    Last Wednesday, I had the chance to attend the FAR Officials Selection event hosted at Bulle -- one of Fresno's newest fine dining experiences. And honestly... the venue itself deserves its own moment. Bulle is bringing a completely different level of dining to Fresno with its modern California cuisine, elevated presentation, and intentional ingredient-focused menu. Executive Chef Max McCarthy comes from Michelin-recognized kitchens including Quince and Le Jardinière, and you can absolutely feel that influence in every detail. We only experienced the hors d'oeuvres during the event, but it gave us such a good glimpse into what they offer. My favorites were the filet mignon lettuce wrap, the potato bite topped with caviar, and the melon sorbet + blueberry ice cream -- which the staff happily let me have 4+ more servings of because it was that good. The hospitality honestly stood out just as much as the food. Everyone was incredibly welcoming, attentive, and excited to introduce us to the different cocktails and unique flavor profiles they offer. One of the bartenders even explained that most places locally pour about 1-1.5 oz in cocktails, while Bulle serves 2 oz pours -- more comparable to the cocktail culture you'd find in New York. I was even able to get a mini kitchen tour, which made the experience even more memorable. Seeing the attention to detail behind the scenes and the passion the team has for what they're creating made it easy to understand why Bulle is already making such an impression locally. Some notes: parking is plenty since it it located in a good sized plaza. This is definitely more of a place for adults-only, not exactly catered for young ones if high-chairs or other accomodations are needed. The space is very beautiful and a perfect date night or night-out spot to sip and enjoy thoughtful bites. I will be coming back for a full meal next time.

    Overall, a solid 3.5/5. Decor, tour, bread, cocktails and vegetables were 5/5. Temperatures of all food served were perfect; salads were cold, hot dishes were smoking hot. All proteins cooked to medium perfection. Protein entrees were 2-3/5; they were all well cooked with great presentation, however massively lacking in flavor. Perhaps they are relying on the aging process to do all the work, which it did in terms of the tenderness of the meats, but they need to dress it up with more flavor. This was the biggest disappointment since the entrees are the pricy items on the menu. Smoked vegetables that came with the salmon was better than the salmon itelf. Wagyu was tender but not as savory as most wagyu. Aged Buddha duck was tender but just tasted like duck, again needed some flavor. The dots of sauce on the entrees were beautiful but not enough to flavor the dish so it didn't bring the dishes together. The entrees brought overall score way down since that should be the star courses of the evening. Decor and experience 5/5. The restaurant tour put a very nice personal touch to start off the evening. The Wine cellar is only 1/3 full and all the boxes on the floor made it look messy, which is a huge contrast to the beautiful decor of the rest of the restaurant. I'm sure they are still working on that since they haven't fully opened yet. There was sea bass being aged, but we were sad that I was not available to order on the menu. The bread and cocktails 5/5. All food and drinks were very photogenic. The bread was one of the best flavored dishes of the night. Cocktails were also delicious. Kumamoto oysters (2/5) were the smallest I've ever had and there was a sauce on top of them, but it was not memorable. It wasn't cocktail sauce and didn't have much flavor. The beet salad was a 5/5 and also one of the most flavorful dishes of the night. Great presentation and good mix of textures and flavor. Duck confit 2/5. I love duck and will order it every chance I get. If I was doing a blind taste test, I would've thought this was a mildly flavored smoked pulled pork based on the flavor and texture. Very disappointed. As a huge foodie, I hope their food continues to improve, because the aging and cooking method and presentation are perfect, but needs flavor to tie it all together so it's not a wasted effort on perfect pieces of meat.

    As you enter, the lobby is very nice, the hostess checks you in and takes you to your table. Reservation recommended. The restaurant is beautiful. The ambiance is romantic and lounge like. Each area thoughtfully thought out with exquisite pieces. As you enter to the main room you'll see to your left dry aged duck and beef. They also have fish alongside displayed in the case. There is also a lounge room you can rent out for 30 mins or an 1hr. The order: we started off with some sparkling water, our drinks are 2 order of the Third Window Belgian Style Witbier which my husband and I enjoyed. On the house, we got their Bulle bread that they fermented for 48 hrs and then on the 3rd day roasted on their hearth and served with butter. I also ordered a zero proof cocktail the Nymph's Glow that I loved. Moving into our starter items, we had the Gem Salad 8.5/10 savory and citrus. Next the Ora King Salmon Tartare 10/10 you have to try this one. My favorite of the night. The chip is made of rice and salmon roe, very rich in flavor and the tartare itself was decadent. Third, the Duck Confit 7.6/10 beautiful display but flavor profile overall was alright. Lastly, we had the A5 Wagyu Coulotte 8.9/10 there was not a lot of marbling with this Wagyu but nonetheless it was a great entrée. The beef was cooked medium, tender, good flavor, with blue cheese fondue and beef jus. There was a period of time after starters were done that took some time like 20 mins until we got our entrée which I feel was a little long. Service I will have to say pretty up there. Our server Monica (captain) was super attentive making sure that each dish presented was explained. She went over the menu quite thoroughly with us. We were checked up on when it comes with refills and taking any finished plates away. Quite a nice experience honestly. I would give service 10/10.

