WOW! That's how I want to start off this review. The short and simple, if you want a great Bbq sandwich then find this truck and order! Service was pretty straight forward but easy. There are times where the order taker doesn't know how to work the card machine or they're unsure how to ring up, not the case here. The more surprising thing was that my food was ready in 10 minutes. 3 sandwiches in 10 minutes felt great to me, that's sometimes faster than some fast food restaurants. The food I got my wife the chicken bacon chipotle and, while I didn't try the whole thing, the chicken itself was cooked perfectly. Sometimes with bbq chicken you, either, get it dry and overcooked or sometimes a tad under. Not undercooked to the point where you get sick but enough to where the texture is all wrong. Not here! I was very surprised at the tenderness and full flavor you got from the breast. Smoky and cooked to perfection. I got the grill master which comes with tri tip, linguica and salsa. The meat and sausage were both cooked great and there was no shortage of either. If anything, there's maybe a little too much meat? It was hard to keep it all together but you definitely get what you pay for. My only critique here is that there's too much salt. You need some freshness to cut through the richness of both meats and the salsa doesn't quite do it. I would love to see a little less meat and more salsa or maybe even try a green avocado base salsa to add freshness and cut some of the salt off. My daughter had the tri tip sandwich and loved it. Assuming it's the same meat as the grill master, it was really good. Side note- all sandwiches came with chips and a side salad. The salad was fresh and was a nice little bonus to the main dish. I'm happy I stopped by and picked up dinner from this food truck. Seems like a family affair and they're passionate about their food. If you're looking for a great Bbq place then head to the stix!

BBQ in the stix has the best tri tip sandwich you will ever have. It's perfectly seasoned, sliceded to the perfect thickness and super tender. The bread is soft and toasted on the inside so it's soft while also staying a little crispy even after the mayo etc is put on the sandwich. I think it's a Chabatta bread Even the dressing for the side salad you get is amazing (perfect amount of acidity to sweet) and it may sound like sacrilege but the dressing also goes really good on the sandwich. I usually dress and eat my salad first, so I accidentally figured this out and now I can't go back. The shrimp sandwich is delicious and it's not just the shrimp. That sauce is so creamy and addictive. The shrimp are perfectly cooked and tender, which is tough because lots of places end up overcooking shrimp and they are either rubbery or hard by the time you get them. Here the shrimps stay soft and tender. Overall portions are a great size and you get a random bag of chips with every order. You do need to follow them on instagram @bbqinthestix to get the exact location every day. But to save you a bit of guesswork, they're around the Santa Maria area on Thursdays and Fridays, just different locals every time.

Stix was posted up at Presqu'ile Winery and I ordered off another food truck first but ai had to get some food from Stix! So glad that I did. Legit Santa Maria Style food!!! ---- The best Tri-Tip sandwich I have ever had off a food truck! It was packed with lots of meat, and it had tons of flavor without being salty or over-seasoned. Props to this business that knows how to pack lots of flavor in every bite. The sandwich was toasted and buttered on a ciabatta roll so it had a nice combination of soft bread and toasted edges. The side salad was above par because they used a quality spring mix with above average lettuce and other greens. For me, the kind of salad you offer is a window to see what kind of training and standards they are working from. They catered a dinner for a local non-profit at a church and they were efficient, proficient, and friendly. They even remembered my name later on in the night when the event was over. So glad that they are here locally and I hope that they stay with lots of success!

I'm usually in the Santa Maria area a few days every couple of months for work. Last time when I was up here I finally learned about this food truck from yelp and from other word of mouth recommendations. My last trip down there I had no luck visiting the truck. Today, things changed. I was finally able to hunt down the elusive BBQ in the Stix truck. It seems like they only post on facebook or instagram where their whereabouts are the day of so it's geared towards the folks that are spontaneous and are willing to go out of their way to find them. After all of that effort, I still felt that it was worth the wait and the food was amazing. The sandwiches come with a side salad and it's very filling. The girl that took my order recommended the tri tip sandwich or the chipotle chicken bacon sandwich. I went with the chicken this time around and it was amazing. It seems like everything was made to order so there is a slight wait to receive your food. I can't wait to attempt to find these guys again next time I'm in town.

I just had the surf and turf sandwich. Comes with chips and a small salad. STOP Whatever you're doing and go get this sandwich. To put it in reference, I'm if late for work and I see the truck open. I'm getting a sandwich . I couldn't get home fast enough to eat it. Additionally, it doesn't make you feel bloated and tired after eating. Which is great! I shared a few pieces with the pup and she loved it. I may or may not be back before they leave.

