I had a salmon omelette with perfectly seasoned spinach and fluffy eggs. It was so elegant on the plate with the salty and garlic infused mashed potato. Though it wasn't much food and the plate was simple, it was some of the best flavor I've had in all my years eating in Vallarta. My friends had red and green chilaquiles. It's a traditional Mexican breakfast dish of tortillas smothered in sauce until they're semi-crunchy. Must say we were intrigued when a gentleman dining at another restaurant we were at asked if we wanted a good breakfast spot. Of course we did! Searching eateries is half the enjoyment of traveling in other countries. He said come to Azul you won't be disappointed. It's in the old part of town a little bistro with a few table side chairs outside and a bit more inside filled with smiling employees. We began with green juice and I must say it's the best we've had. Shortly after sitting and reviewing the menu the gentleman, who incidentally is the owner, recognized us (once masks were removed lol) and came over to greet us and chat. We ordered an omelette and fish-n-chips for our brunch. The omelette was filled with bacon and very fluffy (not flat like most) and came with fruit and potato and a very tasty sauce. Highly recommend that dish. The fish was mahi mahi served in lightly coated strips allowing the flavor of the fish to be the centerpiece not the coating and potato wedges. It was not too busy and they waited on us right away The only item that wasn't on regular menu (someone referred to it as secret menu) today was enchiladas in green sauce I don't like breakfast food and was very happy to order this...it came with mashed potatoes and refried beans. It might be closer to 4 than 5 stars, but oh, Azul Bistro is so fantastic for many reasons. The food, of course, wins the day. But the charming interior and outdoor, too, are lovely and full of peaceful joy. They have great jazz music inside, which may be enjoyed perfectly well while sitting outside. Let me also praise the service. Esmeralda is very helpful, friendly and happy. The chef also has a great demeanor and presence. And, he's comfortable mixing things up for you. Though they have their menu, there's an air of improvisation and inspiration that encourages you to relax. For breakfast, you can't go wrong with the Benedictos Mexicanos (unless you vegetarian). It's served with skirt steak sandwiched between a very moist English Muffin and a couple of poached eggs. And yes, it's chipotle sauce, not Hollandaise. Very tasty and hearty. Another great breakfast option is the Chilaquihuevos. Strips of tortilla mixed with scrambled eggs, onion, and an aromatic herb (epazote). Delicious, and plenty filling. They serve breakfast and lunch. One lunch option I can vouch for is mixed salad with chicken. A nice lettuce, with cranberries and another dried fruit, chunks of moist, cooked chicken, some goat cheese, and slivered almonds all bathed in a simple and lovely balsamic mixed with honey. So good ! Coffee is good here, too. They have a few cool juices that I haven't yet checked out, but sound promising. They're convenient and reasonably priced. This is our go to breakfast spot. We come twice a year and we love the owners. She is so sweet. The food is always on point. We have tried almost everything on their menu. The hot cakes are so good but my go too is the chilaqulas with mole. Sometime I switch it up with the poblano. We bring everyone to this spot. It truly is a hidden jem but so close to everything. I've been staying in a condo a literal stone's throw from Azul for a month, walked by it, gone to Freddy's... until today. Why oh why did I wait?! Azul breakfast was simple but delightful, totally full of flavor and exactly the right portion. I ordered fruit which came out first- perfectly ripe and juicy papaya, banana, apple and cantaloupe. I forced myself to slow down on it so I wouldn't get too full! I also had chilaquiles with scrambled eggs, and I asked them for a side of steak. It was so exquisitely tender and slightly charred, mmm! I cannot WAIT to go back.
