The regular boudin has a casing that isn't crispy so we chose to just eat the filling. The inside was just as good as the smoked. We only tried the chicken cracklin's and holy cow were they good! Some pieces were real crispy while others were a bit bigger and still had some meat on them. There was a perfect mix up large and small pieces, crispy and not crispy pieces. I wish we had these in Michigan. We brought home some andouille so we could make jambalaya and gumbo. We just cooked some andouille, and it was a little bit spicy and so good. We also brought home some boudin and can't wait to cook that. Be sure to check out their freezer section and take home some different things. This place was such a gem to find! The staff was very friendly and helped us make decisions on exactly what we needed to try since we had never been before. There is seating inside if you're looking to eat there.
