I would rate this place more stars if I could. Best new restaurant to open in the area in a long time. The food was top notch. I had the ribs which were cooked to perfect, the sauce was amazing. The side of cornbread was southern charm perfect. I also got the brisket Mac-n-cheese which was mind blowing and loaded with brisket. The flavors all melded together so well. Wife had the pulled pork sandwich which was another hit. There are other BBQ places in the area that claim to hit the mark, but in my opinion I'd pass them by and head here. I've been to most of them and one in particular I wrote a review on. So avoid that one. Highly recommend giving this place a try. I can't wait to try other things on their menu. They also offer a lot of specials. The service, waitress and hostess answered all questions well above what I've experienced at other locations in the area. Checked on us frequently and were very prompt with every thing we needed. It was very quiet the night we went. The restaurant was clean and well decorated. Great for a night out, few drinks and good food. We will definitely be back. Stopped by here during a trip to the Great Wolf Lodge. Their beef brisket mac & cheese appetizer completely stole the show. It was rich, creamy, and packed with flavor with tender brisket throughout. We shared the BIB'S BIGGIE 3 MAIN + 3 SIDES + 3 SAUCES For $48 We had brisket, chicken and shrimp skewers with sweet yam mash and collard greens. The brisket was nice and tender. The yam mash was fine, and the collard greens had more oil than I expected. Probably the worst collard greens I've had. The chicken skewers, which had a bold garlic flavor. I also had the Broken Mirrors cocktail, a smoked tequila and mezcal drink with habanero honey syrup, citrus, and a cabernet float. Super tasty and had a nice presentation. The staff were really friendly and the vibe inside was chill. One thing we were disappointed about though was that they had already run out of cornbread early on a Saturday evening, which was surprising for a BBQ spot. read more

Went here for the first time on a Saturday evening with my parents and husband, and we had a fantastic experience! The atmosphere is top-notch--I loved how the bar opens up to the outside, and the interior design is so well done with beautiful hardwood floors and cool BBQ craftsmanship on the walls. It's just a super welcoming vibe and I loved that they were playing country music. Our server was exceptional, so attentive (we loved her), and the food was outstanding across the board. Do not skip the guacamole to start--it was so delicious that we almost ordered a second! For my main, I had the chicken skewers with two sides; the portion sizes are large, and everything was really tasty. This place has the potential to be even better, and here's what I'd recommend. Live Music: Adding live acoustic music would fit the vibe so well, especially given how popular live music is in the area. Weeknight Specials: Weekly theme nights--like trivia, 75-cent wings, or a catchy "Pints & Pork Thursday" would be fun to bring people in. Game Day Promos: With their great TV setup, I can see them having a huge crowd for football season with a few game-day drink/food specials. This is the "clean, well-lighted place" Hemingway had written about. Quiet and minimalist, Bib's Ribs has a great bar with solid bartenders, quality food, and a truly pleasant and helpful staff. My friend and I were Jacob's second table ever in his fledgling career as a server and he could care of us in solid fashion. My friend ordered the chicken skewers, which already became her favorite dish since this was her second visit in a week. She also loves the corn. I ordered a half-rack of ribs with the vinegar-centric barbecue sauce. Admittedly, since the owners ran Garlic in Stroudsburg, I feared they would continue to be heavy-handed with the sugar but that wasn't the case. There was a bit of sweetness to the collard greens. Though that did not ruin the side, I prefer the bitterness and its accompanying minerals. The broccoli, as well as the pickles and pickled onions were solid. The drink prices are high for reasons unknown, but my martini was perfect. As for the meal, the amount of food was just enough. The honeymoon is over. The collard greens where a mushy over re-heated mess, and the cornbread that was "the bomb" several months ago is now a diabetic sugary mess. Why ruin a good thing? Note to Bib's Ribs, when you get a good cook treat them well! Bib's has gone from a excellent barbeque establishment to meh at best. I tried a few things from this BBQ spot & it was def a mixed experience but one dish absolutely stole the show the beef brisket Mac & cheese! It was hands down the star of the meal. It was rich, creamy, & packed w/ flavor. The brisket was tender & juicy and it paired perfectly w/ the cheesy macaroni. Every bite was comforting & satisfying. If you go here, this is the dish you have to try(it truly took the cake). Honestly,I had to push the plate away b/c I just couldn't stop eating it. I also ordered the beef brisket platter w/ sweet yam mash & collard greens. The brisket on its own was ok nothing terrible, but it didn't quite have that wow factor I was hoping for(it tasted kind of bland like where's the salt & black pepper). The sweet yam mash was also just meh. It wasn't bad, but it didn't stand out or leave much of an impression. The collard greens, though, were the most confusing part of the meal. They had an unusual taste, and there was a surprising amount of oil in them. Collard greens already have a naturally rich flavor, so the extra oil made them feel overly greasy & a bit hard to enjoy. It was drenched w/ so much oil my sister sampled it & it stained her shirt. I tried some of my sister's chicken skewers & it had a little bit too much garlic for me. I felt like a vampire b/c they were killing me w/ the garlic! The shrimp skewers on the other hand was delish! The shrimp was flavorful & cooked to perfection. Overall, the meal had its ups & downs. Some dishes didn't quite hit the mark, but the brisket mac & cheese completely saved the day. I'd def come back just for that(it was that good). The staff was so nice & made my nephew feel special. They all came out & sang happy birthday in English & Spanish. They wowed him & he couldn't stop smiling. That really made his day! Chi our waitress was by far 1 of the best waitresses I've ever had!She was sweet & made everyone feel comfortable! Inside was a chill vibe & we came right on time b/c there was a long line & ppl. Had to wait for a table a little while after we were seated. P.S. I didn't get to try the cornbread b/c they were out. Beautiful, clean restaurant with great servers. I wasn't feeling well but they don't serve decaf tea so our waitress made me hot water with fresh mint, lemon, and honey. All her idea and so sweet. Really good too! The food was so good too!! I had the chicken kabobs with bbq sauce. Collard greens, and mashed sweet potatoes. The chicken was two big kabobs, super tender and moist, and the sauce was just spicy enough. The greens were some of the best I've ever had, no hard spines, easy to chew, and not too salty. The sweet potatoes were absolutely delicious too and not too sweet. My husband liked his ribs a lot too! Fantastic restaurant. read more

