We absolutely LOVED this restaurant. We were a party of 5 and we ordered the Cancun burritos, fajitas and tacos and of course the margaritas. It was the best we have ever had, and we're from So. Calif. Our waitress was excellent and the atmosphere was small and cozy/comfortable. We highly recommend! The only suggestion for improvement are the chips. If they decide to make their own, I am sure they would be as excellent as their food. read more

This is the best Mexican food in Whatcom County. It's very small, tucked in the corner of a strip mall is north Lynden. But it's worth the drive from Bham. It's family owned with the husband cooking and his wife making the best margaritas in town. I mean the best. The food it's authentic and delicious. I love the Camarones diabla and his tacos. I used to REALLY like this place. We used to stop in here for dinner sometimes, as they had great Enchiladas Suizas. So, we stopped in for lunch during one of our walks. I ordered the grilled shrimp tacos. Priced at $9.75 (more than my hubby's $8.50 burrito), I was expecting a meal, not a snack. The three soggy mushy corn tortillas had maybe a grand total of two shrimp on them, cut up into tiny pieces. I was shocked! Won't be coming back here anytime soon!! read more

My mom and I stopped in to Cancun this week for a quick bite after dropping off some items to enter into the Fair (look for our crafty awesomeness in the Quilt Barn if you stop by next week...but I digress). As we drove through Lynden I noticed this little spot was in my Yelp bookmarks so we trekked out to Bender Rd. to check it out. We were impressed with the general adorableness (is that a word) of the place before we even went in! Located in a strip mall, the owners of Cancun have transformed their little spot into a cute little place with a delightful outdoor patio and and inside full of the warm colors of Mexico. They also have an adorable little bar inside (and I do mean little - you could probably not fit more than three people at the counter but that's what's so damned appealing about it)! We chose a booth near the back and our orders were quickly taken. As I perused the menu I was impressed by their prices and selection. Most items were in the $10-12 range although there were several hearty selections that were even less. I found these prices to be lower than other Mexican spots in town. I also appreciated that their menu had a section just for healthier items, and chose the Spinach Quesadilla which was only $8.95. My mom got a taco salad. Both items arrived quickly and were delicious. My quesadilla, adorned by a gorgeous blue tortilla chip, as divine. It was full of spinach, veggies, and cheese, and adorned with a nice garnish including sour cream and guacamole. Again, I was impressed since most places charge extra for guac. My mom also enjoyed her salad. As we left I overheard another customer talking about how yummy their margaritas are - which, of course, sounds to me like a great excuse to go back! read more

Oh my gosh! This is the best Mexican food in Whatcom county and some of the most carefully prepared and beautiful food of any ethnicity that I have eaten. One of the reviews said the prices are a bit high, but that is not true. All standard combinations are less than $10 and specialty dishes, including great seafood and Fajitas, are $13 or less. Unlike the many Mexican restaurants that bury everything in starchy sauces and greasy cheese, the food at Cancun is delightfully seasoned and the high quality cheeses, when used, are carefully applied to compliment the dish without leaving a puddle of fat in the dish. The complimentary chips are light and crisp and the salsa and bean dip are perfect. It is also the cleanest restaurant I know of - no wonder they've won a silver platter award. This is a rare find: 5 star food, clean, excellent customer service and affordable. read more

I visited just yesterday and , while waiting for order, per their custom, my mom and I were not offered a single refill of chips and salsa. Ok. Fine. Foods worth it. Wrong!! Our Food came in the form of a greasy puddle. We were very disappointed. When server delivered check we told her that we thought food was terrible due to it sitting in a puddle of grease. This is an excellent, very personable family owned Mexican restaurant. We had a fantastic early dinner today with my mom, fiancé and little sisters. We started off with margaritas, there is a large selection of them. I got the Cancun margarita ($8.65) and my mom got the Campeche ($8.65). The Cancun was a bit stronger with triple Sec and grand marnier while the Campeche has cointreau. To eat I had a combination meal, the enchilada and chile rellano ($9.75). It was my first time trying chile rellano so there's nothing to compare it to for me, but it was delicious and very filling. My fiancé got the tequito's and they were very authentic and tasted great. My little sister decided to go off the American menu, which I would not advise at a Mexican restaurant.. Extremely blah. I have always wanted to be the first to review a business... and thought it would be so exciting to be the one to do it. Turns out I have to drive to Lynden, WA to get the opportunity! Cancun Mexican Restaurant, is located in a small strip mall. As you walk in you are pleasantly welcomed by bottles and bottles of tequila which seems to be part of the decor. We were taken to the back of this tiny restaurant which has about 10 tables. This was the first meal of my 48 hour mini-cation, so I ordered a margartia - Sunrise Margarita to be exact. I enjoyed it till the last drop. The chips and guacamole were... to be honest disappointing. But I ate em'. I asked for green chili enchiladas and the waiter recommended something similar promising it would be good... it was interesting. Chicken enchiladas, with a salad of sorts on top, and what tasted like sour cream and ranch mixed. . . I'm still not sure. My hot date said that his meal as okay... Carna Assada. All I can think is that those giving glowing reviews must be relatives of the owner. My wife and I arrived a little after 1:00 in the afternoon. There were four people in one booth and a woman at "the bar." Otherwise the place was empty. I could hear someone preparing food in the kitchen but never saw them. Seventeen minutes later my wife and I are still waiting to be seated and the four in the booth were getting obviously annoyed waiting so long or their food. My wife and I decided that if we couldn't even get seated at a virtually empty restaurant, actually getting served a meal would be like discovering immortality. Well, okay, that's a bit dramatic. It would be more like discovering oil on your property. So... after standing there for seventeen minutes we turned and walked out. I might give it another try at some point in the future but at least for now, this place is on the bottom of places I'd consider going back to. read more

