The setting was in the retail section of the Joplin Petro Truck Stop, being a fairly dim but rather quiet corner. In all my years of trucking, on the road, whether it be at a Denny's in a truck stop, or a Black Bear diner, Waffle House, another Iron Skillet, or i-Hop, whenever I order medium rare on a steak, it would always end up on opposite ends of the spectrum-- either very well done OR bloodshot rare. So when my server brought me a true medium rare steak, there was this aura of sacredness to it. I simply didn't expect the chef was going to make it to that likeness...and he proved me wrong.
