Wire Mill BBQ is hands down the best barbecue around. Everything about this place is done right, from the food to the service. We recently ordered the takeout family feast for 5-7 people, and it was a huge hit, everyone couldn't stop talking about how good it was. The chicken in particular was outstanding, packed with flavor and incredibly tender and juicy. Their BBQ sauces are another highlight. There is a great variety, and each one adds something different to the meal, especially with the pulled pork, they go great with it. We also ordered the smoked wings, which were amazing, great smoke flavor, perfectly cooked, and just all around top tier. On top of the food, the staff is very friendly and clearly goes out of their way to make sure you have a great experience. Highly recommend, this place does BBQ right. read more

Amazing food. We tried the pulled pork, ribs and the brisket. Just perfect. The sides were very good as well especially the Mac and cheese. After we ate we went in the back of the building to admire the smokers. It is the real deal. The cook was very nice and showed us all the meats he was preparing for dinner. Incredibly disgusting. We paid 45 dollars for a single pound of brisket. What we got instead was well over 50 percent solid fat. I am not exaggerating and I will attach a picture as proof. That makes the meat about $90 a pound by my math. I've eaten BBQ all my life. I own TWO smokers. I know what is normal. I know all brisket has some fat. This was the nastiest brisket I've ever been served. They could have trimmed this meat and put it aside for other brisket dishes like their brisket chili, brisket sandwiches, brisket sliders, brisket burgers, etc. But no. Somebody who works in the kitchen at the Wire Mill sliced this meat, looked at it, and said "Eh, good enough for our customers". Shame on them. On the bright side, HooDoo Brown BBQ is right up the street. read more

What a hidden gem! Wire Mill BBQ Saloon is tucked in downtown Georgetown, CT and definitely worth a detour. The inside has a cozy feel with all the hardwood and embraces the western style decor. There is also a string lit outdoor patio which is perfect for a nice evening. The service could not have been better - super kind and attentive staff. Now for the food... The BBQ Fries are a must. Just get them. They are hand cut fries with slow smoked and dry rubbed pulled pork covered in melted cheddar cheese. The ratio of everything was perfect as every bite, you could get a little of everything even by the end. The portion sizes of the platters were giant as well. We tried the smoked sausage which had a nice crispy outside and the pulled chicken which was moist and flavorful. They offer a variety of homemade bbq sauces - my favorite being the chipotle bbq. The vibe is super rustic, and you can actually see the smoker through the window--which is always a good sign. It's family-owned, which we love, and the service was seriously great--everyone was super friendly and on top of things. Food-wise, it was a bit of a mixed bag. The ribs were the clear winner: super flavorful, perfectly smoked, and just the right amount of meat on the bone. Easily an 8.5/10. The brisket? Not bad at all--just didn't blow us away. I arrived with a few friends on a Saturday afternoon around 4:30. There was plenty of outside seating. We sat and were greeted right away and told the specials but not told that there would be upcharges for some of them. We ordered and she wrote everything down. The drinks came out right away. We ordered fried pickles as an app and they were some of the best we all had ever had perfectly crispy and not greasy at all. The chipotle dipping sauce perfectly complimented them. My friend ordered the beef rib special and was told he could just order those and not part of the 2 meat platter which he said was fine but no mention of how much it cost. Our entrees arrived a few minutes letter. I had the two meat platter with brisket, smoked sausage, street corn and pepper mac and cheese. The mac and cheese was a bit dry and appeared like it was reheated and just cheese sprinkled on top not gooey and hot. The smoked sausage was the star of the show absolutely delicious. The brisket was also a bit dry and came with a horseradish sauce that complimented it. The street corn was good but not worth $8 for a side. My friend had the beef ribs which were HUGE and perfectly cooked. My other friend had the brisket plate with fries and they were super crispy fries we all loved. The cornbread was also VERY dry and could have used some kind of butter with it. For a BBQ place the meats didn't stand out to us. We received the check and had a bit of sticker shock. My friend had no idea the beef ribs were $50 which was fine but we were not told the price when told about the specials. I think for the size of the sides $8 is a lot as they were small for what they were. A band started playing outside as we were leaving which was nice and a lot of people arrived which if you don't like noise may bother you. I give 4 stars since the service was good but the food could use some slight improvements. read more

