Coexist Bistro coexists adjacent to Hotel Rio Malecon. It has a small enclosed dining section, but most of it opens up to the hotel pool deck. I ended up eating here 3 times during my stay at the hotel (see separate review). I was the only one eating late afternoon lunch while waiting for my room to be ready. The Mahi-Mahi Fish & Chips was breaded differently than any I've had before, but it was good and the fish was not overdone. They didn't have malt vinegar but the vinegar provided was ok. Corona beer at about 80 pesos was cheap compared to US. Intrigued, I tried the vegetarian Green Omelet for breakfast. Green olives, zucchini, avocado, you get the picture. It tasted better than it looked. For dinner, Tortilla soup was good but a bit too salty for me. I'm not sure what "Artisan Pasta" means, but the Artisan Fungi pasta was excellent; along with the cream sauce, it was probably the best tasting I've ever had! Loaded with mushrooms! The martinis were also pretty cheap at about 79 pesos. So cheap I had 2. The wait staff was very attentive. Food took a bit longer to arrive than I expected, especially since I was one of two guests eating there during my meals; however, the next time I'm in the area, even if not staying at the hotel, I'd definitely stop by for more Artisan Pasta. read more

Thanks to Yelp and our community's pics and reviews, I was easily drawn to this utopia off the beaten path. I'm always in search for less touristy, off-the-beach locales because I like rolling with the natives! ATMOSPHERE: Located on a side street off of crazy Calle Morelos (the road that you play human Frogger on while crossing), sits a diamond in the rough. A tranquil, open-air space with poolside seating was such a surprise. The place was empty on this particular morning, so I had it practically all to myself. My window seat looked out onto the side street which was great for people watching, all while a light breeze kept me cool from the rising morning heat. I think the restaurant is attached to or affiliated with a neighboring hotel which is where the poolside seating came into play. BREAKFAST MENU: Mix of Mexican/American fare including hotcakes, crepes, eggs, chilaquiles, steak. FOOD: Chilaquiles - $7.40 USD Though I was "chilaquiled out" by this point as it was towards the end of my vacay, I had to try this. The portion of chicken and chips were very generous with the shreds of chicken in red sauce being the most flavorful I've had yet. Thinly shaved potatoes made for a crunchy hash brown side along with fresh refried beans. And yes, I had to have a crowning of eggs to make it a breakfast dish. Delish! SERVICE: I was greeted and seated promptly and checked on throughout. Service was very attentive. TIP: Pay in pesos or USD. This is a great location, near the Malecon and directly across from the flea market. The coffee shop side is air conditioned for those hot muggy days and the courtyard is delightful on cool mornings. The wife had the Benedict's and while the ham was better than average, you just need to be prepared for a non standard English muffin. The hash browns were most unfortunate. I had the French Toast and share the earlier sentiments, a bit on the soggy side however still edible. The orange juice was fresh squeezed, something that is fairly common in PVR, so it's not the same mark of distinction that it would be in other places. I had that with a side of bacon which I feel they delivered better than most. Service is relaxed and friendly. There was nothing seriously objectionable or amazing here. A great place to stop when it's convenient however not the kind of place to set out for on it's own. I was here a couple of years ago and I am confident we will return. read more

I absolutely adore the coexist cafe. I found this place the first time I came to PV in 2010. The ambiance is spectacular and the staff is always kind. I finally made it back on the last day of this trip. The crepe breakfast is a sweet goodness. It combines eggs and turkey with a rich sauce and thin, light crepes. I also had some French toast which was a little soggy and underflavored. The carjeta was an excellent addition though. My friend had a Sonoran Omlet. The one thing we both disliked was the hash browns, they were gritty and tasted like dirty. They had not been boiled before browning so they were raw. read more

This place was a good find. We were walking down the street and happened to find this. What a wonderful surprise. The salsa was so good. We had the popcorn shrimp. The sauce was amazing. By far the best chilaquiles in Vallarta. Believe me, I've had them all over town. Coffee and crepes are delicious as well. The restaurant surrounds Hotel Rio's Pool which would be awkward if anyone actually swam in it. The setting is really lovely. You can also dine inside with air conditioning but I prefer the courtyard. Wonderful service - they even bring out a purse tree so you don't have to put your bag on the ground. read more

It had everything we were looking for cleanliness, great menu, and excellent service. We started off with a great tasting Greek salad. These great people accommodated our post wedding brunch for 30+ people. They were great with separating the bill, service and THE FOOD WAS DELICIOUS. Found this cute bistro while cutting down a side street from the malecon. Both meals plus two cups of coffee came up to 245 pesos so very reasonable. Crepes are normally stuffed with cottage and cream cheese but I just opted for cream cheese and chose strawberry as the option topping. Perfect amount of sweet and tarte. Boyfriend had eggs Benedict which came with hash browns and a side of watermelon. Hollandaise sauce was excellent. Wow, what a surprise! On our last day and we discovered this place so close to our vacation rental. I had the grilled chicken breast with baked potato and fresh vegetables, boyfriend has arrachera steak with salad and rice. With soda and bottled water, the total was 22 dollars. This was our most expensive meal in Puerto Vallarta, there are plenty of economical choices as well as upscale and pricey. This restaurant is reasonably priced and very good, clean and comfortable. The staff here is so friendly and the food is so good. The first night here I tried the lobster and it was extraordinary. The second night I had the coconut shrimp with the mango sauce. My wife has had the seafood salad both nights and it is very good as well. I can honestly say that eating here has been pure joy. Sergio, Ricardo, and Rigo are the friendliest waiters and Mateo is a fabulous chef. I know it sounds strange, but they made my first trip to Mexico very memorable and I consider the staff of the bistro and attached Hotel Rio friends.
