    I visited Sol De Mexico years ago and at the time wasn't very satisfied. The food was greasy and tasteless. As I was in the mood for Mexican and wanted to go someplace new, I decided to give it another try. This time was different. Upon entry, the place was pretty empty. I don't know what it is about restaurants on Lakeway but they seem to be cursed...except for Rhodes. I was immediately greeted by a friendly gentleman who showed me to a table. The seat covers on the tables are ripped and in dire need of replacement, but as a small business owner, I understand you need to prioritize capital expenditures. The place is bright and music is playing in the background. Chips and salsa were served along with some freshly made pico. The salsa was...meh. The Chips were small (I like my chips BIG) and only luke warm...but it was made up for by the freshly made Pico which was seriously DELICIOUS! I ordered water to drink and they brought an entire pitcher (much appreciated). As I was waiting, one of their children ran through the restaurant laughing and playing. I actually don't mind that...it shows that it is truly family run and I wasn't disturbed by it. I decided to order the Steak and Chicken Combo Fajitas. Once served, which happened with reasonable speed, the serving was generous and the plate sizzling. A pair of tongs is provided. There was a separate plate with a generous quantity of rice and beans...generous that is except for the Guac and Sour cream, though to be fair, no Mexican place in this area ever gives you enough Guac and Sour Cream. Plentiful rice and beans, though a side of cheese would have been a nice touch...I've yet to see that in Bellingham. Rice could be just a little bit more flavorful, but it was decent enough. I ordered corn tortillas initially. They were nice and hot. The meat was good...not great but good. The beef cut was a bit on the stringy side but was plentiful. There were plenty of vegetables and I quickly went through the first batch of corn tortillas and decided to refill with flour. Somebody in another review said the flour tortillas were store bought...well if that is the case, I want to know where I can buy them because they were literally the best flour tortillas I've had since leaving California back in 05 where you could eat Mexican and watch them make the tortillas in front of you. They tasted home made and were soft and freaking delicious. With the veggies, meat, some of that fresh pico and some rice and beans, it made for a VERY satisfying bite. The meal ended and a small sweet was brought out (just right) and the very friendly head of house took my payment. The price was reasonable for a fajita dinner. Sol De Mexico is just on the edge of being the best Mexican in Bham. A little more refinement in the food, some small touches here and there, new seat covers, some bigger, fresher chips, some better salsa and perhaps a bit better cut of meat on the fajitas and a side of cheese and they would achieve Fajita Greatness. I'd gladly pay a few more $$ for these refinements and if made, I suspect the place would be full instead of empty. The wait staff is very friendly and as I was leaving another gentleman came in who was obviously a regular and they greeted him like family. I like places like this where they know you by name. All in all, I was satisfied and will likely be back.

    Amazing food. Great service. But really, the food is so good. I haven't been to a better Mexican restaurant in town, and I have tried most of them. Never a long wait, honestly underrated. The carnitas burrito is beyond my expectations of any burrito while everything else I've had has been beyond words.

    One sign concealed by another... Is it seasonal? I've no idea.

    I ate everything so it can't be too bad. And here's a cooking tip: can't make those fluffy omelet-type covering for your chili relleno? No problem!! Just thin out and season 2 scrambled eggs with salt, pepper, cumin, chili powder; pour it into a smallish fry pan, lay a poblano stuffed with mild yellow cheese in the middle of the eggs, fold eggs over, serve HOT with a little enchilada sauce poured over all... Definitely edible. Inspired? No. The Guacamole had more tomato (maybe really mild red pepper) than an avocado and that was disappointing.

    Beef sopitos were a little bland in my opinion. Skimped on the beef especially.

    Eh... we came here based on a recommendation from friends... with no taste in Mexican food. We ordered sopitos, carne asadas, and arroz con pollo, items that should be made really well from a family Mexican restaurant. Sopitos were pretty good but sort of bland. I've definitely had better from taco trucks. Usually they come with beans, meat, lettuce, cheese, and sour cream but this one was just meat and lettuce. The carne asada was so thin it felt like eating dried jerky, salty dried jerky. It didn't feel like steak at all. The carne asada was no thicker than maybe five sheets of paper together and it was cooked so dryly. The arroz con pollo was probably the best out of the three, however the texture of the rice was unpleasant. It was over cooked and clumped together because of sogginess. It felt like there was very little chicken so it was kind of disappointing over all. The reason why I'm giving it two stars was because the service was great and they gave us a free small dessert at the end. I was so sure this place would be great but I won't be coming back. ):

I love how their drinks are always beautifully made with lovely garnishes and fruits to add color. Very excited to go back and try different drinks and entrees! Absolutely LOVE this authentic Mexican restaurant.
