It turns out that Vintage Cheese crafts most of their offerings from goat or sheep milk / very little from cow's milk. Fingers crossed, the Manchego I bought will work out for my system. They also offer a wide array of meats and other additions to create you own amazing charcuterie board. I picked up a mild salami, a box of gourmet crackers, a bag of garlic-spiced cashews, and a package of vegan fig salami. Mind blown! Who knew there was such a thing? Not me, until yesterday. Can't wait to get back home and set up a plate of all this deliciousness, adding some fresh grapes and cherries to the mix. The young man who helped me explore their merch was very informative and took pride in his explanations. I bought more than intended because of him bringing to light their unique offerings.
