My sister and I initially came here to get some pho, but it was actually a warm day so we switched up and got rice plates. We were seated almost immediately during a busy lunchtime. Best to order based on the letter and number - it's the easiest. Really nice portions! I got the beef plate and she got the pork. We don't eat a lot of rice, but everything else was delicious! What REALLY sets this place above the rest ...is their boba. Oh my sweet whistling biscuits...I can honestly say, I have had the avocado boba at many places....Coming from the San Francisco Bay Area...there is a boba place on nearly very corner. This place, HANDS DOWN, had the BEST avocado boba drink that I have EVER had. There is a magical sweetener or something tropical/sweet that they put in it that is just DELICIOUS!! My intent was then to come back and get this other boba drink..called the Four Seasons, I think. It has mango, passion fruit, pineapple...and something else...but our plans changed and instead we did come back and got 2 of their "What the Pho?" T shirts - which were too entertaining to pass up! I'm a big fan of Vienamese noodles PHO so I had a high expectation about their food. We ordered rare steak and flank PHO and brisket PHO. I wish their broth had a deeper flavor and taste. I did not taste any MSG but at the same time, I wasn't impressed 100 percent. Also, it would have been better if their plates for the vegetables were bigger. It seemed a little too small amount for 2 people and the plate was too small veggies were falling off. But their veggies are definitely fresh. I've been visiting What The Pho on Champa since it opened, and previously gave them 5 stars, but after the service I received last month from their newest servers, I don't think I can ever come back. Our initial server was friendly, and after taking our orders, came back out and asked us to repeat them again. A new server, a younger woman, came out not too long after and gave me and my girlfriend brisket pho, but unfortunately, I asked for a large chicken, with extra noodles, and extra chicken. When I pointed this out, they took my bowl back and returned with the same brisket pho but with some pieces of chicken sprinkled on top. They said "you can have the brisket." I told them I wanted the chicken pho I ordered and the young woman took my bowl with a scowl, and brought out a bowl of chicken pho, with some fried onions sprinkled on top (which is a bit concerning for someone that chooses pho to avoid any possible gluten contamination). I tried eating what was served, but then I ended up seeing there were pieces of brisket in the bottom of the bowl, which leads any reasonable person to believe they gave me the same exact bowl and sprinkled onions on top to make it appear new. That was the final straw and I had to just ask for my check and accept that if I couldn't get what I ordered after multiple attempts, I should just leave. I don't know if it's new management, but the short-term, cheap, and rude approach to a wrong order being served leads me to believe I'll have to refrain from coming, despite my previous positive experiences. read more

this place is kind of hidden away in a building, so definitely a whole in the wall and it is delicious i've come across this place a couple of times and most recently after the denver christmas parade. after this occasion it made the smaller restaurant packed but normally its fairly easy to find a table. it's not too loud and great for causal dates and once again the food is amazing and portions are very generous for whoever has a big appetite or leftover lover ! prices are great ! if it is packed service may be slow but a great restaurant for the normal day meal or to try out Vietnamese food if you're new these noodle bowls and rice plates really do hit the SOUL and are sure to make you feel better when you're under the weather and just wanting some yummy broth :) read more

I am a big Pho lover, ordered summer roll appetizers and the seafood pho dish. Summer roll had hard parts of the rice paper and the flavor was just not there. Vegetables that came out for the Pho o refused to use as they look like they had been sitting for a while and were old. Delicious, fast and inexpensive. What the Pho is one of my regular restaurants (about once a week) since I moved to Denver. The Pho is excellent: hot, juicy, and comes out within seconds (I'm not kidding). The family who owns it takes the quality seriously; the one or two times that something wasn't perfect, they switched it out immediately. Their drinks are equally good; I'm a huge fan of the Thai iced tea and I say that having gotten a lot of them in a lot of different restaurants. They know what they're doing here. I spoke with the owner and they cook their broths overnight! That explains it.. it's all about the broth!
