Bajio sounds very promising and it was pretty good, but not my favorite. The sweet grilled onions are delicious but combined with their sauces, quite sweet. Their Bajio ranch is amazing and I was glad I got a side to go with the chips and my meal. Ordering at the drive-thru was more complicated than it should have been. Apparently, you can't get a single taco if you want the green chile chicken; you are required to get two. Ordered chips and queso, but the queso didn't make it in my order. Although they take Apple Pay, the gal at the window said she had to take my phone and reached out with her gloved, food preparing hands to take my phone and I just couldn't do it. Paid with cash instead. If you like really sweet, mild, Mexican-type food, you'd probably love Bajio, but I doubt I'll go back. read more

I've been obsessed with the shrimp tacos since 2005. (Two tacos, no beans, extra sweet rice, topped with cheese, mango salsa, and limes--that's been my order for almost 20 years!) And since this is the only Bajio left standing after the recession, I have driven literally an hour for the tacos, if that tells you anything about how good they are! The restaurant has that fun Cafe Rio vibe (and I think the chain actually predates Cafe Rio), and this location is always clean. However, the service at this location has been a little mixed. Several times in the past, they've closed earlier than the posted time. We ran into the owner and mentioned this--and apparently the early closures weren't sanctioned. So now every time we go, we're afraid it's going to be closed. Also, the River Woods parking lot is simply a nightmare. read more

Quality of the food is amazing. Service was awful!!! I asked the staff if I could get two more kids bean burritos, Ala carte, after already ordering 3 kids meals, and an entree. My kids were still hungry. They told me they couldn't make that. That the only thing they could make ala cart was a quesadilla. My kids cannot eat dairy. Nor did I need 2 whole kids meals, again. We had a great experience here tonight. The service was quick, the staff was very friendly, and the food was great. I love that they have so many options for meats (like pineapple shrimp, lime chicken, and several others that cafe Rio and costa vida lack), two different types of rice (sweet rice and Mexican rice), and 3 styles of beans (black beans, pinto, and refried). Let me preface this by saying this is my experience I had during the covid-19 pandemic so I had to go through the drive through - which is, however, available during regular business operations so I felt so inclined to share. Love the new location and it feels like a good move. I don't love the format of the menu- it's actually a little confusing to me because I was so used to the old menu. But it does help simplify some things. I ordered my go to green Chile chicken quesadilla and I know you have to sort of set expectations slightly lower when you're ordering take out/drive thru but my quesadilla wasn't even cut. And all the chicken was smack dab in the middle of the quesadilla so the sides were pretty lack luster. I pretty much had to deconstruct the whole thing because I didn't realize the chicken was all in the middle till after I had cut it. It's in the same vein as Cafe Rio, but the lime chicken and green chile chicken are different than anything there. The only thing that saved this review from a two-star to a three-star was that my food tasted great...once I got it. A friend and I thought this would be a quick meal as we only had 45 mins to eat and get where we needed to be. The line had 4 people in it when we jumped in. Except to our surprise, it took us 30 MINUTES to just get though the line! This frustrated me because the process is no more difficult or different than a cafe rio or costa vida scenario. There was also some confusion with my order because the employees obviously cannot hear over the glass. The language barrier probably didn't help. I order a lime chicken salad and then at the end they throw some green chili chicken; so I had double the chicken. I like chicken, but that was way too much. Since I was in a hurry, I didn't have time for them to remake it. Again, luckily it tasted great, so that was lucky. read more

Super disappointed. Went in 1/8. I just moved back to Utah from Colorado and haven't gone to Bajio since I moved 9 years ago. Needless to say it was a less than stellar experience. The girl who "helped" my mother and I initially had a major attitude. Don't know if she was just having a bad day. I was left with the impression that she didn't really even care to help us or be there. Seems like she was about to go on break or get off of work. I say that because when we were eating our food she wasn't on the floor anymore. When you're made to feel like you are a bother or an inconvenience it leaves a long lasting impression. Even when my mom simply asked what they put in the nachos she was not nice when she explain what was included. The lady in line before us had her order messed up. When we were sitting down eating our food the people who ordered after us were complaining about the customer service as well. Unfortunately once you receive an experience like we did, the food no longer remains appealing or appetizing. It was very bland. My moms chicken was overcook. She said it tasted like she was chewing on a tire. Needless to say I won't be going back. Which makes me sad because I used to love bajio. I've worked in the restaurant industry and I understand how challenging and difficult it is to work in food service and I can only imagine in COIVD times as well. However I didn't come and pay $36 for a terrible customer service experience and a stank attitude. read more

