We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. (5/5) Proper Meats + Provisions definitely serves some great sandwiches. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6! The meat was smokey and tender and the bread was great. The green chilies went well along with the cactus cream cheese. We also ordered a side of pork chili Verde soup. It was also amazing and very tender and large chunks of soft braised pork. My friends ordered the chicken Po boy and the Philly cheesesteak. Both were also excellent. The chicken Po boy was very good in both the tender chicken meat and breading and also the sauce and everything else. The staff was super nice and this had a deli vibe with casual seating and eating. An excellent place to stop at if you're in Flagstaff.

Gathered around the Forged Charcoal Grill, sipping wine at sunset and enjoying one another's company--there is no better way to show them what they mean to you than a nice dinner. The shop was amazingly clean and offered not only Piedmontese Beef, but organic chicken, duck, and Easter Ham. My girlfriend and I went a little "nutzo koo koo" and picked up steaks, hamburgers, Bacon Fig Kabobs, hand-made sausage, and dried Morel mushrooms. There is even a great selection of seasonings and a dedicated cheese refrigerator to round out the meal. To clear up some confusion from other reviews: this is a legitimate butcher shop, not a restaurant! We watched the butcher bringing out fresh hand-cut steaks, bone-in ribeyes, and even a massive Tomahawk. They also have fresh, never-frozen prepared hamburger patties ready to go. We definitely splurged, and even though we live 2 hours away in Phoenix, the helpful store manager--a friendly Viking with an amazing red beard--gave us an ice pack to keep our provisions perfectly refrigerated for the trek home. The meat was from a special 'Piedmontese' Italian cow grass fed on a Nebraska ranch. We picked up the order right as designated, and the staff was professional and delightful. The cut of meat was absolutely beautiful and slow cooked so easily. There was a bit of unexpected fat, but nothing too out of line with quality, and it was delicious. Everyone loved it As would be expected, it was outrageously expensive but worth the quality. The value was definitely in it. Several relatives in the area didn't know this place and determined to buy meat from here now, as the supermarket quality is nowhere near what these folks provide.

We were seated immediately and our server, a very polite young man( first day as a server) took our drink orders. He came quickly with our drinks and took our order.