    What an amazing time last night. Fresno has needed a high end french inspired restaurant for so long. Our favorites were salmon tartare, scallops, and the pork dish for 2. As well as the house martini with caviar. Really impressive set up. Great service, Great owners. Cheers to your success.

    Bulle arrives in Fresno with the kind of polish, ambition, and quiet confidence more often associated with restaurants in New York, San Francisco, Miami, or Los Angeles. My wife and I dined there during its soft opening and left not merely impressed, but genuinely astonished. To find a restaurant operating at this level in Fresno feels, in the best possible way, improbable. What stands out first is not the size of the menu, but its consistency. Bulle does not rely on excess or endless options. Instead, it offers something far more compelling: a kitchen whose dishes repeatedly exceed their own descriptions. For diners who have sought out celebrated meals across the United States and abroad -- in Japan, France, Italy, Portugal, and Denmark, among other places -- that is high praise. Bulle belongs in that company. Chef Max more than lives up to the early enthusiasm surrounding the restaurant. We began with the Ossetra caviar, an amber caviar served with milk bread, chives, shallots, crème fraîche, and egg mimosa. It was a graceful and luxurious opening course, elegant without feeling performative, and especially well paired with a brut rosé. Our second course revealed even more of the kitchen's range. My wife ordered the uni rice, a dish that demonstrated both restraint and technical precision. Uni can be unforgiving in careless hands, but here it was handled beautifully. The flavors were composed and balanced, while the crisped rice atop the foamed uni butter introduced texture and contrast that made the dish feel layered, thoughtful, and complete. I chose the California mussels, which arrived shelled -- a welcome departure from the usual presentation. The green curry lent the dish a bright, fragrant lift, bringing warmth and aromatic complexity without overwhelming the natural character of the mussels. It was a small but memorable example of how carefully the menu seems calibrated. For the main course, we shared the seared duck foie gras and the A5 Wagyu coulotte. The foie gras, paired with poached pear and duck jus, was rich and deeply savory, its intensity softened and sharpened at once by the fruit. The coulotte was cooked to a perfect medium rare and accompanied by blue cheese fondue and a shredded potato rösti, a combination that felt indulgent yet deliberate. Together with the red wine we selected, it made for a main course that was both luxurious and remarkably composed. Dessert brought the evening to a close on a high note. The shaved ice, served over a bowl of magnificent marshmallow vanilla ice cream, channeled the nostalgic brightness of an orange creamsicle while remaining fully refined. Topped with a torched Italian meringue crumble, it offered coolness, sweetness, texture, and just enough theatricality to make it feel like a true finale rather than an afterthought. What makes Bulle so exciting is not only that the food is excellent, but that its excellence feels consequential for Fresno. Meals of this caliber are often something people travel for -- requiring flights, carefully arranged reservations, and entire weekends built around a single table. Bulle offers that same sense of occasion close to home. To have a restaurant this thoughtful, this polished, and this delicious in our own backyard feels like a rare gift. It was, quite simply, the best meal we have had anywhere in years.

    We went for a second and third time!!!! Food is savory and appetizing. We enjoy the relaxed ambiance. Yes we as Fresnan families are not used to high class up scale restaurants like the okd school ways. Dress CODE is a must to leep the vibe they are trying to give. THIS place os to have an experience better than vegas in Fresno. Is my opinion. I fully support it Kids and adults will enjoy.     The food was good, the server was knowledgeable and overly attentive to the point that my friend and I were unable to have a conversation without constant interruption. The service was constant to the point of annoyance, and it appeared that they were over staffed by about 10 people, staff were bumping around everywhere. Ambiance was fine, it was a little dark (until the sun was setting, then I was blinded) I appreciate seeing a beautiful presentation of food, and it made it difficult to admire the detail put into the dish. Overall it was fine, I don't know that I ate anything that was so good that I'd have to come back. The experience was lengthy (3.5 hours) but I had nowhere to be and I am aware that they are still in the 'soft launch' phase and things are still being adjusted.