My expectations were HIGHLY exceeded. I'm from southern California and I've never been a fan of Cafe Rio or Costa Vida (if I had to choose I'd say costa for the raspberry chicken) but BAJIOS KNOWS WHAT THEYRE DOING WITH MEXICAN FOOD. I lived in San Diego where Mexican food is on every corner. And to say that bajios matches some of the best of those San Diego places is mind blowing. I will forever be coming back here. My salad had 3 pieces of green chili chicken on it. What it lacked in chicken they more than made up for it in flavorless onions. The sweet rice needed a diaper it was so wet. We make a special trip to Provo just to eat at Bajio! They have the best chicken compared to places like Costa Vida and Cafe Rio. Their honey chicken is amazing and has so much flavor. I got the chicken quesadilla with both kinds of rice. The rice is so good I can't choose between them! The only disappointing part was that they no longer have the option of getting kids sized cheese quesadillas. I called to ask if they have ceviche, because they didn't have any last time we were here. They told me twice that they had it. We showed up to the restaurant & they said they didn't have it. I told one worker that we had called & asked, so she called the manager out to ask her. The manager was super rude & dismissive. "Only take 1 mint!", plus they refused me my kids meal because I'm not 12... judges I wasn't that hungry so we split the fajitas and was very underwhelmed. Swung in here to grab a bite while at the Glow run on Friday night. I think this place is trying to be Cafe Rio, but has fallen majorly short. The line of six or so people took forever to move through and there was an a/c problem as it was crazy hot in there. Those are all forgivable. The food on the other hand was inedible. I ordered the Chile verde chicken burrito. The burrito was enormous and came covered in sauce. It was sweet, so sweet I'm sure one of the sauces was made from simple syrup. I couldn't eat it. Ordered two carne asada tacos for another party and they were also not good. Highly disappointing especially for the cost. Yet another "Mexican" place that knows if you pile up pounds of sweet meat, beans and rice for under $10 you'll get people lined out the door. I went with a group from work. I wasn't overly hungry, so I looked at the budget lunch specials. They were doing a tamale with two sides and a drink for $5. I love tamales -- even mediocre ones. It was a no brainer. As I went through the line to have the additions piled on, I was surprised when they asked what meat I wanted put on the tamale. Why would I want meat put on a tamale that should have meat in it? I assumed it must be a cheese tamale. I got the beef, refried beans, white rice and just some sour cream and hot sauce as toppings. First, I didn't realize the white rice was the sweetest rice. Oops. The refried beans were pretty good. I cut out a slice of the tamale to see what was in the middle. NOTHING. The "tamale" was corn mush wrapped in a corn husk and cooked. I'm thinking of a way to describe it and not coming up with much. It was solid and pasty. There was hints of corn flavor in a really bad ball of paste. That explains why the meat is on the outside. Next, I thought white rice would be less sweet than the red rice. Oops. Well, it had the important things. Almost two pounds of heavily salted and sugared food for less than $5. Not important for me, but for many people I think that's the hook. On the way back, more than one person in the car said they didn't notice any sweetness in the rice. We talked about that. I don't go to many places that add lots of sugar to the food, and I certainly don't it at home. It's obvious to me when I eat at places like this when they add sugar and salt. One co-worker admitted to making an effort to limit his salt input at one point for a period of time. After that, he noticed how many casual dining places used a lot of salt for a few months. Now he can't tell again. This meal was 1 star, but I've eaten here several other times and had somewhat better experiences. As a result it's a 2 star place for me. read more

Did this place change hands? The new owners/staff seem very different than the last few years...and the food is also suffering. I've frequented this place for years and always enjoyed it. But today was a different experience. As I waited for them to take care of the dad and four kids ahead of me, I watched them sullenly throw food into bowls, barely talking to each other, barking out orders...cheese? Rice? Beans? In the process of waiting in line 10 mins (while they made a salad, burrito, chimichanga and quesadilla I watched them burn and throw away a chimichanga, a pan of sweet green chili chicken and two quesadillas. Speaking of the quesadillas, didn't they use to make those from fresh dough that was soft and thick and delicious? Now they use Costco style premade dough that is tough and flavorless. A real step down from past years. When it came time for my salad they threw the burned chicken green chili into my bowl on top of salad and beans. They used to put a freshly cooked tortilla under the salad, noticing it was missing, and double checking the menu which references it, I asked kindly if it came with a tortilla. Without answering he turned away and spent five minutes while the tortilla cooked and my chicken went cold, then wrapped it up into a piece of foil and stuck it by my salad. Unwrapping it I found and undercooked tortilla that had glued itself together. It is always a bummer when a place you know and love falls like this, time to find a New Mexican place. read more
