    Sandwiches are REALLY good but definitely on the pricey side. The portions are pretty good and it's cool they use a lot of locally sourced product. My sandwich and drink was about $27, so I'd probably choose another deli over this again.

    This is such a great deli shop with high quality meats. It definitely deserves its James Beard nomination. I had the Aleppo pepper pastrami and it was excellent. The meat was smokey and tender and the bread was great. The green chilies went well along with the cactus cream cheese. We also ordered a side of pork chili Verde soup. It was also amazing and very tender and large chunks of soft braised pork. My friends ordered the chicken Po boy and the Philly cheesesteak. Both were also excellent. The chicken Po boy was very good in both the tender chicken meat and breading and also the sauce and everything else. The staff was super nice and this had a deli vibe with casual seating and eating. An excellent place to stop at if you're in Flagstaff.

    Walking up to this place, you'll probably think you're lost. The sign outside says Grand Canyon Cafe. Your phone says Proper Meats + Provisions. Then you walk inside and suddenly it looks like you've stepped into a butcher shop where people are buying steaks and fresh fish. At this point you're wondering if you're in the right place for lunch. This place may confuse you at the door, but it will completely win you over at the table. Because the moment the food arrives, the confusion disappears and one thing becomes crystal clear. Proper Meats + Provisions understands flavor. They're famous for their ten day pastrami, and now I understand why. This isn't just good pastrami. This is smoky, tender, deeply seasoned meat that practically melts while you're chewing it. It has that perfect crust on the outside and that rich savory depth that tells you someone here takes the craft of curing meat very seriously. These folks know meat. But here's the surprise plot twist. The soup. We ordered the tomato basil thinking it would be a supporting act to the sandwich. Instead it showed up tasting like something that wandered out of a Michelin level kitchen and landed in Flagstaff by accident. Creamy. Velvety. Bright tomato flavor with that perfect basil finish. And then there's the bread. The sourdough tastes like it was born in San Francisco and eventually emigrated east to Flagstaff for the mountain air. The crust has that perfect chew, the inside is airy and tangy, and it holds everything together like it was designed specifically for this sandwich. Halfway through the meal I had one of those moments where the thought just hits you: Great restaurants cook food. Exceptional ones respect ingredients. This place respects them. If you go to Proper Meats + Provisions, the pastrami is the play. Order it the way the chef has it on the menu and you'll be very happy. But if you want to punch things up another notch, swap that pastrami onto a Reuben and take the flavor to another level. And to balance all that smoky richness, add the tomato basil soup. That creamy, luscious bowl of tomato is the perfect contrast and rounds the whole meal out beautifully. So yes, you may walk in confused. The sign says one thing. The space feels like something else. It almost feels like three different ideas sharing the same address. But you'll walk out knowing exactly what just happened. You just had the best sandwich and soup in Flagstaff. Possibly the best in Arizona. Five stars.m

