Bottom Line: Some of the best barbecue in Maryland served in an unassuming business park. I was excited when my asked if I wanted to go to Bark while passing through town. He's previously brought home chicken and laser potatoes and it was great so I was excited to visit the restaurant. Immediately upon parking in the lot I was transported back to Austin. There is just something about the pit operations outside and the tables under the canopy out front that reminded me of some of the barbecue places i visited in Austin. If sitting outdoors isn't your thing then they have a nice little dining space inside too. I was craving ribs but on a late Sunday evening they were out so I ordered the brisket tacos and they didn't disappoint. The tacos were like small street tacos but totally loaded with brisket. And because the laser potatoes are among the best spuds I've ever eaten, we shared an order of those too. Employees were friendly and the chill atmosphere was nice for a Saturday night. We ordered the pitmaster sampler, pork belly and brisket sandwich, garlic mashed potatoes and a texmex salad? It had wontons and corn in it. So let me start by saying I LOVE pulled pork and have had hundreds of sandwiches all across the country and this is easily in the top 3 and is definitely the best I've had in the Mid-Atlantic. The pork was moist but not too wet. The sauce, slaw and pickles were a great compliment that the toasted roll. By no means am I trying to discourage anyone from trying this place. The food is decent. The pork is a a little dry, but the bark is pretty good. The brisket has a different taste from the wood I think. It's not bad just different. Sauces cost extra, but the regular bbq sauce is tasty. Never heard of that before. Every BBQ place I've been it's free and usually have it on the table or in a dispenser. Service is great. The place is nice it's in an industrial area I think. The place had an unusual smell. Okay, take it from me...Bark Barbecue has the best bbq in Maryland! After seeing a few reviews from my fellow Yelpers we decided to try Bark's out for dinner. As soon as you park your car your greeted with the amazing smell from the wood fired grills. You know a restaurant is good when you want to eat everything on the menu, so we ordered the bbq platter and a brisket sandwich. The platter comes with four sides and one of them is the laser potatoes....you HAVE to try them! The food was delicious and there was enough left over (the platter serves two) that we took home the leftovers. Those probably won't last the night in our refrigerator. The outdoor seating is very crazy with baskets of beautiful flowers and plenty of fans to stay cool. You can sit there and get a great view of the bbq grills. As others have mentioned, Bark Barbecue is out the way, but we will now make it a regular stop for bbq. I can't wait to try their breakfast burritos. A must try!!! Being from Texas I was on the hunt for great BBQ. I finally found it! Thanks to recommendations of my coworkers. I stopped here the other day after someone that lives in the area recommended it. I ordered online on my drive down, probably about 30 minutes before I arrived. I wasn't sure what to expect and didn't have a lot of time to wait. Of course my gps was off so I actually arrived about ten minutes before I said I would...so needless to say I had to wait anyways (my fault not there's). The location is strange, it sits in a business complex and there really is no way of knowing where it is. However, when you pull in you can see a patio, in front of the building and opposite that two large stick burners with a huge amount of oak stacked. A good sign since they reference Texas BBQ on their website. I ordered the breakfast burrito with brisket and the laser potatoes. The laser potatoes are a great idea, thin sliced potatoes pressed and cooked low then dropped in a fryer to crisp up when ordered. The only issue I had with them was they weren't seasoned at all...had they had some salt while they slow cooked to flavor them I wouldn't have needed the aioli. The aioli was great but I think the potatoes, seasoned on their own would've been perfect. The burrito was good, it had everything in the description (beans, eggs, cheese, aioli, brisket, etc). The brisket, from what I could tell, seemed to have a good bark, good smoke flavor and was seasoned right. I had to try hard to taste it though simply due to everything that was in the burrito. But that's how these things are made. If I'm in the area I will return to try their lunch. But I was surprised to see they didn't offer any meat only options. Which is strange being as they talk about Texas BBQ on the website, even the picture on the home page is probably from a joint in Austin. A true test of a pit master is their brisket, ribs, chicken or sausage on it's own with nothing else. I don't know the area so this may be what the locals want (and based on the reviews it appears that way). But if you've got the product give the option...I would much rather order a pound of brisket for breakfast than a burrito any day! read more

