I've been following Birria babe on socials for awhile but haven't stopped by until now until they just happened to be at the food truck park on my way home! Holy cow! Everything was wonderful! I got the sampler which was one of each type of taco - chicken, lamb, & beef. The consume had so much flavor! The tacos were wonderful & the perfect amount of crispness! Not only do you get wonderful tacos but the fresh cucumbers & radishes to dip in the 3 types of salsa were so good! I loved the cucumbers because they tasted so fresh! Must try when in Nashville. This spot is inside Cyanide Cider, which is a really cool combo. As a tourist this is a grest spot to check out. You can have some great food, cider and even hang and play some board or card games. Everyone is super nice and welcoming both at Cyanide and Birria Babe. The food was great. We tried the Birria Trio (chicken, beef, lamb) tacos. All were great but the lamb was my favorite. It's a little more fatty ans softer. The beef and chicken were great as well. We also tried the Birria Ramen which i thought was great. They provide a good amount of beef and the broth is rich and flavorful. The pizza was bit too cheesy for me but I love trying new things so Im glad I did. We were told that they experiment and rotate different fun birra specials often. The salsas are all great. Back in my day, you had to follow socials and try to find the truck in the wild. Some days you won. Some days you lost. It was the journey and hunt that was a part of the BB experience. If you wanted delicious birria tacos, you were going to have to work for it. But it was so worth the work. On a Tuesday in early summer, I decided that I was going to try my luck and hunt down some tacos. I searched the socials and saw that the truck was going to be posted up in Wedgewood-Houston for the night. Say less. I sped down 4th, took some twists and turns and... there it was. The truck was small but the line of people surrounding it was not. Luckily, everyone waiting was in a good mood. There's something about good food that does that to you. More than the food, though, I discovered it's the Birria Babe. She's all good vibes. I don't know what it was/is but interacting with her just made me feel... good. At ease. Happy. It sounds weird but read the other reviews. It's all true. It was dinner time so I availed myself of the 3 for $15 special: one chicken, one beef and one lamb taco, served crispy/quesa style. That means: meat, cheese, onion, cilantro, salsas, and consomme (for dipping). I was advised it would 'take a minute' for my food but it was fine with me. I'll wait for good, fresh grub. Plus, it was a nice night out. Sooner than I expected, my tacos were ready and... whoa. These bad boys had some heft. There was weight to this bag. Me gusta. I sped home, took out a plate and some seltzer water and looked to see what was what. These tacos were large, packed with meat, brimming with melted cheese, adorned with veggies, and accompanied by delectable salsas and a consomme you would want to drink as a soup. All three tacos were incredible. The chicken was the most standard (it's chicken) but the beef (and I'm not even that big of a beef eater) and lamb... bay-bee. Next level. Seriously. One of the best things I'd eaten in Nashville in a minute (definitely post-pandemic). On their own, the tacos were delightful. Paired with that consomme and you're playing a different game altogether. The Birria Babe has more than earned her flowers. There's a reason why people from all stripes sing the same song about her. What a great idea to make birria ramen. Delicious broth, tender meat. If only real ramen noodles were used instead of cup noodles. Tacos were also pretty good, cucumbers and radishes go very well with grilled taco shells. They just need a little bit more cilantro, perhaps? read more

Finished my second visit to Birria Babe this weekend (finally trying the birria tacos). Must say, both visits on point. My other favorite place for birria tacos, if you can't find Nadine and crew, is Family Tacos on West Charlotte. This is a small food truck that packs big flavors. I, stupidly, forgot to get a picture of the taco trio (beef, lamb, and chicken), but I did find one of my ramen and a friend's taco from October 11th (both times at New Height Brewery). Food? Very nice flavors. Consume is nice. The small side of pickled veggies and lime top everything off nicely. Of the three, I liked the lamb the best and will opt for the lamb trio (extra $4) in the future. Ramen is also very good, although I wonder how it would be with non-packaged ramen noods (if you want to do it at home, add baking soda to Italian pasta, as alcolizing is the trick - you're welcome: check back here for more helpful hints?). Since I pretty much finish every review this way (except the train wrecks?). Will I return? Yes, wholeheartedly. Love Chef Nadine Moore and her creations. Limited menu? Sure, but limited is not a bad thing when you do it well. NOTE: Menu limited enough, these two pictures are fairly representative. But, limited does not mean bad ... in this case it means awesome (insert gif of cartoon yelling "awesome" here). For those asking, you can look up where the Birria Babe truck is on Facebook. Wow, wow, wow! I don't think I have enough positive things to say about this place. From the cashier to the food itself to the owner, everyone and everything was top tier! My boyfriend and I are in town from Chicago and stumbled on this place via Yelp and we are big fans of birria so decided to check it out. It's inside Cyanide Cider and is a a tiny spot but very vibrant area and welcoming. The cashier was super friendly and had suggestions. We decided to share the trio, the ramen, and the birria pizza special. They didn't disappoint! The trio consisted of one of each: chicken, lamb, and beef. To my surprise