My gluten free partner loudly exclaimed,"Yum!" at the first bite of toasted cheese and chicken panini. My cold ham and Swiss was delicious, too, owing to quality ham, tangy cheese, and a fantastic sandwich bun. We finished with wonderful Boston creme donuts. We both bake gluten free at home and we're baffled at how they pull off this quality of products. We brought home apple fritters for later; I can't wait. This place has great potential but the management really needs to get with it! If opening at 10 am for the Farmers Market then one might want to arrive much earlier to prepare so that the case is full... when customers place an order for 20 donuts then you may not want to hand them 12 and tell them that you got busy and "miscounted".... If you only make a popular product once a week then you may want to have a quantity prepared and ready to be sold! Management is a huge issue! read more

This is a small place but has a decent selection and the food is good. Good sized portion for what you pay. I ordered an egg on toast, dry, for $6 and the sandwich was anything but dry. The bread is so good that I didn't miss the butter at all. I'd say I got my money's worth and the cookies looked good, too. Definitely return! read more

It's still hard to find gluten free bakeries, and Birch Baked could have been a welcome addition. The display had tempting cookies and pastries. We had the apple fritters. Nothing great, tasted more like a cider donut, but passable. Will try the other pastries. Where Birch fell short was the bread. I know gluten free bread is challenging, but this bread was super greasy. We got a sliced loaf and within hours the slices had all stuck back together and had to be re-sliced with a knife. For 3 years or so the owner, Dallas, offered to deliver orders to me on his way home. (I'm a senior citizen with no car.) I ordered about 3 times/year (intentionally stocking up so I wasn't bothering him often) and I always left positive feedback on a local gluten free FB page along with photos. I was always grateful and thankful for his kindness. The last time I ordered was about a year ago when he said he'd be leaving at 5PM with my order but never showed or called. I think he didn't want to deal with me anymore but couldn't bring himself to tell me. I don't know why. A friend offered to pick up a prepaid order for me today. She called it in last Thursday afternoon. It was for 5 loaves, all sliced and was paid in full that day. Today (4 days later) she picked it up as agreed upon. He had 3 sliced loaves from the freezer and 2 unsliced loaves from the oven cooling. He put those 2 in paper bags and told her to move them to plastic bags when cool. He gave her the bags and ties so she could do the work herself. Then I guess she was supposed to slice them or maybe that would be my job. Besides just totally blowing off the order request he said he could fill, he doesn't know I've suffered a broken right arm which destroyed my rotator cuff and required shoulder surgery, I CANNOT slice loaves of bread and never ordered or expected 2 unsliced loaves. He's got a great little business but just can't seem to get out of his own way. If I'd been the one picking up today I would have left without any bread and called my bank to reverse the charge. I'm disappointed, hurt and irritated but not surprised. In the end it's just bread and there's another fabulous GF bakery nearby in Troy. read more

This simple and humble storefront is the home of amazing gluten free food items. We tried the chicken parm and chicken cordon bleu hot sandwiches on freshly made sandwich rolls. Both were outstanding!!! The highlight however was the apple fritter donut holes. A sublime dessert experience! If you are anywhere in the Troy area, well worth the detour for celiacs. read more

