They're just as important to me as any side with home-style southern cuisine!   My partner tried their shrimp as well, and their macaroni & cheese. He Too agrees their food was a real good time! This was a first for us; the truck was located at Murdoch's Ranch and Hime Supply. There was a nice line, people waiting in the cold say's something about the food! Met a few people we had never known but struck up conversations with them from local to Pennsylvania. The food taken home was delicious and plentiful. The fish was superb and fries were just right. Sauces were all great - nice variety. Tartar sauce, Sweet Thai Chili, Malt Vinegar, Ketchup and Sriracha Mayo. Choice of 2 each plate. Can't wait to come back to Salida when they are present. Definitely make a point to stop in when in your area. The truck was done up nicely and well organized. The color was well chosen! The location was spacious and plenty of parking. Just gonna make this clear though-they are generous with their salt. I feel it's important you consider this and request them to not salt your food beforehand. Other than being overwhelmed with the amount of salty lemon pepper-style seasoning they coat your fried goodies with,  the food was very delicious and well prepared! I ended up trying bone-in wings with shrimp with a side of fries. Their fries were a bit too oily for my personal preference as well, but still flavorful. I just gotta be sure to request No salt dustings next time! ^__^ The batter used on my shrimp came off easier than expected too, which was something I haven't experienced before, so that's perhaps the way they batter them before frying?   I'm not sure.  Again, they were awesome. The seasoning used In their shrimp batter was very good!  The only uncomfortable part about being at the restaurant was their unusual waiting lobby. Not only was it Very hot in there but you could Barely hear the individual taking your order behind that large protective sheet of plastic/glass?   They really had to make you yell and repeat yourself unfortunately.
