My parents, in fact, owned the very first Filipino store with a Filipino bakery in National City. Their former baker now operates several bakeries across the United States. As such, I am quite familiar with discerning between a dry ensaymada and one that is delightfully fresh. Two of the three ensaymadas I sampled were wonderfully soft and fluffy. The third was acceptable, though it was noticeably drier than the other two. I appreciated the distinct flavors, and I will certainly keep The Ensaymada Project in mind for future potlucks.
