The difference is the way these have been cooked. A NY Style bagel is shaped, refrigerated overnight, and then boiled in the morning before being baked. It changes the complexity of the crust and the dough through this process. Personally - I believe that is what makes them the best. These bagels - to the best of my knowledge, have been simply baked. They are Panera style as in Panera bread. F you like that style - go for it ! These are equally good. If you prefer NY, then I hope the owners might try the suggestion to boil before baking and see what happens. But make sure you shape and let them rise at least 8 more hrs in the fridge overnight.
