, it was watery and tasted sort of like pineapple? The seating process is quite odd as they have numerous signs stating please wait to be seated but the workers will go on with what they're doing without giving any sort of direction till they finally say seat yourself. We were in town for a music festival and this pho spot was the closest to our hotel. This shop was a little small had plenty of seating for our party size of 7. I understand they were short staffed but our table was missing water and add-ons for our pho. The Vietnamese coffee was a powder mixture which is a no no. While visiting Denver, had to try their local pho. What the pho appeared the closest to walk from the hotel. I ordered per their website which was easy and quick. Pick up was also smooth. Seemed that their restaurant is quite busy at time of pick up. Only dine in area and cafe like feel in ambiance. The pho chay had serious spice to their broth and seemed rather oily but i figured that it was how they imparted flavor into this vegetable soup. I am obsessed with this spot. Had a really authentic feel and the food was great. There were three of us and we got quite the spread. Gyoza and chicken pho were my fav but I can be basic in these situations!! This was our fav place in this area of Denver and I think they said it was on DDD? Makes sense. They were having air conditioning issues when we were there but not a reason to stay away, assuming this was a temporary issue. Service was okay but more from a communication side of things and honestly just further added to the authenticity of the experience lol. Then on to dessert - the boba smoothies. So so so good. Located in the middle of downtown, What the Pho seemed promising since it has so many good reviews. However, my recent unfortunate experience there means I won't be returning. To start with service was very slow from the moment my friend and I walked in. From getting seated, to ordering, to even paying the check we had to wait minutes until we could finally waive down a server. When we were finally able to order, I ordered the Veggie Vermicelli Bowl and told the server to exclude the peanuts, since I have a peanut allergy. He then said that dish doesn't have peanuts, but I pointed out to him that the menu says it does... Once I get my dish, and I start eating, I realize that something definitely is peanut-y since my mouth started to itch. I flagged down a waitress and let her know that something isn't right, and she just gave some excuses about the green onions were fried in peanut oil and didn't even really apologize. They did change out my dish at no charge and let me order a pho instead, so I appreciate that. All around, the staff needs to be more informed about the food they are serving and be more attentive to customers, especially ones with allergies! We are in town and it just started snowing, so we were thinking that pho sounded delicious!! We had 2 bowls and some spring rolls delivered to our hotel and we'd selected to have utensils included in the bag since we are staying in a hotel. Unfortunately, only one set of utensils was included and we didn't have any type of disposable bowl or anything to eat the pho in, so we had to borrow from our hotel. The flavor of the pho was really nice and the spring rolls were delicious (peanut sauce was delicious!). So I would order again, but wish they had a way to include some easier way to eat it especially seeing that it's for delivery to a hotel (likely a guest who wouldn't have any dishes). read more

Honestly I came here with no expectation because it's inside some mall and I'm not from Denver and I'm not sure what kind of Asian food Denver is known for. I absolutely love Vietnamese food so I was very hesitant but to my surprise the pho was pretty good. The location is on the small side, so you may have to wait for a table if they are busy. There is no outside seating. The employees are friendly, and the food comes out VERY fast. I got the medium bowl with brisket, and it was very good. I could not finish it, despite it being very tasty. We also got the appetizer sample. The crab wontons were very good. The dumplings were very different from what I've become used to - they were very thick and needed some kind of dipping sauce. I am always down for some delicious Vietnamese food, and What the Pho drew me in with it's hilarious name and food! We arrived on a Wednesday at around 6:15pm and were seated promptly. I got the combination vermicelli bowl, which included a variety of delicious ingredients from crispy egg rolls to barbecue shrimp and pork - also came with a sweet fish sauce and chili dipping sauce on the side. This bowl was definitely refreshing given how the setup of the bowl gives allows for you to flip flop between rich and filling ingredients such as the egg roll and meat to the pickled vegetables like the carrots, radishes, beansprouts, and cucumber. The egg roll had good porky flavor and the outer shell was really nice and crispy, and the meats were seasoned well and had a good strong Vietnamese barbecue flavor. There also was a good amount of noodles in the bowl, and soak up the sweet fish sauce on the side (if you so choose to pour some over the noodles, which I did). A delicious and refreshing bowl of noodles! Overall, the experience was about $16 for the bowl of noodles, and the experience was good given the price. One of my favorite spots in Denver! And not just for its clever name. My friend and I came here late one night after dance class, and the restaurant was poppin'. It has more of a modern, upbeat vibe than the traditional pho place. Service is quick and friendly. Street parking wasn't too bad, either. My friend ordered egg rolls for the table, and we both had a beer. Great way to wait for our pho, which didn't take long to arrive. The broth was delicious, and like all good pho, there were perfect proportions of noodles to meat. It really was the environment that set this place apart. Because they didn't rush us out, we eventually realized that we were the last ones to leave. Admist the pandemic, I kinda miss the feeling of closing down a restaurant or bar. I rate this place a 6/10 and my fiance 7.5/10. The broth was truly underwhelming and I felt a lil yucky after and it wasn't seasoned at all just chopped chicken in a soup. The service was truly great on a positive note. I also enjoyed the lemonade and the firecracker shrimp WAS BOMB! The crab rangoons were a bit too cream cheesy like 3:1 cream cheese to crab ratio . It took forever to get served, the booths were gross with bits of food in the seats and on the floor. The bottles of sauce looked like they hadn't been cleaned in a while. I came here twice on my 3 day trip because I needed something to fill my belly after a day of drinking. Then I came back because I needed something to fill my belly from a night of drinking. I had the combination pho which was really good. The steak was very tender and the broth was good. I also got a shrimp and pork spring roll which I didn't really care for. The roll was huge but they packed it with a lot of bean sprouts. I wasn't used to that much crunch in a spring roll. The best thing about this place is the service.
