The sun-dried tomato ricotta ravioli were both "piquant" and "bangin." The ravioli were rolled out, cut, filled, and sealed right in front of me. The pillowy little pockets didn't even need sauce (I ate one plain like a toddler). Nothing against the sauce: it's a celebration of the tomato, bright and smooth. I also got to watch the master (Bivona) at work. It was like what I imagine witnessing the efforts of a Renaissance sculptor to be like. It was also fun and educational watching him guide customers and give them a tour of the day's pasta shapes. For me, one of the best marks of quality is when you can look at the pasta and see the texture. You know that means your sauce is going to cover all that surface area, that will adhere brilliantly to your noods. The Cannookie (chocolate chip cookies sandwiching cannoli cream) was way more delicious than it had any right to be. I'm not going to ever have one again on principle because it sounds like a racial slur for Canadians, but that doesn't change the fact that it was outstanding. This is a top quality homemade pasta shop. They have a few hot dishes and sandwiches and they have a cold appetizer you select the items from the case. The cold app was 100 percent delicious. Grilled eggplant Italian hot peppers gigantes beans .Delicious Side of meatballs were perfect. The pasta I made at home Truffle ravioli and Kombucha anglotti(spellcheck) I made both with a brown butter sauce and the Ravioli was very good but the Angliotti was the best stuffed pasta I ever had The pasta is made in the store. The owner was making the kombucha angliotti when I walked in. Super friendly. He's from the area. Great shop. This is a treat yourself spot. Hands down. Driving from TX back to NH today and saw that we were going past Newburgh and HAD to stop in and check out Bivona's Simply Pasta. I'm glad we did! Mr. (Charles Joseph ) Bivona (III) was one of the friendliest people I've met in a long, long time--I've never been so interested in watching someone make ravioli before!. The two people he had helping him out were just as nice. Needless to say, the food was the best; My wife had the small pasta (angel hair, I think) with red sauce plus 2 meatballs and I had the special of the day (polenta with 2 meatballs). If I'm honest, I had the polenta plus a little less than half of my wife's pasta--the portions are pretty generous and my wife was stuffed after eating just a bit more than half of her pasta. The neighborhood has a hardscrabble feel but that's just the way it is--don't let that deter you or you'll miss out on some great food! Don't expect to dine in with a large party--there's really only 4, maybe 5 seats available between the table or the counter. This place is really "a pasta shop that does sandwiches [and other stuff] on the side", as the owner puts it. I wish CJB III all the best with the 2nd location he's working on opening--it sounds like it'll have the capacity it desperately needs (and definitely deserves!). read more

Full disclosure before I review this place, I've known Chuck, the owner, since jr high. He's a great guy and I was glad to come by and support him. That said, I never give out a 5-star review that isn't deserved--even if I know the person. The food here deserves all the stars. Fresh handmade pasta, homemade meatballs, sauces and salads and even desserts. Everything is assembled fresh right in front of you. It's a mostly take and go place but has a few small places to sit. What a find! A tiny shop selling fresh made pasta and Italian sandwiches just a short walk south of Washington's headquarters on a rapidly gentrifying Liberty street. The owner, Chuck Bivona, a third generation Newburgher, warmly greets you from kitchen area and starts suggesting mouth watering foods he learned to make at his grandmother's knee. We had some really tasty focaccia and a meatball Parmesan sandwich that was more than enough for two. We took home a pound of fresh gnocchi that we devoured for supper. There is only one table and a small counter but it's very cozy and clean. We will definitely return soon. read more

I've been wanting to try this spot for awhile . Finally had time to stop in today . The owner is absolutely amazing . We talked the entire time he cooked me and my grandmas meal . Absolutely delicious I warned him that I'm a picky eater and grew up with Italians so I was gonna be a tough cookie to please but he surely didn't disappoint. The meatballs , the sauce amazing you can seriously taste the freshness. I also loved that while I was there the local farmer popped in and dropped off some veggies . The corn had stood in for dairy, and the result was this creamy, slightly sweet, amazing summer pasta salad that blew my mind. Walked into Bivonas today for the first time and I promise you it won't be my last. One of the first things I noticed was how the owner seemed to know the names of literally everyone that walked thru the door. It was really cool and exactly the type of vibe we need in Newburgh to help bring the city together. I went to the counter basically clueless. I was helped each step of the way without feeling rushed or like I was being annoying. I wound up getting a pound of fresh bucatini, a quart of red sauce, 4 meatballs, and 4 cannolis. It was all delicious. My husband and I both said how the cannolis were some of the best we've ever tasted. A little different than the usual flavor, but super fresh and tasty!