    Housemade pastrami? Corned beef? Porchetta? Yes please! Proper Meats + Provisions seemed like the best place in town to eat a sandwich lunch between NPS site visits around Flagstaff. We popped in on a Monday morning hoping to score some great grub and we certainly found some! Cubano ($20.95) - Starting with the bread - it's really fluffy, not toasted or pressed as with usual cubanos. Unfortunately, it's probably a little too light for the sandwich because some parts get mushy from being soaked in all the dijonnaise. The dijonnaise is very sweet, creamy with a mustardy zing. I think they add a bit too much, making the sandwich more fatty and messy to eat than I like (not to mention what I stated before about it soaking into the bread). The meat is fantastic. Both porchetta and ham are griddled on the flat top, giving them a developed and concentrated edge. The ham is to the point of being like country ham, while the porchetta still has great seasoned porky flavor. I believe they griddle the swiss cheese alongside the meat. It melts and crisps up into a cheese skirt, adding a fantastic texture to the sandwich. There's a lot of crinkle cut pickles underneath the meat, but it's not enough acid to cut through all that fat. Sandwiches come with a side of house chips. They are fried until a darker golden brown color, but aren't burnt. This gives a great kettle chip-like crunch. Even with different sized chips, they are very evenly fried with all chips being the same texture. They are salted the perfect amount. (4/5) Aleppo Pepper Pastrami sub Tomato Soup ($22.75) - This place is famous for their pastrami, and I can tell the quality. It's cooked on the griddle until it develops crisp edges. It's fatty, but the fat is rendered so there are no chewy and leathery parts. The meat is extremely tender and thinly sliced. It's honestly almost like bacon in texture, but the taste is completely different, with the exterior spices and pepper making a huge impact along with the rich concentrated meatiness inside. The bread is a nice toasted sourdough, not strongly sour in flavor, but definitely noticeable. The bottom slice is slathered with plenty of nopales studded cream cheese. It's added in a large amount and is an extremely creamy and fatty substance yet somehow doesn't overwhelm the sandwich. It's warm but not melty. The nopales are clearly there but I didn't find it to contribute much. The pastrami is layered on top of that followed by a ton of sweet brown caramelized onions that are very tender. An entire green chile, roasted and super smoky, is above that. Finally, aleppo mustard is spread on the top slice of bread. Between the green chile and the aleppo, there's a slight warmth that tinges the sandwich. It's nothing too spicy. Instead of chips, we opted to sub the Tomato Soup (no fee). It's very homestyle, full of tomato richness in a thick blend. It has a strong tangy tomato essence. There's basil oil drizzled on top for a boost of freshness. The soup is unfortunately quite a bit too acidic for my tastes, but that's only by itself! While very acidic, the soup is actually great as a balance to the sandwich (along with the pickle of course) since there's so much richness and fat coming in between the bread. (5/5) Proper Meats + Provisions definitely serves some great sandwiches. We were considering visiting again for our 2 full days in Flagstaff, but weren't able to make it because they close so early at 6!     This deli spot is amazing. Their sandwiches were very delicious. Gf and I ordered 2 sandwiches and the loaded fries. The Aleppo pepper pastrami was honestly one of the best pastrami sandwiches I've ever had. Pastrami was nice and tender and very very flavorful. Bread they used was paired perfectly along with the mustard. Would definitely order again. Their muffuletta sandwich was also so amazing. I love focaccia bread and here it perfect airfy and soft, which went well with all the cold cuts and the olive / mayo spread. This sandwiches had the perfect textures and was also super flavorful. Would also order again. The loaded fries were good, but were not our favorite. Nothing too special about the fries but interestingly enough it was similar to like eating chilaquiles. If you like sandwiches and pastrami specifically, this place is definitely worth a shot in trying. Service was great as all the staff were nice and welcoming. Place had a very deli feel to it but at the same time felt like a nice chill casual vibe. We would definitely return if in the area!

    Absolutely delicious. We miss it already. We stumbled in here while walking around the downtown (?) area and pretty much fell in love with the place to the point we almost considered eating here twice during our trip. The cashier was sooo amazing and patient and kind. The food they serve is next level. How good can a sandwich be, you ask? It can be VERY VERY good. We ordered 1 hot and 1 cold sammiches with their shareable, loaded fries. I cant remember what the hot sandwich was but it had the brisket pastrami that i loved. The fries were good but not amazing but the sandwiches themselves 10 out of 5. Chips were meh but honestly, I would be more than happy to eat here again.

    Okay internet, you win- again. I searched top restaurants in Flagstaff and got this James Beard winning sandwich shop. The Pastrami is a legend- made in-house and aged 10-days, there's a reason it's the most popular. Also- I got the tomato basil soup on the side- chefs kiss with the bread dipped in! I like how you can trade out the chips for different sides. Only mistake I made was going for a 1/2 sandwich. I'll be back for a full next go.