    We kept hearing about this place. Got a reservation on a Saturday evening. Let me tell you, they delivered on everything From the moment we walked in, we were welcomed and our "journey" began. The walk to our table was a small tour of the restaurant. We were shown the different areas and special parts of the restaurant. Finally seated, Ashley guided us thru our dinner. Very helpful and specifically, she knew every dish inside and out. The menu isn't big but that's what makes it great. Simple menu. Excellent execution We ordered a couple of cocktails. The martini and whiskey sour. Both great with a non-traditional fell to each cocktail We ordered the in-house made bread with the amazing butter. For starters, we went with the Crispy farm egg and the eggplant. Both were delicious. The crispy farm egg was an experience on its own. We got it and we're trying to figure out how to attack it. That's when the owner Tom came to our table and gave us a crash course. Great dish. Easily the best bit of the night For our entrees, we went with the lobster and wagyu filet. both great, sauces on both plates were scrumptious. The chef came by our table to introduce himself and it was great speaking with him for a short moment. great touch. finally for dessert, we went with the banana dessert, which was a homemade ice cream with a banana and Grand Marnier topping. great flavors and the perfect amount of sweetness. to finish the evening, we were given a quick tour of the kitchen by Tom and small token of thanks with two small chocolate truffles with orange zest. simple yet magnificent. just like the rest of the meal This wasn't your everyday meal.     Chef Max delivers on the food quality. This rivals the Michelin starred restaurants. The duck was delicious and be sure to have the bananas foster and the shaved ice dessert.

    Celebrated my birthday at Bulle in Fresno and it was a beautiful experience from start to finish. The space is thoughtfully designed and the presentation of each dish really stands out. It was clear that attention to detail is a priority in both the kitchen and the overall dining experience. Service was also a highlight. Nai was attentive and very knowledgeable about the menu. James also made a great impression, as he was friendly and funny, which added a welcoming energy to the evening. Beyond our kind servers, the chef, manager, and owner all came to greet us at the table. The level of attentiveness from all of the staff was noticeable throughout the evening. Plates were cleared promptly, and service remained consistent. At times it felt slightly intrusive because they were all standing to the side while staring consistently, but it also reflected their commitment to maintaining a polished experience. Overall, I would recommend Bulle to anyone looking for a thoughtfully executed dining experience in Fresno. Every dish we tried was well presented and super delicious! It's difficult to pick a favorite.

    Excellent ambience. Service was spectacular. Food was incredible. Both owners were incredibly nice. This is the place to go in the Central Valley for the WOW factor on date night.

I did enjoy many of the cocktails, especially the Drop the Lemon (delicious lemon drop) and the Caramel Apple Carousel (tastes like apple pie!). We also enjoyed the Petite Charcuterie board, which was a great selection for a small group. That said, our server Esteban really made the experience. He was super chill, friendly, and attentive. He gave great suggestions and made sure our group was taken care of throughout the night. He has such fun energy and really made sure we had a great time as well. Overall, a very nice place for a birthday gathering, and Esteban's service definitely stood out. I'd come back again to try more of their wines!

One good point is that all of the staff is very friendly and attentive, although I think our waitress had to cover every table in the place, which seems kind of not great for her! We started with some drinks, they were both good, no complaints there. After they came we ordered our food, we ordered them one at a time. First up was the bacon wrapped dates. These were pretty good, the bacon was cooked well and had some good crisp, it paired well with the dates and cheese inside. The walnut was kind of weird and my wife and I both thought for a second the date pit hadn't been removed. Next we got the corn empanadas, these were disappointing but not awful. The dough was cooked fine but it has absolutely no flavor, like nothing at all. The filling was also cooked ok, the corn had good texture, but similarly, had no flavor, about the only thing I could tint was a tiny bit of cilantro. Once you dip it in the sauce that comes with it, things improve, but we both felt the empanadas should be able to stand on their own. The last tapas item we got was the costillas al ajillo, these were both disappointing AND awful. They are advertised as "fall off the bone fried rib tips, garlic infused olive oil, crisp garlic chips" The only thing crispy about this was the meat itself, it was incredibly dry and had no flavor. There was a little bit of olive oil and some minced garlic, but not "crispy garlic chips". Credit where credits due they took if off the bill, but it was just incredibly bad. We finished with the chocolate flan which was quite good, no complaints there. All in all it was disappointing and I don't know that we would come back.
