    Excellent omelet, biscuits and grits!

    Caledonia Had breakfast at Caledonia two days in a row! The first day I had the typical country breakfast, scrambled eggs, sausage, grits, and a huge biscuit.. they grill the biscuits so they are really good. So the next day I went back for another breakfast and one of my favorites is an omelette with tomato and either feta or goat cheese and then crumble bacon on the top. They did it with the goat cheese and I must say it was absolutely awesome. I have been to hell in many times, but this is the first time I have been up here to Valhalla to their dining room and it was very impressive. Complimentary valet parking too!

    Where do I start...while it was super convenient to have an "elevated" dining restaurant a few floors down from our room, it was also a bit pricey and execution was a bit off. The pork chops came out rare. One look and it was clear it wasn't seared completely. Rare pork is not a food adventure I want to partake in. So the pork chop was sent back and chef brought it to temp, but that did not fix the sugary sweet sauce that was too sweet to enjoy. Think brown sugar drizzle for a breakfast dessert level of sweetness. The lamb chops were tasty little things, plenty enough to just have shared this dish between the two of us.

    This place is beautiful!! Would be a great place for a wedding. The shrimp salad was really good, but I would recommend adding a few more shrimp, some avocado, and pecans. I ended up with a bunch of lettuce and the end and I was still hungry. The service was great. Everybody is very friendly, nice, and attentive.

    First, the whole resort seem to be some kind of version of a high-end luxury resort from the perspective of white trash rednecks. It was like a person who hadn't been exposed to anywhere, but a small hometown dreamed up of a place that they would imagine to be a Mecca for white nationalism, and as it turned out, it was just an ode to the mediocrity of the white community that surrounded it. My dining experience at Caledonia was quite disappointing from start to finish. Upon our arrival, the service left much to be desired. The waitress at the stand seemed disinterested and brushed off my attempts to point out our reservation. She even asked for my name again, despite having already been told. This initial encounter set a negative tone. Once seated, we were given a menu for Italian night, which was not what we had expected or hoped for. None of the selections matched what had been posted online. It was disappointing that we weren't informed about other options. I ordered the seafood Cioppino, which was bland, and I had to add an excessive amount of pepper for flavor. Strangely, the pepper was on a nearby empty table, so we had to grab it ourselves. My partner's veal marsala was rubbery and lacked seasoning. It was supposed to come with asparagus but was served with a soggy vegetable mix that seemed overcooked or microwaved from frozen. The Caesar salad was decent, but the rest of the food didn't live up to expectations. The scallops, shrimp, and mussels were overcooked, and the seafood broth didn't taste like lobster or anything seafood-related. The vegetables were undercooked and included crunchy onions and likely canned tomatoes. To make matters worse, Tim, the executive chef visited our table at the end of the meal and instead of taking responsibility, he deflected blame. He told us they struggled to find good help and seemed to dismiss our feedback. He did offer us tiramisu, which I initially declined, but he insisted. The dessert, while initially good, turned confusingly dry and lacked the expected espresso flavor. What added to the disappointment was that I had mentioned my birthday when making the reservation, but it was never acknowledged throughout our visit. This lack of attention to detail added to the overall negative impression. The restaurant's ambience also left much to be desired. The resort seemed to cater to a particular demographic, and it felt like it lacked the sophistication one might expect. Even the valet service was lacking, as there was no one to greet us when we arrived. This experience was far from what I had anticipated from a restaurant in this price range.

    So our seats in the wine cave were so nice. We planned this for Debbie's birthday. It was a chefs dinner were the chef would come out and tell you about the course you were having. First off it was not really a 'cave' but a room with a big table and some wine behind a glass wall but it was intimate and cozy once the doors were closed. It was just us so that was nice. Chef Clay Harris came out, introduced himself and let us know how the night would go starting off with the amuse bouche then the following courses. It was really cool and we were looking forward to getting at it! The amuse was a take on his deviled eggs but reduced down to a bite in a spoon. Delicious! We had already had his eggs so we knew this would be good. 1st course was a PB&J that was interesting. The peanut butter powder and jelly were really nice and combined with the brie was a great start. 2nd Course was duck. Cooked just right and delicious. 3rd was a beef tenderloin cooked perfectly but could have been a little warmer. Last was dessert with a pumpkin snickerdoodle. Really nice. Overall we had a great dinner and everything was cooked great but could have been a little warmer and a little more seasoning. Was it up to par with our St. Augustine Chef's table? Honestly no. It was great for a special occasion but we would probably not do it again but is a great experience!

    The restaurant is part of the hotel and we made reservations because we stayed at hotel. Convenient because of location but we were glad we went. The service was very friendly, Harmon took care of us. Even filled our water a lot :) He took care of us because we split everything we ordered. The Brussels were delish app, we split a salad with goat cheese, we enjoyed the shrimp dish with pasta (flavorful and not That Many shrimp) fresh bread. The drinks good (they don't serve a lot of dark beer) location and view were worth it. The food was good not off the charts but Good. We enjoyed dessert and the evening. If you are staying at the hotel, enjoy this place too!

    So after reading reviews we decided to have dinner here tonight. I had booked on open table earlier in the week. It was empty except for a birthday dinner in a private area. Our waiter was William who was absolutely an amazing server. The food however was ok. Nothing that I thought was exceptional. We both ordered a Ceasar salad which was good. I order the goat cheese & tomato sauce. It was tasty. I order a castle rock drink which was nice. My husband ordered the salmon & I had a ribeye. I asked for medium rare. We received our dinner...mine was ok. No taste to the steak. No salt No pepper. Nothing. It was over cooked & the potatoe dish came out lukewarm. I would definitely say that we won't be back. The staff was great The food was not. Sorry to say but I would not recommend the food as 4 star as it has been rated. I believe it's 2 to 3 at most.