We had Emily as our server, and she was awesome, super friendly and attentive throughout our meal. We came on a Sunday for the wing special, and they did not disappoint. The wings were perfectly crispy, and the Smokehouse sauce was absolutely phenomenal. We also ordered the mac and cheese and the brisket mac, and both were delicious. No utensils, the wrong orders, and most of us got the special which should be at the ready-not like the kitchen was surprised we ordered it. Just 8 wings ..WTF was the chicken alive when we ordered? Mac and cheese was absolutely awful, hot as the devils butt and like soup. Table next to us same crap-waited well over an hour for dog food. For a restaurant that has been open for 6+ months this restaurant should have been a lot more prepared for a holiday diner service. We sat down at our table around 10 min to 6pm. We were given menus by the hostess and a basket with rolled silverware and extra napkins. Our waitress finally came to our table about 15 min later with apologies that she didn't know she had a table. She took our drink order (not writing it down) and left. About 10 min later she came back to verify our drink orders and had them all wrong. Again, leaving our table without writing anything down. Another 15 min go by and our drinks arrive and the waitress said she wanted to put our order in as the kitchen was really slammed. After she left we did a little toast to our Fathers and I took a sip of my drink. I have no idea what I had been served as It certainly wasn't the peach sangria I ordered, but I never got a chance to ask as our waitress never came back! As we were sitting, patiently waiting to be acknowledged we watched 3 other tables be seated in the immediate section we were sitting in. They all got drinks and waters and appetizers, yet we never did. It was now past an hour since we had been seated and no food, no water (that we had ordered when we first ordered our drinks) and no visits from our waitress. I was unable to drink the drink I had been served and it had been sitting on the edge of our table melting for half an hour. We threw $20 down on the table and walked out! My husband told the hostess that we left some cash on the table and were leaving. All she could say was that she was sorry. She didn't even attempt to get us to stay or check on our order or get a manager! We had been looking forward to a nice Father's Day dinner at a new local restaurant and were sadly very disappointed. read more

Great service and really good food. Burnt ends had more fat on it than I'm used to but everything tasted great. Cornbread was good but didn't come with butter, only if you asked for it, I guess. Great chocolate martini. Wine was served in a martini glass too which is a little different. read more

When the the innocent victims were aware of the public slander they returned IMMEDIATELY to fix the misunderstanding. This was an extremely unprofessional way to handle an employee error and shows a complete lack of organization within the business. If you do eat here, be very careful and confirm that their staff ran your card properly. However, I would recommend staying away completely to avoid such a disgusting display of incompetence. read more

My boyfriend and I came here tonight for the first time, and it will most definitely be the last time. Our experience from the beginning was great until it came to the payment and the slandering of us on Facebook. We had placed the card with the check. I also tipped $25 in cash. The card was never ran which unfortunately we did not know. We said thank you and have a good night to our server and went on our way because as I said, we thought it was paid. About 30-40 minutes later we begin getting texts from people that were posted all over Facebook saying we dined and dashed and how we are " cowards ". For the record I'd like to say we are not those types of people. We immediately called and said we were on our way to come pay, and it was a complete misunderstanding. We went back, paid, and apologized. We were met with the staff being rude and calling us the " dashers". I give some grace at that point because obviously they believe we just dined and dashed on them. I then open Facebook to see that the post is still made, however says paid on it. People are still bashing us, as is the owner. He made a comment saying we left " no tip ". As I stated above I left $25 in cash. The owner then removed the post but went to his personal Facebook to say " the internet wins again and the community wins again " The owner failed to mention it was a misunderstanding, and basically acted like we meant to do it. People were also commenting bashing us too. Now, I completely understand being upset thinking we didn't pay, however to be met with such slander all over Facebook is completely unprofessional. I am beyond disgusted with this situation as we are not those types of people and highly respect those in the restaurant industry. Not everyone in this world is trying to rip off a local business. With that being said, I do not recommend this place unless you'd like to have your face and character bashed all over the internet. read more

First time there. got the big meal for 48 dollars to share. Ribs were very good, burnt ends were not really that good. Not hot but not cold either, mostly fat not slow cooked enough. I have had burnt ends many times and when cooked right they melt in your mouth. I got a brisket cheesesteak. That really wasent my cup of tea. The cheese sauce on top just wasent working with the brisket. The roll for the cheesesteak was the high light of the sandwich. The Mac and cheese was really good though. Veryone on the table really enjoyed the Mac and cheese. Over all the service and cleanliness was 10/10. Would go back, would just get something else. read more
