When you're not eating out so you can write fabulous review on Yelp, you're probably whipping something fantastic up in the kitchen. But horrors! Are your knives so dull they'll hardly dice an onion, much less shave thin slices off a tomato? If so, you need to meet Woody, pronto. He'll lovingly fix up your knives using the Bob Kramer (official American knife god) method, and he'll give you a really thorough lesson in how to maintain those lovely edges once they're restored - one that actually is practical and does not refer to magical angles you'll never achieve. You will go home and find things to chop up even if you did eat dinner out somewhere, because he'll have you totally excited about knives. He works at the Oregon Culinary Institute, is a wonderful guy, and seriously, what he does to your sorry old knives will make you sad you didn't meet him sooner. He is mobile, so if you have enough knives to be whipped back into shape, he will come to you in the Portland metro area, or he does in-store shindigs at Kitchen Kaboodle sometimes on weekends, or you can go visit him at OCI. This is the second year I have had Woody sharpen my knives. Great sharpening, quick turn-around (I drop off at OCI and pick up the next day), and reasonable prices (you could pay this much for sharpening on a rotary grinder at the farmers market). Knives loose their edge slowly, so you may not even realize how poorly yours now cut. If you haven't sharpened your knives in over a year (or ever), you should give Zen Blades a try. read more

I just took my knives into Kitchen Kaboodle to get sharpened the weekend before Thanksgiving, as Zen Blades was on site on that day. I am dissappointed in the results. After a professional sharpening, my paring knive, for example, should be able to cut through a soft, very ripe tomato like a hot knife going through butter, but instead I have to use a sawing motion to cut, and the tomato gets squished because of it. I have had my blades sharpened long ago by both Orchard Supply and Excalibur when they were in business at Washington Square Mall, and got razor sharp edges on all of my knifes. Will not be using Zen Blades again. read more

Shot him an email on a Saturday and by Tuesday my knife was as sharp as a razor. I work downtown so it was convenient to drop it off and pick up at at the Oregon Culinary Institute. Woody Bailey is a knife sharpening magician! They don't come any better than him IMO. He took a knife that I was embarrassed to show him in it's current state and made it not only sharp but beautiful again. Now it looks so great I almost don't want to use it! I live in Portland so it was more convenient to drop it off at OCI but it's nice that there are options. He is pleasant and knows his stuff and the prices are more than reasonable. I would never take knives that matter to me to anyone else. read more