Super dry sandwich good tho I'll just stay clear if the chicken next time didn't get a drink with my meal also not sure if you pay fir that separately

This place is great! I ordered the Tri tip and was a little nervous I wouldn't get enough meat as most restaurants disappoint. But for my $13 I definitely got more than my money's worth. The sandwich had finely sliced meat and was 3/4 meat and 1/4 bread. With some salsa too. Amazing salad and bag of lays potato included. What a deal. Service was fast and they were parked conveniently right around the corner from my office. I give this place two thumbs up! We had recently ordered their family meal for a fundraiser and that was too good to be true. I couldn't believe their truck was just as good as the family deal! Keep doing what your doing bbq in the stix

I think this is the porkbelly burger pictured here. With a grapefruit garnished salad and delicious dressing.

Hands down the best food truck in town. Creative foods with delicious flavors. Personal favorite is the grill master sandwich.

This place is the real deal. The sandwich I ordered was absolutely stacked with flavorful tri tip and shrimp. Also included a nice side salad and a bag of chips. I'm usually not huge on food truck food, but the quality is all around top notch and they don't skimp. Full of flavor, staff were cool, and a variety of options on the menu.

    Chicken and waffles for $10!
    Andrea L.

I stopped at the Farmer's Market in SM on Friday night to find home grown tomatoes. Although there wasn't a huge selection of produce, there was a huge selection of cooked food. The chicken and waffles at BBQ In the Stix called my name! I actually purchased it for my husband as a surprise when I arrived home. However, in the car, I couldn't resist trying a bite for myself as I was driving! The sweet maple cream sauce was awesome on the fresh cooked waffle. The chicken was boneless and so good - just the right amount of breading and crunch on a moist, juicy piece of chicken. So glad I stumbled upon this truck!

Oh boy, real Santa Maria BBQ! Woo Hoo! Tri-Tip is the name of the game in these parts so that's what I'm doing. Got the Tri-Tip Dip and a side of BBQ sauce so I could have it both ways. I was really looking forward to these West Coast Chili Beans too. Wife wanted BBQ Chicken so I got her the BBQ Chicken Combo. I asked the girl at the register if we could get dark meat with the combo. She looked a little confused and said "You mean like Tri-Tip?" Oh boy. No, dark meat chicken like a thigh and drumstick. "Oh, do you want a breast or a thigh?". Let's roll with the thigh, thanks. Our food came out pretty quickly. I asked for horseradish for the Tri-Tip Dip and was politely told they don't have any. Silly me, why would they have horseradish when they sell a French Dip Sandwich? The Tri-Tip Dip was decent. Not going to lie. The West Coast Chili Beans were a disappointment. I expected so much better. The BBQ sauce was runny and tastes like molasses and maple syrup. Nah, Stick with the Au Jus and you will be fine. The Chicken Combo was a train wreck. Beans cold, rice cold, chicken overcooked by a mile. It's not easy to overcook the hell out of dark meat chicken but they found a way. Wife not happy, at all. It's another one and done. The oak grilled open faced rib-eye sandwich was absolutely incredible. I'm not exaggerating when I say it had more flavor than Wolfgang Puck's CUT. The rib-eye was perfectly cooked to the medium temperature I requested, tender enough to bite through without a knife, and seasoned exactly the way Santa Maria style beef should be. So many places are too conservative with the seasoning these days, but they got it just right. Even the bread underneath the steak was perfect. It didn't even need salsa, but of course I tried it both ways. Honestly? I couldn't decide which I liked better because the sandwich was outstanding on its own. We also ordered the linguiça appetizer with garlic bread. The linguiça had that slight char from the grill that gives it so much flavor, and the mustard served alongside it was the perfect pairing. My mom ordered the prime rib sandwich with grilled onions and chose the 50/50 fries and grilled onions. The only minor criticism I have is that it wasn't quite a true 50/50 and could have used a few more grilled onions. Other than that, it was delicious. The pinquito beans have a little kick, so if you're sensitive to spice, keep that in mind. Personally, I wouldn't change a thing. The whole meal took me right back to growing up in the Santa Maria Valley cruising Broadway on Saturday while the entire town smelled like oak fired Santa Maria barbecue. We cook a lot at home, and we're pretty serious about our beef, so eating steak at restaurants is usually disappointing because very few places compare. That's why I was so impressed today. This wasn't just a good sandwich.. it was one of the best rib-eye sandwiches I've ever had. To whoever was running the grill today: outstanding job. You absolutely nailed it.
