I ran across Tacos Calafia today and thought I would give it a try. Nice little place. Friendly service. Unfortunately the tacos were just average. The meat had very little flavor. I was disappointed. I live about 10 miles away and it wasn't good enough to make the trip on a regular basis. The search continues for my "go to" taco joint.

Nothing really stood out or left an impression. The birria tacos and consome were a little underwhelming.. the onions and cilantro carried the flavor more than the birria. The rice and beans were a bit bland and could of used more seasoning. As for the margarita, it was on the sweeter side and tasted a bit syrupy. They don't have a salsa bar but do provide red & green salsa in bottles. On the plus side, the menu is more affordable compared to similar restaurants. I stopped by on a Saturday night to finally check it out. As soon as I walked in, I noticed the trompo right away, which is always a good sign. I stepped up to the counter and was greeted with a warm smile from the young lady up front. After looking over the menu, I ordered two tacos de tripa and two tacos de suadero. She asked if I wanted the tripas extra crispy I said no. I also asked how they prepare the suadero since I didn't see a choricera, but she wasn't sure. When the food came out, the tripas were a letdown. The texture was off, almost like a stale chip, and they were clearly overcooked. I asked if I could swap them for something safer, so I went with asada instead, but that didn't impress either. It didn't taste very fresh. Now here's the reason you should come to Tacos Chilangos: the suadero. Even though it's not cooked the traditional way, it was absolutely delicious. Perfect meat-to-fat ratio, super flavorful, and easily the standout. The guacamole salsa was top tier. I kept going back to that one over the others. All in all definitely stop by to try the suadero as for as the other two I'd would probably give them a second try.

I live 10 miles away up a mountain and I couldn't run right back and order one more queso taco! I was literally starving for one more. Tripa tacos, perfectly cooked and to be honest I should've gotten more. Pastor tacos, not bad in my opinion, I've had better but they were still pretty good.
