I opted to replace the tank and bring it up to code but held off on the tankless option. He came prepared with a high quality heater in the truck with everything he needed so he did the work right then and about two hours later he was done and we had hot water again. I knew what the core problem was and that the drain was physically blocked some distance from the sink itself, and I realized that I couldn't fix it myself. We chatted and he asked me to text our exact address (which I did) and he texted back that he had a couple of jobs near us but that he thought he could be with by 7pm.
