Nothing much you can say about carnitas Michoacán other than. They are worth the wait. I tend to go Sunday and if you are not there by 8:30am you risk not getting certain items. Do not let the line that forms discourage you from stopping. The line moves fast service is what you expect at a busy food truck. The carnitas are juicy and flavorful. Very authentic highly recommend this place.

I'm at a crossroads with this carnitas joint. Do I tell other Yelpers that this is the lost Holy Grail of carnitas and have it's anonymity lost forever? Or do I give it a crappy review in hopes of keeping this place a secret and all to myself? I'll do the right thing....Yelpers, behold; the Holy Grail of carnitas! Best carnitas anywhere....ever! These carnitas come out caramelized with deliciousness....every bite of these tacos is a joy. The carnitas trailer is parked in a cemented patio with a corrugated metal car port for a ceiling. You want an elegant joint to impress the girlfriend? Not for you. You want to impress the girlfriend with the best carnitas in Southern California? Bring her booty over and prepare to get lucky tonight.....

Oh how I love a good taco truck. And Carnitas Michoacan is a great one. You won't find any rice or beans here...This is strictly meat country! They're only open on Saturdays & Sundays from about 7am until they run out of food (I was told this happens around 1pm, depending). But during these few hours, they crank out some of the most authentic tacos in town. The carnitas are solid, but the birria de chivo tacos are so deliciously tender and juicy, it is in a class of its own. In case you don't know what birria de chivo is, it's slow-simmered goat in a mild chile & spice broth. They'll also give you a free hot cup of consommé if you ask (it's a little like menudo broth but a lot more gamy). It's pretty comforting on a rainy morning, sitting outside under their overhead. My favorite thing to put on these tacos is their mixed slices of red onion and habaneros that's been lightly macerated with citrus. So simple, but pairs so well with their meat. According to the options listed on their truck, they also serve macisa, cuero, buche, y patas. However, I don't know what any of those are, even after briefly trying to look them up (Google needs to step up their international food searches). I'll just have to ask them next time I'm there. The people who run this place are very nice. It's worth a try some weekend. It definitely hits the spot after some swap meet shopping down the street.

Sometimes you'll get the fresh batch but at times you'll get the left overs from the day before, they just reheat them up.

I've had Sarap from their food truck in the past but this was my first time at their brick and mortar store location! The portion sizing was generous and each entree was tasty without being too fatty or oily. I ordered the plate with Bistek ($1.50 additional charge), Ginataang Sitaw & Kalabasa, White Rice and Pancit. My wife got the bowl with garlic rice and pork liempo and we shared two pork lumpia. We also got Buko Pandan drinks and Sago Gulaman and thought both drinks were generously sized. We all enjoyed our food and will def be back to try the Sisig! This place is by far one of the best Filipino food places I've had. What stands out is the tastiness without it feeling overly heavy/greasy/fatty. The customer service is great, the workers really make you feel welcomed and ask how you're enjoying the food. The ambiance is really nice. From the mural, to the decor, to the chairs it's intentionally designed to have that Filipino feel. The air conditioning was blasting and fans were on to make us feel as comfy as possible while enjoying the food. I wish there was a Sarap closer to where I live, but it's a must visit every time I'm in Bakersfield.

It works like Panda Express, food is laid out and you order your food at the counter. I chose rice noodles, Chicken Afritada, and Pineapple Pork. The thin rice noodles were so good, with layer and layers of complex flavors. You need to try it. Thank me later. The Chicken Afritada is dark meat chicken chunks, potato, tomato, and mild spice. I loved it. I ordered pineapple pork because it was made with pork belly. The pineapple made the pork tender and melt in your mouth. So good. My friends all loved their food as well. If you are any where near coffee and olive, drop by for some really good Filipino food.

It's really nice to have someone who really knows how to make fried rice. Moist without being greasy flavorful and plentiful! Next came the veggies, a great mix of carrots, zucchini , bell Peppers and onions. Cooked and crisp at the same time. Perfectly seasoned and not mushy. I was impressed.... Moving up the ladder of delish I had the picante noodles... and I must say.. simply amazing. Soft to the bite and perfectly chewy. I moved out of Bakersfield but every time I visited, I had to make sure I go to this place. This time I brought my friends who also live in bigger cities, but everyone ended up falling in love with this place and couldn't stop talking about it. I'm so happy that they moved from the food truck location to a nicer place and more central to the nicer part of Bakersfield (near riverwalk) . My friends who I took to this place, still rave about the food they had here. It's so authentic, delicious, and just special. You ordered at the counter, and during lunch time there are options to get the lunch combo which are two types of dishes with rice or naan. I usually chose the usual, either tikka masala, butter chicken, or curry. But this time I wanted to try something I never got from the menu, which is the Shahi Matar chicken. Oh.My.God, it was the bomb! It's sooo good. The other thing that I always got was the veggie pakora. It goes sooo well with the curry dishes. Amazing. Services were pretty fast, around 10mins of wait during busy lunch time. If you didn't finish the food (which they give you really good portion), they have the lids for everything and ready to take home. They have an extensive menu, and it took me a while to figure out what to order. To her credit, the cashier took her time explaining the various options available and was patient in answering my menu questions. I ended up ordering one of the lunch combos with chole masala, chicken tikka masala, and naan along with a mango lassi. I'm happy that the employee steered me away from the a la carte menu, because the lunch combo was quite a filling meal. Both the chole and chicken tikka masalas were well-seasoned, and the naan had an excellently flaky texture. The ambience was casual, and I felt welcomed by the cashier (though some of the looks by other diners highlighted how much I differed from the primarily South Asian customers during my lunch). I would definitely revisit during a future Bakersfield stop.