I've been coming to Birch Baked since it opened- and it has only gotten better. The owner, Dallas, has perfected gluten free donuts, cookies, cupcakes, pizza, sandwiches ect. I highly recommend coming on Saturday morning when he makes his special glazed donuts. In addition, his breakfast sandwiches are unreal. And if you're reading this during the holidays- DO NOT skip on the stuffing and pie. I have eaten every type of name brand stuffing and nothing competes with Birch Baked. A successful business isn't just about the product you offer. You can have a junk product but know how to sell and become a success. You can offer a great product but struggle on the business end and you won't succeed. Went in the day they opened. Owner was there. Lovely young man who seemed excited about his new venture. Before I left I asked for a business card and was told he didn't have any; you know...first day. Ok, no problem, I guess I get it (although not really bc he should be handing them out to everyone, everywhere, and they aren't expensive). Returned several months later with my husband and some celiac friends. Unfortunately not much had changed. The display case was almost devoid of product which made it seem like the place was about to close permanently and they hadn't packed up the few remaining treats. Nothing was labeled or had a price. The chalkboard was blank. The menu was a photo copy. A single sheet of paper. As we were looking at the menu the owner needed to take it from us bc it was the only menu he had and others were waiting. When the food came, even though we stayed to eat it, everything was packed in to-go styrofoam containers. Part of our order was forgotten. Ok, so that's the gist. Here's what needs to happen. 1. Branding. Settle on a design, font, logo and replicate that for all your printed goods....and then get printed goods. If you don't currently have $5 to photocopy your menu then write it on the chalkboard. You can get 500 business cards on vista print for very little. Maybe it's not your ideal but you HAVE to have something. You could even have a code to scan that goes to an online menu. Too many solutions to list. 2. No more take out containers if the person isn't leaving. Talk about a waste of money that could go towards....menus! And the middle finger to the environment is really a bummer. If you can't have a reusable plate then offer paper plates if people eat inside. Sandwiches wrapped in foil and put in brown bags if they are taking out. An old-school brown bag with a cool sticker on it (with your name and logo and website) would be more interesting and less expensive than the styrofoam. 3. The display doesn't make people want to try your product. You have to care how things look. It does matter if you present your goods in an appealing way. Good presentation will make people want to buy more. An almost empty display case makes me think the stuff left must be old or picked over. I get that it's expensive to produce stuff that might go bad but there is another way. You'd be better off with just a stainless counter on wheels and your things thoughtful laid out on a wood cutting board with a glass dome over it. And things need to be labeled and priced. There are so many interesting ways to do this that are not costly. What is there now is simply a lack of imagination. And that's not shameful! Not everyone has that. I can't bake for shit but I can make a turd look stylish. You need to find someone who has this talent. Or go on Pinterest and enter bakery food display and replicate something there. While you are at it clean the glass. This was the main complaint of one of my companions. 4. Get rid of the refrigerators you aren't using and consolidate. It's a small space and it's getting cramped with the additional cooling units that are..... almost empty. Fill one in a pleasing way so it looks like you are overflowing with bounty. One full one is better than 3 partially empty. This bakery has a really good product. Most of what we had, particularly the sweets, was delicious. My sense about this business is that the owner knows he has a good product and thinks that's all he will need. It's not. Businesses fail bc they are not being approached like they are, first and foremost, a business. Thousands of business fail because the owner has a passion for cooking, or art, or plants, or whatever, but they are out of their depth on the business end. If you don't care about this and just want to throw up a shingle and do whatever as long as you can; I have no problem with that. Selfishly I would like you to stay in business and expand and have success bc Troy will be better for it. read more

I stopped in today to try out some glutten free baked goods. I definitely was impressed with their baking skills, never thought I would like the taste of glutten free food. I tried some of their chocolate chip cookies and donuts. Both were really good, but the donuts were my favorite. We got some fresh baked bread too which I will try later. The owners were really nice and helpful. They gave us advice on how to make pizza with the pre made crust. Their bakery is located at 203 River St Troy, and this has always been a nice little gem of an area. The bakery serves pannis as well, and they have take out foods. Its nice to get a bite here and walk around Troy and a nice Saturday afternoon. Near this bakery there are lots of little shops worth popping in to visit. I will most definitely stop in again soon to try out the other delites served here. read more

I went here once during a soft open and then worked on a crazy project for a month and a half and now I'm in Denver, but when I am back in Troy, I will be here all the time. The owner is incredibly nice and took my manic requests in stride. The teensy chance that we can have gf pizza slices in downtown Troy made my entire body tingle with excitement. HECK YES. However, that's not reality right now. What is reality is some of the most delicious gf cookies you can eat and pizza that I haven't had yet (but I'm very excited to). Deli sandwiches? All gf?