Bark BBQ is one of those places that, unfortunately, you have to know exists before you go there. Part of a little industrial / commercial park off the main road in a small town, there's not much chance you're going to see it from the main highway. But, if you're crossing The Bridge, it's worth popping off the highway and going all of a mile and a half out of your way. There's a great little park and hiking area just down by it, which is how I managed to find it. Bark's main entrance is literally mindblowing. A huge sign, huge area of wood, big smokers, and a kind of fancy looking frontage -- but inside, it's a typical kind of bbq joint. There's plenty of small tables outside, but inside, it's just two very large, "community style" tables, and a counter where you place your order. The menu is posted up over your head, but notice that there's a few other items to the sides on their own menu boards? Weird, but whatever. I ordered a pulled pork bbq sandwich, which was served on a bun with chopped coleslaw on top, and a slightly (very slightly) spicy bbq sauce. They've got quite a variety of sauces, and I imagine they'll substitute them out for you. It was a bit sloppy, and utterly delicious. The box it came in wound up soaked with sauce and bits of coleslaw, and I vaguely considered eating it, too. But, y'know, people would judge. The sandwich comes with a side of crisps, too, which I didn't eat. They have cans of soda, wine, and beer -- a little bit odd, as they appear to be mostly a weekly lunch spot, but, you do you. I got a can of soda. I do wish they had either bottles or a fountain, since a single can wasn't enough to really go with the meal, and I didn't wanna go up to the counter and order another. Overall, the BBQ was amazing -- not the "best I've ever had" level, but up there. If I had to, absolutely had to, come up with a negative comment on it, I did think it was a little expensive, especially considering the location. Prices are a little more in line with what I pay in the DC area than in the burbs of the burbs. Still, portion was good, food was fantastic, and I thought it was fair. read more

Limited seating. Two tables inside (one very long). More seating outside on the parking lot. Limited menu (I posted a picture). However, the limited menu could also be a plus. Very few options but they are all done to perfection. There is also a platter for two which is not on their website, or the picture I posted, however it is on the wall inside the establishment, which I would certainly try. So different from the usual BBQ joint. It didn't smell like BBQ when we walked in. No meat heavy platters with collared greens or mac n cheese or cornbread here. I appreciated the change from the usual, because sometimes I come away from BBQ places feeling like such a carnivore from all the meat. We ordered the bark bowl (with chicken), the spare ribs that are covered with Korean gochujang sauce (sweet and spicy and very different from the usual tomato or vinegar based BBQ sauces), and the pork belly sandwich. The bark bowl was great, it had green beans, pickled onions, rice, and slaw, which provided a nice balance with the chicken. The portion size of the bowl was large. The pork belly sandwich is not that big. It does come with a bag of chips, but one might still have room for more if they're just eating the pork belly sandwich. We ate our orders outside, since they have a really nice patio, but there's also communal tables indoors. It's in the middle of a business park, so there's no foot traffic and feels pretty quiet. Wouldn't go out of my way to come here, but would come back if we're in the area. read more

Found this spot on Yelp and will say it was completely worth the drive over the bridge on Fathers Day. It's tucked away in a business park like all good BBQ and breweries are. Plenty of parking and outdoor seating that's covered! With fans! I wouldn't say an extensive menu but that's good! Do a few things well and boy did they. The kiddo got the ribs which he called spicy but he also called pancakes spicy. So you know, he's not a reliable narrator. Hubby and I both got the bark bowl. I had chicken and him brisket. Interesting mix of flavors and textures. Love the red rice with Cole slaw. Major thumbs up to all the BBQ offerings. Love the local canned beer selection and out of state wines. That's for the best though. I may be a wine snob now but MD wines just