I opted for three white wines, a rose, and two reds. Everyone was enjoying their samples and the day was filled with laughter. I rarely end up buying a bottle to take home, but I did this time. Chapin has their own specialty blend called Sangue Di Giuda and I highly recommend you get it! It is a red wine that is sweet but not overly sweet. It's quite fruity with a hint of bubbles. Good news is their tasting room will move to their Pauba location and their servers will move there too! Phil and Carol Baily and their family have created a welcoming winery with some pretty good wines. We are glad their legacy will continue on here in Temecula Valley Wine Country. A new owner will take over this location and will renovate to make it their own. So when driving along Rancho California you will still see this castle like building as a backdrop to our wine country.

They have this massive glass floor where you can look straight down into the barrel cellar. It's such a unique vibe and makes for amazing photos. And on this day you can even see the set up for a wedding they were having later on that day. We did the premier tasting flight out on the patio by the water and the wine was fantastic. We also ordered some food from the bistro-the strawberry salad with chicken and Parmesan truffle fries-which had great portions we really didn't even need the fries. The salad with the goat cheese went perfectly with the wine we were drinking. A huge shoutout to Matt, the Operations Manager, who took such great care of us. I'm not sure if that attributed to this, but one thing I noticed right away, was how extremely Loud it was inside the tasting Room. The tables of people were extra loud and it wasn't late in the day, and still pretty early. It did kind of turn me off a little bit, as it felt more like a brewery or bar atmosphere, and you couldn't really hear or talk to your party. The property itself was very beautiful, they host wedding here just a few feet from the tasting rooms. They have a small outdoor reception area that they set up, that looks pretty nice. The ceremony area is also very pretty with two options of views. One overlooking the hills with the mountains in the back, and the other between two really tall, and pretty trees. They do have both an on-site Bridal suite and room suite to get ready before your big day. The groom's Suite had a small video game machine inside, which was a nice touch. The reception area is only Outdoors but they do say they would set up tents in case of rain. There are lots of pretty photo opportunities throughout the property, and they have little swings you can sit on. There's also a lot of decorations such as a large sign that says "Love" I did not get a chance to taste the wine here, but several people in my party did, and enjoyed what they had. I'd like to come back another day when it's quieter possibly.
