I don't know what they are called on the menu, I just know what they are lol. Ramen is also subjective and I've had my share. Kyushu is just very very solid. It comes out fast and most importantly, the perfect temp. I've been to some ramen places that bring out a bowl of lava ramen served with a side of skin graft. The corn at the bottom is still fresh with a crunch to it. The Black a garlic just has such a depth to the broth. The egg is always perfect and the pork just melts. The spring rolls were super crispy and I really liked the spicy mayo dipping sauce. I love anything that resembles a Bao bun. I especially appreciate the chili oil and spicy seasonings at each table.
