The SC is a mustard BBQ sauce that just pairs well with pork. Bama sauce is a mayo base sauce that I would use only for chicken or turkey. The other 4 sauces all matched well with brisket. They have been there for over 20 years according to the person I spoke with, which in a plaza not thriving says a lot. The prices were very affordable and all the meats were warm throughout (sadly I have had many Cubans with some meat still being cold even though pressed) but I would say that I would have liked the sandwich pressed just a little longer to make more of a crispy bread.