the lamb was my favorite. These were the best birria tacos I've ever had, even in Chicago!!! They came with consume and a few sauces including this mild avocado sauce that I devoured! The slices of cucumbers included were a nice refreshing touch. The birria ramen was also delicious and filling. The birria pizza was creative and good as well. A bit too much cheese but still delicious. The cashier came after the meal to see how we liked her recommendations and check on our experience, it was a nice touch. A little bit later the owner herself stopped by. She was originally from Chicago herself and we chatted about that. We discussed our meal and our experience and she was absolutely elated and beyond grateful that we had such a wonderful experience. I mentioned to her how much I loved the avocado sauce and she ended up giving me two containers on the house to take with me. I really wanted to take some cornbread and dipped it in the leftover broth from the noodles! Not to mention I only have one taco. I wish I had more! She needed to be slapped that taco was so good! I was searching for good birria tacos in Nashville and saw that Birria Babe Tacos was going to have their food truck at Living Waters Brewery one night so I went there. They are a food truck so they travel around, but they post their schedule on their website and they go all over Nashville. Good food and very friendly staff. The Birria ramen is unique and I was definitely skeptical about it, but it was really good. The soup base is the meaty birria soup and they give you a spice packet to make it spicy. It has birria, ramen, and cheese on top - definitely an interesting combo. For the tacos, I tried the trio: chicken, beef, and goat and I recommend getting this to try all the meats! It comes with consume which is what you use to dip the tacos in for extra flavor. The meat was juicy and loaded with flavors. Overflowing with flavor! Wow! Birria Babe food truck is top notch. Super flavorful with great ingredients and very friendly service with a big smile. I had the Crispy Meat Trio of tacos, which includes one taco with each of the meat options (chicken, beef, and lamb). They were all exceptional. I think the beef was my favorite in terms of overall flavor, but all three were really tasty. Oh, and these are crispy tacos, but don't let that fool you. They aren't those packaged hard shell tacos that crack in half as soon as you take one bite. They are soft tortillas that are made crispy, I assume by frying in a skillet. So these are like soft tacos that are a little crispy when you bite into them. My wife had a trio of soft tacos with chicken, which were also excellent and very flavorful. All of the tacos have just a little bit of spicy to them, which was fantastic. They also have a green sauce (tomatillo, I'm guessing?) that is tasty, and an orange sauce that has more spice to it. The little food truck is adorable and cute, by the way. It is actually a trailer rather than a proper food truck, so it is really small, but it delivers very big flavor! We were the lady customers of the night and received service like we were the first. We were greeted with smiles and explanations of the menu's items and apologies for being out of the Goat Birria option. You walk up to a good truck right before close, you know it's a chance they're out of something, so it was really nice how kind they were about it. The tacos themselves were absolutely amazing. Perfectly seasoned and juicy chicken. The taco was so good I really didn't even need to dip it. But when I did the broth did not disappoint at all. I still dream about these tacos. I got the regular beef birria tacos. I am not a big cheese lover so I asked for light cheese and they were very accommodating. Super fresh ingredients and great portion size! The consume had a great flavor with a hint of cinnamon but it complimented the beef well. I loved the crunchy exterior with the juicy meat inside. My sister got the trio with chicken, beef, and goat. She was very surprised by how much she loved the goat over the chicken and beef. The truck was easy to find and everyone was so friendly. Food trucks are so overpriced these days but these were decently priced, tasted amazing and filling. I tried them at the 12 South Farmer's Market. Surprisingly there wasn't a long for the truck. I originally ordered the soft shelf quesatacos but Nadine (the owner) recommended I go crispy so that's what I ended up going with. It was about a 20 minute wait which seemed pretty long for a food truck that wasn't very busy. It was well worth the wait. Each taco had a very generous amount of shredded chicken which was very flavorful. The shells were also PACKED with flavor. They were not hard shells like I expected which I ordered the crispy version so I am not sure how the soft shell tacos would compare. read more

With Nashville's sudden influx of birria options, the competition is getting tight, but Birria Babe is quite the contender. I stuck with the usual beef crispy quesa tacos (there's also chicken and goat, or a trio of one taco of all three), and the quality of the meat itself was the highest I've had in town. With three in an order, I held off ordering their ramen too, though it looked and smelled incredible when handed to other customers (and I'll definitely be back for both soon). The service was also super kind, though it honestly didn't have to be when serving from a truck. My friends and I picked our tacos up when Birria Babe was at Jackalope Brewing, and the owner swung by Jackalope's patio a couple times over the course of our night to make sure everything was good. Alright so I met Nadine at the kitchen she cooks and preps her food at and she is just an incredibly kind soul. She offered to give me a container of some of her chicken to try out and man was it so incredibly juicy and flavorful!
