We started with the smoked arctic char which came with gluten free (gf) seed crackers and roe. The char was extremely flakey and fall apart tender. Everyone's entrees came out shortly after and we had zero complaints other than the risotto being too salty. The staff graciously offered to rectify straight away by remaking, offering another dish, etc. Stand out would be the veal tenderloin which was tightly wrapped in prosciutto and came with seasonal veggies. Service is outstanding and thoughtful from start to finish. Examples include pulling out the chair for me to sit, offering to make dishes gf where possible due to my allergy, consistently refilling drinks, clearing table between appetizers and main course and bringing fresh cutlery/plates. For the wine connoisseurs, they have an extensive wine menu (basically a book honestly) and even have a sommelier on premise.

I did like the venison better because the pork did get a bit dry at parts because of how large the cut was beef tartare- really well done and an excellent starter bolognese- pretty good as well caesar salad- excellent presentation, but it did get a bit salty dessert- they had a raspberry mousse dessert and a chocolate peanut butter bar. both were excellent, but I really liked the raspberry dessert because of how balanced it was Service- 5 stars Food came out quickly and the servers and bartenders were really attentive. Bottom Line Excellent Italian restaurant at the Montage. Dinner was fantastic, but docked half a star because of how salty some of the dishes were. Breakfast was pretty good, but it can be a hit or miss on service depending on how busy they are

Since we couldn't guarantee our flight into BZN would arrive on time and we'd make it to a reservation, we called in advanced and were told that seats *could* be available at the bar. Recommendation: BOOK your reservation in advance and DO all that you can to make it. We arrived and were on the waitlist til a reservation holder called to cancel. We won a culinary lottery that evening -- and saw a rainbow during our after dinner stroll. The menu is Roman and a diamond in the rough. Don't confuse this cuisine with Italian. Before this trip, we eagerly anticipated the freshly caught trout. My husband was thankful for his Campione experience before ordering it from other restaurants on our trip. The pan-seared fish was richly paired with capers and parsley, funghi, leeks, and pickled fennel greens. (I almost ordered it but like a good Roman soldier, I divided to conquer the menu.) The manicotti was far from conventional. The flavorful, delicate oxtail and broth were unlike any heavy tomato-based sauce. This was simply stellar, and an ideal way to warm my belly on a rainy day. While Campione does not readily serve a chef tasting menu, each dish fully engages the senses. Rarely do I take photos when dining out; this dinner was an exception. Plating is colorful and the layers are visually engaging... but delay the gratification of the first bite especially if you order the smoked cauliflower: waft first. Started the meal with roasted cauliflower and fritto misto. The cauliflower was really good, cooked perfect with the right amount of seasoning. The fritto misto was a fired trio of catfish, shrimp and calamari. It was fried in cornmeal, which was pretty good though it got a little gritty at the end. I had the scallops for the main. Enjoyable meal. It could have used a little more sear and the the cook was very slightly under. The seasoning was great. Keegan was our server and she was great. She loves her job and it shows to the way she interacts with her customers.

The pizza was very good, but the sauce was a little sour and in general it was a little saltier than we would have preferred. The crust was very nicely done. Service was friendly and efficient. Prices were about what you'd expect in a tourist town. A decent experience overall.
