It's easy to see the care in each product sourced and sold by Flora. They had some of my local favorite brands like Amelia's Bread, Tinker Coffee, Blue Mind Roasters, Circle's Ice Cream, Native Bread, and many more. They had a great range of products everything from local produce (some grown by hand by the owner!) to nut butters and eco-friendly household cleaners. I love their vegan and gluten free options that are inclusive to those with dietary restrictions or preferences. Jessee, the owner, was so personable and welcoming. She shared a little about her vision of the space with me and reasoning for opening the store. It was clear she loves the neighborhood and the work that she's doing. The nice woman behind the counter helped me choose (they were buy one, get one free)! So I chose one egg and cheese, and one spinach and cheese. They were warmed in an oven while I went to grab a coffee and use the restroom, which was very clean and well-stocked. Pro tip: if you want a latte or another specialty coffee, order at the counter. If you want to make your own, go to the coffee bar. It's less expensive, plus they have a variety of sweeteners, Torani syrups, and assorted creamers (including plant-based). The cash register employee let me know when they were ready to go, and my grand total was less than $6. I picked up a few hot sauce packets from the condiment bar and sat down in the dining area to eat. The kolache itself is essentially a small, light sandwich. The bread was soft, with a hint of sweetness. The egg and cheese combo was perfect for my light lunch! The breakfast sandwich came from a warmer, and the croissant had become soft and mushy. The egg was a firm, precooked square, and the bacon was limp. The pepper jam was delicious and easily the best part, but it could not make up for the lack of texture in the rest of the sandwich. The chocolate croissant looked beautiful and had plenty of visible layers, but it was surprisingly dense and breadlike rather than light and flaky. Our cold brew and matcha were both good, although the matcha did not have much flavor despite being freshly whisked. Service was also slow and strangely disengaged, which made ordering feel more awkward than it needed to be. There is a lot to like about the atmosphere and idea behind Borage, but the execution during this visit did not live up to the presentation. He offered no assistance, announced that he needed to go somewhere else in the building "to work on something," and, while walking away, asked someone else to help me. After all that buildup, I was surprised to find only about eight varieties of fudge. At $20 per pound, you'd better hope one of those limited choices sends you over the moon--because the counter service certainly won't.