This restaurant was choice #2 today but the power went out in my first choice due to bad weather so I thought I would give it a try based on the reviews, which were mixed. My review would be 3.5 stars if it would let me rate that, by its 3 or 4, so I have to round down. The place is small, in a strip mall. A tiny bar with 5 stools is by the door, and about 3 tables for 2 and 5 or 6 booths. Mexican music, decor inside. It is clean. The chips and salsa came in small quantities. About a dozen chips and the normal 4-inch round, black, hard plastic bowl that you usually see for salsa... only there was maybe 4 tablespoons of salsa in it. By my 5th chip or so I was out of salsa. I ordered the steak fajitas with flour tortillas, and a refill on the chips & salsa. It came back just as small of a portion of salsa. I asked the waitress could she please fill that up to the top, and gave it back to her. She complied. The food came fairly fast (it was slow not many people there), and although the fajitas were very flavorful (sautéed in butter which was great), it was about a half a pound of vegetables, and a stingy portion of steak. In fact, I had 3 tortillas and I had to portion out all the steak into 3, as much as I would normally want to put in ONE fajita. The meal costs $14.50 which is appropriate for generous portions of meat and is the dinner meal price. That was a detractor. There was one young waitress and one manager. The manager had 2 kids with her, and there was 4 times the kid started screaming and she had to yell at the kid to get it to stop doing whatever it was doing (I say it because I don't know if it was male or female). So, although I get women's rights and stuff and women taking their kids to work, it is a detractor to try to eat a peaceful meal with an employee's kid whaling around you and the kids were taking up one of the premium booths. To me, that's unprofessional. If it is a customer's kid being disruptive that's one thing. But this was the employees's kid(s). So although the food is tasty, the salsa rationing and small portions of meat with large portions of onions and a larger price for such a stingy amount of meat, and screaming employee kids is enough to make me wait until I try all the other Mexican places around here before I will be back. 3 stars. read more

How I heard of this place: My friends Leslie and Sophie introduced me to the Mexican restaurant just around the corner from their home on a cold, winter night, as we made we our way from guitar lessons to the warmth and comfort of home. Type of cuisine: Mexican food with a plethora of options including fajitas, burritos, tortilla soup, pollo en mole, and much, much more. Ambiance: A brightly colored interior awaits patrons upon entering the small floor-to-ceiling windowed storefront. Pink and blue walls sparsely decorated with ceramics, bronze seahorses, etc. Wooden tables and chairs are available up front, near the cashier, or diners are offered the option of sitting in the larger back room at tall-backed booths. Mexican music can be heard in the background as diners enjoy their food served on plates that are muy caliente in a quiet setting. What I ordered: As is often the case on my first visit to a restaurant, I ordered a combination plate to sample as many foods as I could, after having started with complimentary chips & salsa & bean dip (which Sophie shoveled into her mouth before the other two of us could have a sample!). The Mitla ($8.50) came with one enchilada, I chose chicken, and a chile relleno served alongside rice and pinto beans. One dining companion ordered the tacos al carbon ($13), tender skirt steak grilled, sliced and folded into three soft corn tortillas, garnished with Mexican cotija cheese and guacamole, served with rice and beans. For our underage companion, we ordered a taco with rice and beans ($4.50) off of the children's menu, and added one more taco ($2) from the a la carte menu. Two large glasses of Sierra Mist ($2 each) and a large cup of water were selected to wash down our meals. What I loved: The spicy chile relleno, by far, was my favorite of the evening. Having only sampled the food on my own plate, I have little else to compare it to, but I can imagine that level of spice, perfectly coated and seasoned chile relleno could not be beat! Of course, Sophie's favorite was the bean dip, which was very tasty. Note to self, next time request a second bowl for the other diners! Why I loved it: The hospitable, friendly and chatty staff made for a very enjoyable evening, as we indulged in large portions of delicious food, served in an easy-going atmosphere. I did not enjoy my food at all. It was a soupy, sweet mess. Maybe some people like this style, but It didn't taste anything like what I am used to from other Mexican restaurants. I had chicken fajitas and tortilla soup. The fajitas had no char or seasoning that I could taste. The soup tasted like tomato broth with some hard tortilla chips in it. Again, no spicyness at all. I have visited this restaurant many times because I live in Lynden. You will find that it is a cozy little place with good food and fast service. The menu is great and has something for everyone. This is a favorite spot for locals on weekends and evenings so be prepared to wait just a couple minutes if you come for dinner. The owner is very accomadating and welcoming. Pretty good Mexican Restaurant in Lynden. You definitely want to try their margaritas! They're fresh and not made from a powdered or liquid mix. I find that the place is always clean and the washrooms are as well. My only slight complaint was that the last time we were there the waitress seemed a little nonchalant, but she was super busy and I don't blame her. We still over-tipped as always (I used to be in the industry so I can't help but over-tip). Food-wise the platters are nicely priced- not expensive and you get generous portions for sure. Food was mediocre, service...yeah, not so much. When we arrived it was odd in that we just stood there. One gal busing the tables seemed to be overworked and another gal making margaritas never said hello or even acknowledged us being there. Finally sat down, got out menus and we knew what we wanted....and waited...and waited....oh, did you want something to drink. Received our drink and waited yet again....finally took our order. After about 45 minutes, which seemed extremely long considering there wasnt very many people there, we FINALLY received our meal. It was tasty however we found that we filled ourselves with chips and water. We asked for to-go boxes, payed the bill and left. All in all, shouldve just left from the get go.
