I don't remember the name of what we ordered but it came with eggs and basically mashed potatoes. It was unique, and the flavor was so unique and delightful. I will know that it is quite a bit of way outside of Albuquerque, but a very pretty drive. They also have a little shop of some local goods, definitely worth checking out.

Most food trucks are your basic taco/burrito places but this one has a sandwich/barbecue menu. I had the Southwest Ruben, one of the best I've had. The wife had the grilled cheese, also well done! Both came with home made tortilla chips and queso. Sounded odd thinking they should have been offered with potato chips or fries but the tortilla chips were hot, just out of the fryer and awesome. The special was Armadillo eggs, a kind of a jalapeño popper on steroids. wrapped in sausage and bacon then smoked on site. They were spectacular!!