don't cut it. Anyway. The best part may have been the ice cream. Hubby got the seasonal sundae which was a peach blueberry cobbler. Peach and vanilla swirled soft serve with blue berry sauce and crumbles. OMG. But, a small rack of ribs was $60 plus ( 10 bones ) so I was expecting good things, the ribs were dry like beef jerky and the flavor tasted like Jack Links. After spending a year in Austin and eating through much of its top BBQ shops (Interstellar, LeRoy & Lewis, Distant Relatives, Franklin, Valentina's, Bunrt Bean, etc, etc, etc.), I was curious and a little skeptical when I heard that Kent Island had a place that made Central Texas style BBQ. After eating at Bark Barbecue, it's off to a very promising start. The Brisket Sandwich features brisket with excellent bark, a nice-looking smoke ring, and some smokey fflavor. However, I thought it was a bit dry, not helped by the fact that my sandwich was mostly lean, rather than moist brisket. I liked the slaw and the sesame bun, but the sandwich could've used more acid to pull everything together. Moreover, it's quite pricey at $16.95; I don't believe any of the BBQ sandwiches in Austin are above $16 at this point. It's a good sandwich, but I'd get it only if I have a real BBQ fix. I rather liked the pork belly sandwich more, as it brought together juicy protein, crunch, and acid into a single bite. The thick cuts of pork belly were moist and tasty, the thick cuts of heirloom (beefsteak?) tomatos provided juicy acid, and the lettuce provided some crunch. The toasted rye bread was also great--the dill and carraway seeds worked really well--but the slices were too thin and couldn't hold the sandwich together. If Bark could make one tweak here, it's to make the slices thicker and/or more robust. I was surpirised at ffirst that Bark did not offer a BBQ platter, since that's what I associate with Central Texan BBQ. Such a platter exists off-menu, consisting of brisket, pork belly, chicken, and spare ribs. But there's no jalapenño sausage, which was my second favorite BBQ item to order in Austin. (Staff informed me that they're currently tryign out sausage recipes) Nor is there much in the way of BBQ sides, either traditional or new wave. Bark Barbecue clearly needs some time to mature. In the small town of Stevensville, MD sits a Texas style bbq place that will blow your socks off. It is a little off the beaten path, but My husband and I stopped in here for lunch after meeting halfway between our home and where he has been working the last week. I chose this place for a couple reasons. 1) the menu looked good and 2) though there was only a few, the reviews were excellent. Damn I am glad I did. We were instantly greeted and a nice woman behind the counter explained a little about the menu and then told us what the special was. It was called the Summer Special and it was a Pork Belly BLT (pork belly instead of the bacon) and I'm not sure I will ever be able to have it any other way from now on. The pork belly was probably the most tender pork belly I have ever had and I eat it if I see it on a menu haha. My husband had the Brisket Sandwich and much like Texas itself, it was huge. They definitely don't skimp on the meat. It was perfect. The crisp of the Bark, to the tenderness and moistness of the meat, to the pairing with their slaw made this sandwich mouthwatering delicious! Luckily for us, we are good about sharing. So I got a few bites of his and he got a few bites of mine and we were in heaven! We followed it up with the Strawberry Cheesecake Soft Serve Gelato, which was topped with crumbled graham cracker and a strawberry purée. I didn't know you could make gelato any better, but making it soft serve style definitely does. It makes it so much creamier. We told Tyler, who is a Pit master at Bark Barbecue, how much we loved everything and that we were definitely coming back, So he walked out with the Original Soft Serve gelato sundae to try. I don't know where to start. There's so many good things I want to point out, but I know if this post is too long, it won't get read! The breakfast sandwiches and burritos are amazing. Their pork belly is out of this world. I always get the pork belly burrito and it's the perfect mix of salty, sweet, and a kick of spice. They also make tasty coffee beverages of different varieties, my go to is the caramel latte. The service is top notch. You walk in and immediately you feel like you're welcomed in, treated like family, and make great conversation with everyone there. The ambience is very calm, the area is super clean, and there's even outdoor seating! We brought my niece dog one day and they came out and brought her an ice cream on the house (after asking of course)! They're so generous, and so warm and inviting.