Hadn't been here in quite some time but since we were in the neighborhood, we figured let's go back for old-time sake, since it was such a regular staple for us. They had two sandwich specials going on that seemed intriguing, but I was looking for the smoked turkey which wasn't on the specials menu this weekend. I opted for two meat dish of brisket and a quarter rack of ribs with sides, being pepper mac & cheese and baked beans, the better half went for half rack of ribs with a salad and beans. The meats were exquisite, tender, nicely, flavored, and well smoked. In terms of fat contents, the meats were pretty lean, but extremely moist. We really enjoyed the proteins. The baked beans had slightly changed, and they didn't quite have the zest that they used to have, and the mac & cheese could've been much creamier and have more of a zip to it, especially since they were the pepper jack mac & cheese, as opposed to the plain mac & cheese. The salad was a nice big size salad with beautiful greens as opposed to generic iceberg lettuce. We also ordered one of those seasonal draft beers, which is really good and cold. nearly no change to my 2015 rating, portions of the rating are 5, some 3, some 2, overall 3. Had lunch outside today. I recommend it. Food is 3 star. The beef brisket is more like a steak, you have to cut it to eat it. It's good but nothing to write home about. The ribs are good, better than ok, but again not outstanding. So the food merits a 3. Sauces are very good, outdoor eating is fantastic and imho the best feature of the restaurant, although inside is terrific as well and the bar is very inviting. So on ambiance give it a 5 star. If you want to have a regular bar in the neighborhood Wire Mill would be my choice. Prices a bit high (for lunch) and the portions a bit small, I left a little hungry (again June 2023), maybe they want you to leave room for desert ? To be fair I did not eat most of the sauerkraut, and the few chips they serve are good, but not filling. Had to eat again when I got home from lunch. (FYI: I'm a medium build, medium height guy. Order a lot if you are taller/bigger) I'd recommend they swap the 'Kraut for fries. Or they should recommend a salad and a side with a sandwhich. But this would make it an expensive lunch. Maybe it should be given the venue is outstanding. Overall, didn't hate it, didn't love it so no particular reason to return unless its a gorgeous day and you want to eat outdoors. We have been stopping here on the way from the shore to my folks house heading towards 84. My mom and family really like it when I bring take-out from here. The mac and cheese and beans with rice and more, with fried pickles a favorite! These sides go great with the brisket, pork shoulder and chicken, yes simple chicken is awesome, its all good. In fact, my one nit is more corn bread please, its very delicious!! What really sells me on coming back is the service! Always friendly helpful on the phone and when I go in to get the take-out. Had a great lunch at the Wire Mill. A friend recommended the Monster, a brisket sandwich which was incredibly tender and piled high. The bun it's served on was a large hamburger bun which took away from the whole. A hard roll or a brioche one would have complemented it better. The horseradish sauce that came on the side was excellent and with some of the honey sauce was perfect. I put the honey sauce on the coleslaw since I like some sweetness to it. Great BBQ for CT. Very cute spot in Redding and easy to get to. They can quickly run out if BBQ so make sure you're there early on a busy night. The BBQ fries were AMAZING! Fries are crispy and cheese is melted with the nice smoked pork. The Fat Jackson is the best sandwich on the menu. We tried it with brisket and pulled pork and it's amazing with either protein. We also tried the stew and it was a nice surprise especially on a cold evening. While the okra could have a bit more breading, it was a nice side to our sandwiches. The ambience is reminiscent of being down south especially with the service. You would forget you're in CT and thought you had transported to a local southern joint in TN. By the time my entree came I was super full so I just did a sampling and saved the rest for next day meals. My entree was the combination platter which was 2 meat choices with 2 sides. Few places are able to duplicate the same quality day in and day out. You can. feel the love Gino puts into the barbecue and the establishment. In fact go tell him how much you like it: he's usually out back and outside working the barbecue grills & smokers.