    OMG! This hidden gem has the flavors to make your taste buds spin. The chicken Po'boy had amazing flavor and the andouille sausage kicked it over the top . The sauce to an already flavor heavy meal. The A4 Cheesesteak was also crazy good . The flavor of the beef was fantastic and made you want more and more. The fries are seasoned and were tasty enough without anything else. If you are in Flagstaff or just passing through, this is definitely a must stop to eat!

    Found this hole I. The wall while searching Yelp for a good sandwich place in Flagstaff. The pastrami was highly rated so my husband and I decided on splitting one between the two of us. Prices are not cheap, but the cost was well worth it! Our order was placed at the deli counter and then brought out to us where we sat with our dog. We got lucky because they only have two small tables out along the sidewalk and one was available when we got there... Yay!!! Anyway, let's get to the food and it's amazing taste! The pastrami was fantastic and there was plenty in each half. It was very lean and sliced thicker than what you'd expect from a pastrami, but it was delicious. It's served on rye with grilled onions, pickles, and mustard.. The mustard may have been the only thing that lacked perfection in the sandwich. I was expecting a deli mustard, but instead it was a sweet (honey?)-tasting mustard. Not much of a sweet mustard person, but it worked after I got over the shock! It was definitely something I'd be more aware of next time I'm in flagstaff and yearning for a sandwich. I will remember to ask for regular mustard! Our sandwich was served with pickle slivers and homemade potato chips. They too were yummy and they serve a lot! Overall, I'd rate this a four-star sandwich (mustard loss them a point). I can't rate the service, because my husband was the one that went inside. He was a bit bummed that he couldn't enjoy a beer in the great outdoors, but we totally understood. City rules are city rules! We would definitely return to have another sandwich.

    I wanted to really love this place. I really did. James Beard nominated meats! Many many days cured meats! Indeed the meats are delicious. However it fell short on two aspects. One, the workers/ service seemed nervous, distracted and irritated. I tried making light banter with the person who we ordered from and I received dead eyes and no smile. So really no service. Second, my half muffaletta sandwich was really the portion size of a quarter sandwich and cost $14 for about 3 bites of food. Sad portion. Other than that my family really enjoyed their Philly cheese steak and French dip sandwiches, both expensive. Delicious food but very pricey. The shop is very cute with great decor. Worth the money? Maybe? Depends on what you're looking for.

    A hard to spot place, but worth looking for! Driving passed it, you might not see the sign, but we nearly missed it walking passed. Delightfully cool and quiet, this butcher/deli has just enough seating that it would be noisy if all were full but it was just a few diners when we arrived. They have a written menu on a black board and they sell many of their soups/stocks and dinners frozen at the back. We were tempted to grab a few things but stuck to food in the moment and a bag of pasta for later. I had a half muffeletta and my bf had a French dip. Both were fresh and amazing. The home chips were a bit too well done for me but good nonetheless and we generously got another bag given to us by our server. Nice to have different drink options vs Coke/Pepsi machines.

    A new go-to spot for me when visiting flagstaff! The quality of the meats is top tier. I ordered the 1/2 turkey club and my husband ordered the cold cuts sandwich. Both were packed with a good portion of meat and a wonderful balance of flavors. The fries were perfectly crispy and salty and the potato chips were thicker cut but still crunchy and delicious. They also have some take and bake options such as tamales, and bolognese sauce.

    The Cuban is so packed with flavor. All the sandwiches looked good and so did the fresh and frozen selections in the deli. Friendly counter service and food was quickly served at our table. Located in the heart of Flagstaff.

He is 6'20" and what a wonderful gentleman He is studying at NAU and I wish him nothing but the best He was top-notch. He suggested what I should order and everything was great. I had the deep fried mushrooms which I'm addicted to, and they hit the spot. Then I had the steak which they had a special and it was cooked to perfection Jackson has a great voice and all those kids did a fantastic job of singing I really enjoyed myself Unfortunately, this post is a little bit late cause I was there in January. I hope Jackson is still there if you go and you get seated ask for Jackson he is a pleasure and just a wonderful, wonderful man. I wish him nothing but the best and he's the reason I come back.
