Honestly, I am not trying to be rude but this has to be the worst thing I've ever eaten. The Mac n cheese tasted like water, the chicken was pink and the skin was so rubbery you couldn't bite it, the beans had no flavor, and the street corn tasted old. I came from Florida to visit my sister and spent almost 50 dollars on this food. Really wanted to ask for a refund. It was extremely inedible. read more

Was craving some BBQ after a day on the lake and noticed Baker's Brisket, so decided to stop and give it a chance and I am glad that I did! The staff was super friendly and all the food was excellent. We got a sliced brisket sandwich, sausage, street corn and potato salad and nothing disappointed at all. This is a legit BBQ trailer serving up some delicious food. Their potato salad is one of the best that I've had in some time. John Baker and his son Alec have done very well at the Lohman Ford Food trailer (across from Hillside Texaco) He tries to be open Thurs-Sat but is not always open and will close when he runs out, typically by 5pm. BBQ is great at this location. They sell by the pound, half pound or sandwiches and sides. (see pics for typical menu) There are a few picnic tables by the trailer if you want to eat there. No restrooms. Very good and tender BBQ. John is so popular that he is also taking over concessions at the Lago Golf Course 4616 Rimrock Dr. He intends to have burgers and other items but still just getting started. Again not sure about hours since he has been closing early there too. The name at that location will be Baker's Bar and Grill. Will set up a page when we get more information. I haven't been out to Lago Vista in a long time but happened to be out there. I looked up BBQ on google maps and this food truck was the closest. I am so glad I went there! Bakers brisket is awesome BBQ. I've eaten here many times because it's local but I'm also a big fan of BBQ and they stand shoulder to shoulder with the best I've had. The service is great, it's a food trailer so not really something you might expect, but they are always friendly and helpful. The trailer itself has great character with something you wouldn't expect. Stickers promoting other BBQ joints, very classy. A true Texas treasure and we're lucky to have it in our hometown. read more

It's hit or miss. I'm a brisket lover. I always ask for lean brisket. Sometimes it still has too much fat. Other times it's been too dry and way too salty (not good if you suffer high blood pressure). Sometimes it is PERFECT! Give it a try. read more

The brisket was great, turkey was moist and tender, street corn was excellent, potato salad was awesome, and so much more. So it was the day before the TX deep freeze and I had only lived in TX for 1 week. I'm a bbq hound and was psyched to see the truck open. The owner had a small line and he was only selling FULL BRISKETS since he had them made and needed to get home due to the impending snow. $100 for about 10-12 lbs wrapped in paper, foil and placed in a pan. The customers in the line informed me that this was an opportunity I should not pass up. We divided it in 3 and have had several unbelievable feasts. We're going back when this is done. read more

For the formidable task of preparing and packaging take out food in a food trailer, John has it down pat, He consistently produces some of the best smoked brisket I have ever eaten, and that has been a lot of brisket. His briskets are consistent in tenderness, flavor, moistness and appearance of the highest quality. He does sell out of some of his offerings early, so don't go there late in the day and expect a full menu. I highly recommend you look him up if you are in Lago, but check his hours so you won't be disappointed if he is not open. read more

The sausage was also great (the jalapeño was too spicy for me, but John-the owner did warn me, but the other was yummy!) My husband had the large shredded pork sandwich (we did add a bit of BBQ sauce to it and the pickles and onion), which he said was VERY good! Finally got to try this place out! Had brisket, pork ribs, and sausage. The brisket was balanced, great smoke ring and smoke flavor, and the seasoning was spot on. The ribs were also flavorful with a great bark on them. They fell apart in the best sense of the phrase. A little too sweet for me but that's a preference, not a critique. The sausage was good as well. I'm not a big sausage guy but I really enjoyed it. Overall, superb. Now I heed to go back and try the other times.
