It's a women owned business that pays a living wage, provides healthcare, and contributes to a retirement account for the employees. Who does that!? ( The answer is Nicole the Owner who is awesome). The food is consistently delicious. The standouts for me are the seasonal salads, the chicken tinga tostada, the chilaquiles, and, of course, the fried chicken and waffles. The location is good with ample street parking and what looks to be a customer parking lot (I haven't confirmed). Fabrice did a nice job in selecting a historic Vallejo spot and bringing in French vibes. The coffee bar wall and mirror definitely looks like an original 1900's piece. The wood tables inside and the bistro chairs outside keep the modern cafe feel with a Parisian vibe. I'll definitely come back.
